We started today with sleepy French toast. Everyone is a little tired from an exhausting night.
Well, most of us!
Apple Scrapple bread underneath wearing an egg coat. Topped with melty coconut butter (I flaked it on and it melted on top) and some Justin’s Vanilla Almond Butter and nature’s sprinkles {chia seeds}.
For lunch I created something new: a Whole Foods wild salmon burger stuffed into a Trader Joe’s pita (another coat! ha!)
I made a yogurt spread with dried dill and smoked paprika
And packed in some lettuce. This was incredibly delicious!
Orange on the side
And to drink…..green juice!
Made from the following carrots, cucumbers, celery and half an orange. I used my juicer to press out the good stuff. {I have this one}
Afternoon snack of cereal and milk – simple and always filling. Whole Foods Honey Bunches.
For dinner we had Matt’s famous pizza
With tomatoes, peppers and bacon and some great sharp cheddar cheese on top
Served with a spinach and avocado salad tossed in 2 parts olive oil and one part honey and rice wine vinegar
Did you watch the Gossip Girl finale yet? I watched it in 5 minute increments all day long, and I thought it was a really satisfying ending to a GREAT series!! I will definitely miss it.
Hugs and kisses, xoxo!
Ali @ Peaches and Football says
Oh wow that first picture of Maze is beyond gorgeous. I think that may be my favorite picture of him yet! Total cutie!!
I’ve seen lots of sauteed banana on blogs lately. Using it to top french toast sounds wonderful. I should try that.
Jeri says
I know I might be late to the game, but does Matt make his own pizza dough or is that a store brand kind? And if he makes it, can we get the recipe?
KathEats says
His recipe is on my recipage : ) whole wheat pizza dough
Allison@commitcomplete says
I love your french toast plate. Can I ask where it is from?
KathEats says
Pottery barn a few years ago
Tiff says
Mmmm, I don’t remember the last time I had French toast. Must fix that!
Sara @ fitcupcake says
I have some coconut butter, but never thought about melting it, looks great!! Your babe is adorable!
Katie @ Peace Love & Oats says
That pizza looks amazing, as usual! And yes, I watched the finale the next morning on Hulu (no TV) and I LOVED it! Mostly the Chuck and Blair part. I love them.
Christine says
Almost started watching GG last night, thanks for the review. Going to miss that show! xoxo, C
Anele @ Success Along the Weigh says
I love the pic of Mazen all like “What?? I’M well rested!” So cute!
Katie @ Talk Less, Say More says
Does M have little veggies on his shirt? 🙂
KathEats says
Yeah : ) baby gap
kiki says
That looks like a delicious day!
Ashley @ Coffee Cake and Cardio says
He is just too adorable. I have been juicing a lot lately. I really love getting extra veggies through juice.
laura says
your little boy is absolutely the cutest, healthiest looking little guy ever..!!!! I have that same juicer and juice every day.. I swear it has kept me the healthiest I have ever been.. no colds or flu since juicing . I started two years ago.
Lynn @ the actor's diet says
I watched the first 2 seasons of GG. I should catch up.
Susan H. @ The Food Allergy Chronicles says
I have yet to try a honey version of dressing on my salad…always sounds intriguing. I love a mixture of balsamic and cider vinegar…pomegrante seeds have been my latest must have on my salads! Love the burst of sweetness and the crunch! 🙂
Allyson says
I can’t believe who Gossip Girl turned out to be! Sure didn’t see that one coming. I love when shows do the “five years later” jump so you can see how everyone turned out…. how bout Rufus and Lisa Loeb?! haha
Grace says
I loved who Gossip Girl turned out to be! I didn’t see that one coming, either. (Although in hindsight, should have, but that’s what made it fun). And I also loved Rufus and Lisa Loeb. Way more satisfying series finale to me than, say, Lost. 🙂
Liz says
Great pictures!! Argh!! Maze is sooo beautiful!! Is the prettiest baby!!
Kristen@Change of Pace says
Everything looks delicious! I think I want French toast for Christmas morning!
Cher @ Weddicted says
That’s how I make my green juice, though I must admit I kind of have to choke it down. It’s the cucumber! I don’t like it too much when it’s juiced!
KathEats says
Agreed! But they are so cheap and make so much juice!
Averie @ Averie Cooks says
I need to dust off my juicer more in 2013. Thanks for the reminder – because that juice looks splendid!
Jordan @ Eat for Health, Eat for Fun says
I have to weigh in with everyone and agree- the GG finale was wonderful and satisfying! No loose strings untied (and thank goodness because I would have had a fit!).
Kate, RD says
Is there such thing as ground chia seeds? Sometimes I wonder if I’m getting all the nutrient benefits of eating them because there’s no way to chew each and every little seed! Not to be gross, but do they just “pass through” like a flax seed would?
Also, will you share the link to Matt’s pizza dough recipe? I’m sure I could find it if I dig, but if you have a handy link I’d be grateful:-)
Have a fun day with your little tike!
KathEats says
There is – it’s branded as mila. But from what I understand, you can digest them fully whole.
And here’s the pizza dough – I wasn’t near my computer earlier: https://www.katheats.com/recipage?recipe_id=6000325
Kate, RD says
Thanks Kath! Cheers to 2013:-)
Cait's Plate says
Oh my gosh that first picture of Mazen is too adorable!!
