Ice cream will do!
Just a tiny scoop of vanilla bean under a juicy nectarine after my chiropractic appointment! Must replenish yogurt soon – I can’t live without it! But this ice cream sure was a good substitute!
A few hours of writing later….we made shrimp scampi!
We polished off the shrimp from the low country boil and served it over Mona Lisa Pasta – fresh fettuccini that Karen picked up today.
The sauce was a mix of butter, olive oil (about 1.5 tbsp of each for 4 servings), with about 4 cloves of garlic, salt, pepper, the juice of a lemon and 1/4 cup white wine (which was cooked down so it was alcohol free).
Delicious and super filling!
Served with zucchini (from the garden!!) sauteed on the side
And only the finest linens
Almost forgot the red pepper flakes!!
Much better.
What is it like to live with Karen Monson?
You never know what you’ll find. [Rubber snakery]

i think karen would enjoy living with me. i’d fall for every single prank! hahahaha.

Karen sounds fun. You guys need an in-law suite so she can stay there all the time! 😀
Kelsey says
Ahh that rubber snake would get me every time! Hate those things:)
Ashley @ Hudson on the Potomac says
Yum! A little midday ice cream never hurt anyone! It is summer after all!
kaila@ healthy helper blog! says
Nothing beats FRESH pasta!
Laura Rios says
That icecream looks great!!
The rubber snake reminds me of one that was in my bathroom in my apartment one night. Except it turned out to be real, and had a impromptu meeting with my frying pan.
Erin says
That snake almost gave me a heart attack! I would have freaked, ahaha.
kristen @ verbs and vignettes says
mmmm. i had a big bowl of 2% plain fage yogurt with cherries and blueberries this morning. it was my favorite part of my work-day, i think. :p
karen is adorable, but i think i would’ve passed out at least once by now from all her pranks! but i know i’m a wimp already. hahaha.
Cristen says
Good thing you’re aware of her trickery. I wouldn’t do that to a pregnant lady, but then again if I did that to one of my friends they’d probably fake contractions as payback.
Katie @ Peace Love and Oats says
That pasta looks delicious! And ice cream always sounds like a good substitute 🙂
Danica @ It's Progression says
ice cream with a fresh sliced peach is one of my favorite desserts! any ice cream with fresh fruit is good though.
tlm says
so would the veggies yall grow in the garden be considered organic?! very cool!
KathEats says
Yeah, we don’t spray them
KathEats says
But I guess there are other things to consider too. I honestly don’t know the type of compost we used – but it was compost.
Sarah @ Learning to Feed Yourself says
You are so good at remaking your leftovers into a whole new meal! Whenever I have leftovers, I just reheat them and that’s it. Ha.
And ice cream and fruit looks like the perfect snack 🙂
Susan H. @ The Food Allergy Chronicles says
Okay…that is like my favourite dinner…I was worried when I didn’t read red pepper flakes because spicy shrimp is truly my favourite…then Matt added them for you and all was well! 🙂
Brie @ Coxswain's Dilemma says
Ahhhh how I love ice cream, and how it doesn’t love me! Lovely spread!

I LOVE fruit on top of ice cream, one of my favorite summer treats ever!

That shrimp scampi looks incredible. And HA. I’m in Vermont right now and have actually been dealing with REAL snakes! Friendly, but snakes nonetheless 🙂

Hey Kath. Yogurt, fruit, and granola with a drizzle of honey is my all-time favorite! Quick question. I was looking for the changed links you mentioned to me in your email. Where would I find those? I checked the Shopping link. Found Opensky there, but that was all. Thanks for your help. When I refer folks to your blog, I also want to let them know where the links are.

I had previously over done it on and got to the point where I never wanted to eat a shrimp again. But – I think that enough time has passed and your meal made me crave a delicious shrimp filled meal!
Molly @ RDexposed says
Not that I really care if you consumed a tiny amount of EtOH, but I have been told that all EtOH doesn’t get burned off during cooking..? I might need to consult my little cicerone beer expert.
Emily @ Life on Food says
The pasta dish looks amazing. I always get so hungry after looking at your blog. I always substitute ice cream for milk in my coffee. I might run out more often than not in the summer…just saying.
Margaret M. says
Oh, I love pastas and when I get a glimpse on what you have here. I was like that looks delicious I wanna try that! I also love the fruity ice cream you have, yummy. I hope the snake doesn’t hurt anyone in the house. It’s really scary.

Lexi @ You, Me, & A World to See says
Oh my gosh, I would have freaked out if I had seen that snake!
Julia H. @ Going Gulia says
Red pepper flakes are the best. I am a huge fan of throwing those on top of Italian food…even though no one else in my family does it! Same goes for parmesan cheese…I can use that on anything (even used it on chili last night!)
Lisa @ Breast Cancer Society says
Great post, I am a big fan many of them as well! I also just cleared out my reader and twitter follow list of people that I like to converse with and say things that are meaningful to my life (and make me laugh, and post pictures of puppies, obviously).
