But I’m hungry so let’s eat!
The Lunchbox
I’ve been dreaming up this salad from the moment we stocked our grocery cart on Sunday!!
This container is literally stuffed with great food:
- Spinach + arugula dressed in a little honey and lemon olive oil
- Salt salt
- Celery
- Carrot
- Red pepper
- Grilled eggplant
- GOAT CHEESE (!!!)
- ~1/3 cup lentils
Homph gomph gomph!
I packed a Food For Life chewy tortilla cut into triangles for easy eating
And a sliver of Teens Eat pumpkin bread!
Gettin’ my fruit in at snacktime – I’m planning to tackle this apple + homemade Larabar (another Teens Eat food gift!) around 4:30 on my way to Emily‘s for a RUN and workout!!
Is this week flying by or what!?
Sami says

Freya @ Brit Chick Runs says
I had a look at Teens Eat’s website, they have some good recipes! I like their version of PB&J Larabars (though I’ve never had the original – it just sounds good!) 🙂

Have a good run!
Jessica @ How Sweet says

The only way I’ve ever eaten lentils is in soup. That looks good! I must try it now.
Lauren @ A Fit Foodie says

Beth @ Beth's Journey to Thin says
Ohhh I need to get some eggplant! Haven’t had it in far too long..
Megan (The Runner's Kitchen) says
I love big salads with lots of flavors! And creamy additions like goat cheese and hummus make dressing (almost) unnecessary. Hooray for weeks that fly by.
Mama Pea says
I love to eat the Food for Life tortillas with my salad and roll up little bites as I go. Of course, with my massive salads (like yours) I run out of tortillas about 1/4 of the way through!
Paige(Running Around Normal) says
That salad looks amazing. Love the addition of the eggplant in there!!
Heather @ Health, Happiness, and Hope says
I LOVE Food for Life Brown Rice tortillas! It’s such a great brand. And that salad looks fabulous!
Have a wonderful afternoon!
Stephanie says
This week has totally flown by! I took Monday off and have been super busy at work ever since… I’ll take it though!
Heather (Heather's Dish) says
this week is totally disappearing! i love the idea of spicy, peppery lentils with goat cheese in a salad – holy yum! you might have the most envied salad in blogland today 🙂
Veggielady4life says
Love your lunch salad! Big salads are my fav thing to pack. Good idea on the lentils. I usually keep chickpeas or some other bean frozen and just toss it on top… I’ll add lentils to my list! Glad to hear you’re enjoying clinical stuff. I keep getting USMLE board prep questions on PTH and calcium… guess the test makers like that stuff. It’s always good to see it in practice, though. Have a good one!
shannon (the daily balance) says
amazing, FILLING salad! so many yummy flavors and textures – just the way i like it!

Jenny says

Jo says
That’s one amazing salad!
But don’t you find that the greens get soggy if they’re pre-dressed? i.e. you put the olive oil & honey on in the a.m., but don’t eat it till lunchtime–how does that work?
Kath says
Only slightly
Annie@stronghealthyfit says
That salad looks fantastic! Hope that guy is going to be ok.
Erin (Travel, Eat, Repeat) says
I’ve totally lost track of the days of the week. Maybe it’s an unemployment thing. 😉

That salad is beauuutiful!

Sophie says
That salad looks awesome! Love goat cheese 🙂
Do you have any good tips for cleaning out your Bodum? I bought one today and want to make sure I get all of the pesky grinds out of the mesh when I’m done!
Kath says
Only a good sponge and soap! I find that grinds get caught in the plastic outer part too which DOES come off with a strong grip and even-weight bend!
Michelle @ Give Me the Almond Butter says
I love lentils in salad. This week is going by so fast that when I woke up this morning I thought it was monday! 🙂
kate says
Goat cheese easily transforms any meal!
lynn (The Actors Diet) says

As a medical student, I’ve been told that so long as I don’t mention names, ages, addresses or any notable/identifiable features of a patient, and speak in general terms as Kath has, you’re fine?
Lisa @bakebikeblog says
Is there anything that goats cheese does not taste good on….seriously!! LOVE goats cheese 🙂

amanda says

Callie @ OneLittleOnigiri says
Wow that salad looks amazing! I’ve never tried lentils but they’re definitely on my “to eat” list.
caronae says
Love the salad! I can’t wait till eggplant is in season at the farmer’s market soon. Yum! And this week is SO flying by. Almost thursday already!
Karen says
to laura–whether or not “you’re fine”, it’s an ethical question. if you were a patient, would you want your BMI posted on a popular blog, even were it anonymous? particularly if you were a patient dealing with weight/nutrition issues? an anorexic already feels under (often imaginary) scrutiny–posting his or her situation on a blog turns that scrutiny very real.

In regards to the HIPAA (privacy) law, I have found from personal experience, that it probably varies at institutions. I was a medical transcriptionist for about 20 years so am familiar with these things. A few months ago, my insurance carrier would not even discuss my (minor age) son and husband’s account over the telephone with me, since I was not on the policy. I told my boss who has been in the transcription business for 35 years, and she was pretty shocked at such a thing. I had to have the insurance company mail me a HIPAA form for my husband to sign to say that they could discuss insurance with me!

Nice post. I learn something more difficult on different blogs everyday. It’ll all the time be stimulating to read content from different writers and practice a little one thing from their store. I’d favor to use some with the content material on my blog whether you don’t mind. Natually I’ll give you a hyperlink in your net blog. Thanks for sharing.
