It ain’t me!
I went to cycle this morning, but the class was FULL when I arrived. Bummer. I decided to take advantage of the gorgeous day by taking my workout back outside – and was craving a run! I walked back home (30 minutes total walking) to use the bathroom and change gear. I sat down in a chair and fell asleep!! That never happens! Someone else is calling the shots.
30 minutes later, I woke up and decided the baby did not feel like running, so we went on a walk instead. A really nice 45 minutes of sunshine. I’ll just have to run another day…
After a shower and a conference call, I made a wonderful lunch! I can feel my love for plants creeping back. I still don’t want savory vegetables or big salads, but avocado and blended spinach were just what I wanted. It feels so good to be eating well again.
Best “salad” I’ve had to date! 2 big handfuls baby spinach, 3/4 cup milk, 1/2 packet of Tera’s Whey and 1/2 a frozen banana.
Topped with honey bunches and drizzled coconut butter. Outstanding!
On the side – High Five with mashed avocado (can’t get enough of ‘em!) and manchego cheese.
Two delicious thumbs up!

A very appropriately green lunch for March! 🙂 Enjoy your sunny afternoon.
Hope @ With A Side Of Hope says
I love avocados! I have some sitting on my counter waiting for them to ripen. It’s torture. I’m hoping I get to eat them very soon. 🙂
Brooke says
Put them in a paper bag with a apple or banana and they will ripen in about 1 day. Those specific fruits release chemical compounds that ripen others. Hope you enjoy them sooner!
Stephanie @ Legally Blinde says
Yum! All of the green in your lunch looks fantastic. I hate when classes are full and it messes up my workout plan, but walking outside in good weather sounds so nice 🙂
Susan H. @ The Food Allergy Chronicles says
A smoothie salad…how fun! My best friend introduced me to Manchego cheese…love it! Especially with Orange Fig Jam spread on top with Raincoast crackers! Yummy!
Claire @ Live and Love to Eat says
I love avocado and cheese together – and that bread would make it even better!
Kinley @ Better Off Barefoot says
I can’t get enough ‘cados right now! Love them!!
Katie @ Peace Love & Oats says
I absolutely LOVE manchengo cheese! That open faced sandwich looks so good, I’m about to start drooling over my computer!
Caroline @ After Dinner Dance says
I need to use my avocados – maybe I’ll do a nice green smoothie!
Ashley @ My Food 'N' Fitness Diaries says
i’m loving all the GREEN in your lunch! i’ve been obsessed with avocado lately too. yum!
Megan @ Megan's Munchies says
You have officially inspired me! Totally had mashed avocado on a tortilla for lunch!!
Averie @ Love Veggies and Yoga says
Good for you for walking and listening to your body and to baby. I didn’t run much at all when I was pregnant or for the year afterward. My body (and baby) said..no thanks. Walking was (and is) fabulous.
Michelle (Peachy Palate) says
That combo looks so good together! I love smoothie bowl…and of course they simply have to have toppings to be complete 🙂
Jennifer says
So much GREEN. That’s how you know it’s healthy. Well, unless it’s green M&Ms 🙂
kathleen @ the daily crumb says
i need to start topping my liquid salads with some crunch. looks delicious — and tera’s whey is my protein powder of choice as well!
KathEats says
I believe it’s coming to an OpenSky sale soon – I’m going to buy it from myself if so 🙂
Erin says
Whole Foods includes it in their 15% off supplement Tuesdays. I just stocked up for much less than when I order from Amazon. I like the Dark Chocolate and Bourbon Vanilla.
I also started mixing it with almond milk because of the shelf stability. Can you talk a little bit about the difference between dairy and non-dairy options?
KathEats says
15% off is fantastic!
Do you mean for milks?
Erin says
Yes, regarding milk.
KathEats says
Well other than where they come from 🙂
Cow’s milk and soy milk are higher in protein. Almond and rice milk are pretty low. Most milks of any kind are fortified with vitamin D and calcium, and you probably want to choose a milk that has both. Milk protein is a little more bioavailable than soy, but soy is still a good option. I drink organic cow’s milk. Does that help?
Aylin @ Glow Kitchen says
Wow what a green feast for the eyes! I love drizzling coconut butter and having it harden. It’s the best.
Grace @ Healthy Dreaming says
Love how that manchego cheese and avocado sounds right now. A nice walk is definitely amazing too 🙂
Angela @ Eat Spin Run Repeat says
Oooh I love all the bright pops of colour here! I’ve got avocado on my list of ingredients for weekend cooking, and have never tried blending it with spinach but that’s a great idea!
Lauren @ Oatmeal after Spinning says
That lunch looks AMAZING! I love Tera’s Whey, but man is it pricey.
Makes me really wish I could eat lunch at home every day- lucky girl! (I’m sure you know that :))
Lexi @ Cura Personalis Foodie says
I stopped at GH for the first time ever today and totally thought of you! I got a vegetarian sandwich on the low-carb multigrain (which is apparently made with tofu?). The sammie itself was good, but I loved the bread!
KathEats says
Fun! I haven’t ever had the low-carb bread
Jen says
Does your store sell the LC?
Looks great! I thought you were always “against” protein powders though in favor of real food sources?
KathEats says
No, we don’t make it.
