This week was a long one – despite the Tuesday/Wednesday mix-up 🙂 But I’m exhausted. I picked up some wraps today to have for the weekend and made the most delicious wrap I’ve ever made tonight. The secret? Aluminum foil!
And some great ingredients :
Laughing cow, avocado, honey mustard, capers, jalapeños, green pepper, spinach and ham.
I can’t believe I’ve never thought of doing this before. I don’t really like wraps because they always fall apart on me or tear when I’m rolling them. But a classmate of mine brought one in foil and it worked like a charm (I’m sure maybe of you do this too – why didn’t you tell me sooner!) Eating it was a piece of cake.
I went to the Express Y again and did another 45 minutes on the ET while reading about Minerals . I’m all caught up for my exam on Monday. By the time I showered and navigated traffic, I only had 15 minutes to eat.
I packed a spinach salad with carrots, cucs, olives, capers and Woodstock dressing. I actually mixed the dressing before my workout hoping it would hold it. It got kind of watered down in there, so I guess i’ll have to keep it separate next time.
Had to take a bite first. So good even though I had to wolf it down at the door of Chem lab with 1 minute to spare.
Chem Lab went really well tonight. No complications. No yelling. Just successful precipitates and easy calculations. Two more to go! And I don’t really need to go to them because we get to drop 2 labs….hmm…
Once home I celebrated the end of the week with a bowl of mint chocolate chip for a snack –

Thanks for checking in the other day. Things are great…I’m working nine to five this summer like a normal human being so I’ve had the luxury of being able to focus much more on health/exercise/sleep. It’s fantastic! I guess it’s a total flip to your summer…but you’re handling it well and I’m loving the tips on how to manage a go-go-go lifestyle and still stay healthy. I still read your blog everyday and I just got a blackberry so now I can enjoy it on my subway commute, which is great because my work computer never gets to see anything but legal research (I’m at the cubicle that my bosses see directly into…ugh!). Good luck with your last bit of chem lab…almost done! Food lab sounds so fun…I’ve got to figure out how to petition that class into my schedule next year ;).

Kath- You’re blog is great and you certainly didn’t deserve what was written about you in your last post. I don’t think it’s fair that people make assumptions about your life or your upbringing. My question is- How do you deal with it? Isn’t it SO hard to have total strangers call you names and accuse you of being stuck up? I appreciate your blog and I think you are doing a great job juggling school, workouts, marriage, AND eating well.

omigosh! I discovered that my last semester of school this year. so true; when I make wraps at home and put them on a plate they get all over the place. the tin foil keeps them all contained – glad you discovered it too 🙂

another good secret, if you microwave the wrap to soften it first, put it on a paper towel and then on the foil and wrap it in both…the paper towel soaks up the moisture and prevents soggy-ness.

What kind of cold cuts do you get? What brands?
I’ve heard that pregnant women should not eat cold cuts, because they can get listeria (a bacteria I think?) from it.
Should non-pregnant people limit their intake as well?
Cold cuts are just so convenient. You can buy 1/2 lb and eat it all week with wheat bread, honey mustard, tomato, and lettuce. Pair it with some fruit – and wah-la! – there’s my lunch. (I can have the same lunch everyday – it’s fine with me). But if it’s not good for my health, I’m willing to stop.
I am a researcher by nature – and Boar’s Head low-sodium turkey breast seems to be the most ‘natural’. What are your thoughts?
Any other thoughts from you fellow readers out there?

Jenny — I’ve never read the label of slow churned ice cream but I imagine that it has added ingredients like stabilizers (xanthan gum or something) plus of course sugar and maybe artificial flavoring so I would say that whole milk is definitely healthier. However neither is really bad for you so it probably is not too important, unless I guess if you have a specific reason to be especially concerned about saturated fat in your diet, then whichever you feel like eating is probably fine. It seems to me that the milk would have a lot more nutritive value than the ice cream which is made up in a large part by air. Personally I don’t worry about fat intake too much and I like whole milk as a treat once in a while.

Haha~I’ve always had the same problem with wraps ’cause I’m such a clumsy eater! Aluminum foil definitely makes it a lot easier–either that or plastic wraps/napkins!

Maybe this would help with the salad: put the dressing in the bottom of the container, then put the salad on top…when it’s time to eat it, shake thoroughly until everything is coated…should work…also, the ugly comments you got yesterday…I’m thinking they are like the pot calling the kettle black…they thought you were whatever (bad) all the while attacking you…to them I offer the admonition: pride goes before a fall and a haughty spirit before destruction. I know from experience what goes around comes around. It takes guts to put up with the insensitive crap. Sounds to me like some people are just mean spirited and jealous.

One more thing….I think your musings were very legitimate…not everyone who eats at soup kitchens is homeless…often those with limited incomes eat at soup kitchens…they have resources for other meals, just not all their daily meals…so your wondering if they ate four sandwiches because they were hungry or for other reasons is a very reasonable question to ask, especially in light of your vocation.
Like you I would think the same thing about the bologna…I grew up on it and I love the taste…but it’s not as healthy as cheaper sandwich food choices. Some people say “beggars can’t be choosers”…and that is truth…but there is nothing wrong with wanting to give people better food nutritionally. Those who live on the street or who have limited food dollars need their nutrition especially since they often don’t have routine access to health care. Often the only time they see a doctor is in the emergency room.
Any food is better than no food, but when there are choices, wisdom dictates choosing the best proffered.

of course I would bring travel-friendly foods. Will you have a cooler+ice?
here are some suggestions:
• granola
• healthy cereal (like kashi heart to heart)
• fruits (apples, oranges, nectarines, plums for the freezer)
• trail mix (Trader Joe’s has some good ones)
• dried fruit
• nuts
• veggies that don’t need refrigeration: zucchinis, tomatoes, sweet potatoes, onions, etc. And then you can cut them and grill them (I’m assuming they’ll be a grill or something?)
• whole wheat/grain bread + peanut butter
I’m not sure if bringing perishables is a good idea even if you do have a cooler – just in case.
Are you making all your own meals?
If so, do they have a store in the vicinity? so you can buy things like milk, yogurt, meats, etc.
Hope that helps! I’ve been camping before and unfortunately we brought very naughty foods: chips, candy, marshamallows + graham crackers + chocolate (YUM-smores!). So it’s great that you’re trying to be good! 🙂 Hope you have a blast.