Elise @ Expeditions of Elise says
Not much better than a cooked banana…they get so sweet and soft. So yummy!
Elle says
So glad to see this blog getting back to being about food and healthy living! I love the occasional cute Mazen pic, but recently it seemed like the posts were just a log of when he nursed and how many hours he was sleeping. It seemed like that stuff would be great on Baby KERF but didn’t seem all that relevant here. Obviously your readers care about how you’re doing but sometimes there was too much detail about childcare and not enough about the food, and when I checked Baby KERF, it was all product reviews 🙁 I didn’t want to say anything too negative, but just had to comment that this last post was back to normal and much more fun to read. Keep up the good work!
Sarah C says
Funny you say that because I was thinking the last few posts have been way too generic. They’re just Kath’s meals and that’s about it. I know this is mainly a food journal, but I like a little more content than that. Different strokes, I suppose.
Nicole @ livingthesweetlifestl.wordpress.com says
haha…I was hoping that the xoxo was about the gg finale. I feel so old for still watching it but it was a really great ending! I loved Blair’s wedding dress.
Annette @FitnessPerks says
I love homemade pizza! I too make it ww homemade 🙂
Stefanie @ Thin Vegetarian says
Love how you watch Gossip Girl! I liked the finale too; it was nice to see a show tie up all the lose ends for once!
Tami @Nutmeg Notebook says
Oh you are making me hungry for French toast – guess I will have to make some soon. Maze is so cute and his happy smiles are contagious – I find myself grinning in return!
Morgan says
Every time you post Matt’s pizza, I seriously drool! The most interesting topping combos. Sharp cheddar?!? Yum!
eliz@ourcrazysweetlife says
Seriously…why aren’t babies as tired as we are after they decide to party all night long?! 🙂
Wendy says
I wasn’t 100% satisfied with the ending to GG….I enjoyed the entire finale, except for the ‘5 years later’ portion, which I thought was over the top cheesy. I think it would have made more of an impact had some questions been left unanswered. I know, as frustrating as that would have been to viewers.
KathEats says
It was a little cheesy, but I would have felt like they left me on a cliff otherwise I think
Kerry @ Totes My Oats says
Oh man that pizza looks amazing!! M is looking so cute, as always!
lindsay @ Fuel My Famil says
yum that pizza dough looks delicious. Is the recipe on your site somewhere? I have tried numerous whole wheat recipes but its always a little gooey in the center even after buying a pizza stone. I need to try grilling it next maybe
KathEats says
Do you have your oven set to 500*? Here’s the recipe: https://www.katheats.com/recipage?recipe_id=6000325
Shel@PeachyPalate says
Such a cuddly photo to close 🙂 well worth the sleepless night I bet! Must try crumbling on the coconut butter, mine is rock hard so I usually just melt however much I want in the microwave!
elizabeth says
I watched Gossip Girl and LOVED the finale! I will forever miss this show, but was so satisfied with the way it ended. And I hope the rumors of a movie are true!! xoxo
Suzannah says
Oooh that french toast! I probably wouldn’t eat for the rest of the day after that meal! 🙂
Katie says
I haven’t watched the Gossip Girl finale yet, but I’m so glad to know it’s a satisfying ending! I was worried about that!
I’m working really hard to eat healthier – NOT to lose weight, I wish our society wouldn’t always put those two things together – and I love how your blog celebrates all the delicious nutrients in food. I am also inspired by how simple all of your dishes are to make. I feel like I can look at the photos and I don’t even have to have a recipe, I can just put it together. 🙂
a farmer in the dell says
You just inspired me to whip our my juicer! it’s been too long! Thanks

I love the llama! Strangely enough, my husband has the same one lol
Ashlee says
Matt should offer his pizza at Great Harvest for a “special” occasionally! I would definitely be tempted to fly to VA and buy some 🙂
Natalie says
These photo’s look fantastic, it’s making me very hungry!
Spice Chicken says
Plain yogurt mixed with spicy mustard also is incredibly delicious to me on salmon burgers. I make my own burgs with canned salmon, ginger root, green onions, and a little soy sauce and sesame oil. Kinda messy but so good.
Angela says
Of course I watched the finale of GG….it was good and while the ending was a bit cheesy, I do think I would’ve been upset had it ended another way. I enjoyed the interviews at the start too. I had no idea Chuck (errr….Ed) has an accent!!!
KathEats says
You didn’t!? That must have been a fun surprise. Apparently Dorota is very nyc, but I haven’t heard her interviewed before. Glad you liked the ending!
Hope @ With A Side Of Hope says
I watched the finale of Gossip Girl. I don’t know if you ever watched The OC but the producers were the same as the ones on GG. The finale of GG was so similar to the finale of The OC. I wish they would have changed it up a bit. It was still good though. 🙂
Patty says
XXXX for the win, XX was always my favorite. Loved the ending but my husband did not! Believe it or not he is a bigger fan than I am 🙂
Also, your lunches always inspire me to think outside of the box. Good stuff.
KathEats says
[Had to edit out the spoiler!]
Patty says
whoops! sorry kath, fired off the comment before thinking – no bueno! 🙁
