Hope you enjoyed today’s New Finds! Every time I write one of those posts I look around my house and immediately think of 3 things I should have included. And now I’ve already forgotten what they were! I’m still waiting for our brains to be able to get notepad apps….
I’m working on a “What I ate” post for today that I’ll be featuring tomorrow, but I wanted to share our two dinners from this week and yesterday’s lunch out!
First Monday night’s sausage and lentil soup. This is a Cook Smarts recipe, and the sausage makes it burst with flavor. I used hot Italian chicken sausage and white lentils, and it turned out great.
Almost forgot the Greek yogurt!!
Last night we had another Cook Smarts specialty – seared salmon with chimichurri sauce and roasted cauliflower. The chimi sauce was made with parsley and cilantro and was fantastic on both parts of the meal, and the cauliflower was tossed in the tiniest bit of brown sugar that gave it an ever-so-subtle sweet/savory flavor. Loved the buttery pine nuts on top! Those were a Christmas stocking gift from Karen ; ) [If this dinner looks small it’s because I had way too many snacks between 5 and 6 pm!]
I had lunch yesterday at Bizou with the famous Hillary of Lumi Juice. First off, it’s always great to catch up with Hillary. She’s one of those inspiring entrepreneurs who goes a million miles a minute. Bizou exceeded expectations with an awesome menu. I had trouble deciding what to get, but I settled on this root vegetable salad topped with herbs de Provence fried chicken! The best part was the pistachio dressing (on the side). I need to figure out the ingredients for that.
We were totally tempted by the dessert menu when we heard they had sweet potato dumplings. Sweet potato = healthy, right!? It was the perfect few bites of dessert after lunch.
Hillary sent me home with this cute mini bottle which I enjoyed for cocktail hour last night. Greens? Wine? Sorta the same effect!
Lastly, I worked on this recipe during preschool yesterday and can’t wait to share it with you soon!! I’m going to call these Cookie Dough Balls, and they live up to their name!

Where did you get those jars with the cute chalkboard labels on them for your flours and such? They are adorable!

The jars are just mason jars, and the labels I got on Amazon! I got the smaller ones for my spice cabinet too, and these jars to put them on. Organization central!

Oooh the cookie dough balls look good! I just baked some cookie dough bars…grain free and sweetened only with dates, waiting VERY patiently for them to cool before slicing!

It might sound gross because you’re used to a greek yogurt that is naturally a little sweeter (Greek Gods? Oikos?). I use plain Chobani as a sour cream substitute and I love it!

Your greek yogurt looks very thick, does it taste better that way? Each time I remember buying it it was pretty runny.

Oh everything look so amazing! The green juice is also soooo green and almost looks thick. I mention this because I’ve seen a few that seem almost a light green shade and makes me question how many greens are actually in there. I can’t wait for the recipe now!!
