Who Loves Peanut Butter?!

‘Twas a productive morning here in the Carolinas. I didn’t get it all done, but I feel more organized now.

I broke for lunch at 1:30 and knew that Sweet Potato Bread and Kelsey’s Pimento Cheese would be on the menu!

Plus I made a batch of kale chips. Not sure why it took me so long to realize it’s easier to put the ketchup right on them then dip. They are so crumbly sometimes that dipping is more like licking ketchup off my fingers! Matt started doing it this way, and it works very well –

I’ve been getting a bag of kale every week and when I make my first batch I go ahead and trim, wash and spin-dry it all and put it in a bag with some paper towels to throw into recipes or make chips on a whim.

Lastly I had a Strawberry Chobani with more strawberries (we got a huuuuge thing from Costco) and some TJ’s high fiber worms –

    i just had the best snack – kind of like a tasting course:
    cashew butter
    Trader Joe’s Apple and Cranberry Chutney
    Medjool date
    piece of bakers (yes, bakers, i like extremes) chocolate

    combine or savor separately!

    The pimento cheese looks ooey-gooey good. I usually shy away from pimentos, but I might make an exception to try out that recipe.