I’m not against protein powders, but I don’t think they are necessary in normal circumstances. Pregnancy is not normal and protein needs are increased, so I’m fine with adding a boost to smoothies when I’m low on yogurt/cottage cheese mix-ins from a high quality brand.
Maria@ Sinfully Nutritious says
I hear you Kath, spring makes me want fresh raw foods. I went to Trader Joe’s today and spent $150 on JUST PRODUCE. Nothing else! I bought a Spirilizer to make zucchini pasta. I can’t wait till dinner. Lovin’ me some veggies.
Enjoy this gorgeous day!
Jen says
Haha, that makes me feel less bad about my grocery bills 🙂 I assume you have a family to feed though so it won’t go bad!
Molly @ RDexposed says
Love that green!
I need to brush up on GH bread since more and more pts have been asking me about it!
KhushbOo says
Avocado and toast with crushed pepper and sea salt is just heavenly!
Christine @ Oatmeal Bowl says
haha. I think St. Patty’s day is creeping up because we are all playing up the green. I just made a delicious creamy avocado chipotle sauce for my black bean & corn tostada. It was delicious. And alien green. haha.
Annette @ EnjoyYourHealthyLife says
Sounds delicious to me too!!
I love a good, soundless NAP 🙂 Hope you enjoyed yours.
Blessing {Working Mom Journal} says
Clearly, he or she is in charge. That happened to me so many times, if I had a corporate job at the time I would be fired. Luckily all I had was class work that could wait.
Katie @ Talk Less, Say More says
I think I need avocado because that’s two days in a row I’ve found my mouth watering after seeing avocado on someone’s blog.. 😉
katie @KatieDid says
Manchego is my fave cheese! Love how the smoothie is your current “salad”. It works!
Anna @ On Anna's Plate says
Gotta love the spontaneous pregnancy naps. I’ve been SO grateful that I work from home for the most part during my pregnancy…for that exact reason!
Emily says
AH kath that lunch looks absolutely perfect! i really just want to spend a day {HA more like my LIFE!} eating kerf meals.
i just also wanted to say how im really admiring that you aren’t “beating yourself up” for not going for a run when you were planning on it, and just listening to your body instead. in my normal everyday life, sometimes i MAKE myself do things like run, or eat certain things that i “should” be eating when i know my body doesn’t want that type of exercise OR that type of food. im working on just listening to my body’s cues more often and reading about your “go with the flow” attitude helps a lot 🙂
Shaun @ Snackasaurusrex says
Congrats on the bun in the oven! I’ve been off the grid for a while, so that was definitely news when I stumbled in today 😉
Manchego cheese is a recent discovery of mine and I LOVE it!
Angela @ Happy Fit Mama says
My kids love avocados so we always have a plentiful supply in our house. I’ve never had manchego cheese but it looks delicious with the mashed avocado!
Jessica @ The Process of Healing says
I need to bring back green smoothies!! While I DO think you can sort of taste the green, it’s still delicious!!!
Lisa (bakebikeblog) says
love all that green!!!
Jenny@vegetarianhatesvegetables says
Look at you, putting those greens away! Good for you.
Lindsay @ Fuel My Family says
what a green day of eating so far! I have been eating so many carrots, sweet potatoes, and cauliflower lately that I am missing the green!
Sonia the Mexigarian says
I so want an avocado right now. the open face sandwhich looks so yummy.
Alyssa @ Fit and Fun in Third says
Nothing worse then getting to a class and realizing it’s full! Glad you had a nice afternoon regardless! 🙂
Lisa V. says
Your sandwich looks amazing, I love anything involving avocado. I would love to buy more if them, but I know they go brown and gross soon after slicing into them. How do you keep yours fresh, especially if you’re only using 1/2 at a time?
Amy says
leave the pit in the half you aren’t using and put it in a sealed plastic baggie in the fridge. it will be a little brown by the next day but nothing you can’t handle! still super yummy 🙂
KathEats says
I normally have the WORST luck with avocados going all moldy on me. This one was just…perfect. But Amy hit the marks with keeping them fresh
Tanya @ Vegan Faith says
That’s more green than I’ve seen you eat in months!
Michaela says
how fab does this look??? I cannot get over the beauty of your lunch, the colours are amazing. and this made me realize how much I have loved Manchego before I went vegan…

Love the amount of green that’s coming back to your posts – I can imagine eating healthy again feels amazing! This looks like a delish lunch.
Ashley says
Do you think the Unisom is making you drowsy? I know it’s a small dose but that stuff knocks me out!
KathEats says
I’ve been taking it for 8 weeks and I haven’t had any trouble with daytime drowsiness (except maybe a few times). I think it’s because I haven’t been sleeping as well and getting up earlier 🙁
Michelle (Better with Berries) says
Walks are always perfect this time of year! It’s nice to slow down and enjoy the outdoors after all the months of cold… even if it wasn’t even that cold this winter!
jojo says
I know how it is when you are carrying a little one inside you..
I was very tired and sleepy on my first trimester too. I kept up the exercise like you though, and I am thankful I did. It helps with the labor and also recovery:)
Funny, I just had a spinach smoothie, liked similar to yours. Looks great!
jojo says
I meant to say looked similar to your spinach blend… 😉
J3nn(Jenn's Menu and Lifestyle Blog) says
