Remember five years ago, when I was making waffle stacks for breakfast? I recently passed by some waffles in the grocery store and thought maybe Mazen would like them. Of course he doesn’t (he is so weird!), so I’ve been eating them instead.
Instead of a stack, I made a more portable sandwich filled with a peanut butter “frosting”. It was darn good!
I used these waffles:
I mixed in some peanut butter powder with Greek yogurt to make the thick, flavored frosting. Peanut Butter & Co sent me this back in the fall and it’s taken me a while to try it, but now that I have, I’m using it on everything! Obviously I am not afraid of the fat in regular peanut butter. I like that the ingredient list on this is simple, and you can much more easily stir some powder into yogurt or a smoothie than you can thick, sticky peanut butter. So it’s been great for flavor.
In fact, it makes the perfect ingredient to sprinkle into overnight oats!
And I love the hint of vanilla nut in a smoothie bowl. This guy was made of mixed berries, banana, PB powder, milk and spinach. A not-so-green monster!
What’s been on your breakfast menu this week?
xoxo

That waffle stack is so cute! You always have fun food ideas. I got a big container of granola at Whole Foods, so I’ve been doing a ton of yogurt/granola bowls with fruit this week. 🙂

Those waffles are on the dry side! My daughter didn’t like them, either. The Trader Joe’s blueberry waffles are another story. She loves them and they’re much softer.
Breakfasts this week have been your whipped banana oats, but instead of rolled, I used oat bran. Made. Triple batch, and when I heat them up, I add a little milk and sliced strawberries in the microwave with the bran. Then a good stir and it’s like strawberry cream of wheat, so good! Topped with pecan pieces.

I used to love oat bran but forgot about it! Thanks for the reminder : ) And I like a dryer, heartier waffle, but I will look for the blueberry ones. But Mazen hates all berries…sooo maybe not ideal for him either.
Jen says
The berries are really tiny, you really can’t even see them but for a few specks. I guess they’re ground up a bit first? My daughter is very weird about anything other than chocolate chips (sigh) in her pancakes or waffles, and the TJ ones pass her test. I think they have a plain variety too though!
KathEats says
Good to know!!
Mary Beth says
When the blueberries are really tiny and the label says “blueberry bits”, it’s not really blueberries. It’s artificially flavored and colored corn starch, flour, sugar and gelling agents. If it is really a blueberry, it looks like a blueberry, in size, color, and shape.

The waffle sandwich is such a cute idea! Like ice cream sandwiches, only for breakfast, and healthier!

That waffle sandwich & the purple smoothie look so good! I love toaster waffles. I *do* try to stick with eating products that have “whole grain whole wheat” as the first ingredient, but sometimes I just want deliciousness without worrying about that 😉 And the purple of the smoothie is so vibrant! Whenever I add spinach to my berry smoothies, they turn brown. Maybe I just need more berries! Yum!

What a great idea with a waffle sandwich for breakfast. I haven’t had waffles in ages but I really love them. I need to go make some this weekend 🙂

Diggin the waffle stack idea and peanut butter powder is a staple in my diet. I eat the same breakfast everyday and it’s always hard boiled eggs and peanut butter!

This would be such a great on-the-go breakfast option. This morning I had warm, protein oats using peanut butter powder as well and really love the hint of flavor.

Matt and I are obsessed with Van’s GF Ancient Grains Waffles! I just bought four boxes (two for $5) on Tuesday. We’ve gotten into a routine of having oatmeal on Monday, savory oatmeal (we call it a scrambler) on Tuesday, Waffle Wednesday 😉 (one sweet/one savory), then free forall Thursday and Friday. We do love making stacks/sandwiches with either a sweet or savory twist. Peanut Butter and Co. sent me two free coupons, one for their powdered product. I didn’t get the flavored, which I think would taste a lot better. But I’ll keep trying it in different ways!

I love your weekly menu!

Thank you! Makes meal planning a bit easier and fun!

I usually save my waffles for the weekend, but love them spread with PB&Co mighty maple and topped with frozen blueberries! And now I’m hungry again… 😉

That smoothie bowl is such a beautiful color! I’ve never tried powdered peanut butter, but it does sound like it’d be delicious in overnight oats!

YUM! I’m going to try that pb powder. Also—is Mazen turning FIVE this year?? no way. Nooo way.
KathEats says
YES. In September. He is seriously a little man in a 4-year-old body.
Liz says
Will he start kindergarten?!?!?! That’s crazy!
KathEats says
He’s doing a transitional kindergarten because he’s a September birthday and will do the real deal the following year

I often ship breakfast doing intermittent fasting, but when I do eat breakfast, it’s a bagel on Wednesdays (a weekly freebie at work!), or yogurt, something very simple. Today, I had some macerated strawberries and a small chunk of Kerrygold aged cheddar, yum! I have tried your overnight oats in the past and really loved them.
Sam @ Hygge Wellness says
Yum! Such a fun idea & perfect for on-the-go! I do a similar thing with a whole wheat english muffin, peanut/almond butter, banana slices, and cinnamon!
KathEats says
I forgot about English muffins! Need to get some more.

Ezikiel makes a fantastic sprouted English muffin !

If you’re ever in the DC/Baltimore area you have to try Swapples! They are waffles made entirely out of vegetables!

Those waffles are very dense and dry. We’ve had better luck with plain ones – my little is weird about textures and she’s allergic to blueberries so we can’t have anything with berries.
Stacey says
I’ve never had the waffles, but my toddler loves them. She actually used to only eat waffles frozen (probably felt good on her gums!), but now she’ll let me toast and top with peanut butter. Probably because she likes to help run the toaster 🙂
Kelli @ Hungry Hobby says
I’m totally not afraid of peanut butter either but once I tried the powder it was like I was given the right to make EVERYTHING peanut butter flavored which was awesome!
Kelly says
I’ve been having waffles lately too! I got the waffle maker out, and I realized how much easier it is to make waffles rather than pancakes for myself and two kids. Kodiak Cakes, topped with Wild Friends Vanilla Protein Nut Butter, sliced banana, a sprinkle of hemp seeds, and a drizzle of maple syrup. Delicious! Keeps me full ’til lunch!

I’ve been mixing powdered PB with a pinch of stevia into cottage cheese and it is heaven!!

omg I gotta try that powdered peanut butter!
Jeanie says
Every morning I have my Cheerios (original), sweetener (can’t eat sugar), 1% milk, half-ish of a banana, and half an English muffin. Sounds pretty healthy, huh? Well, until I tell you that I put as much butter as I can get on the toasted muffin.
Annie says
Who doesn’t like waffles?! Silly boy. I love frozen waffles (or fresh)! And peanut butter powder. It is so easy to use and adds great flavor. I’m on a pancake or peanut butter toast kick lately, mostly because my son loves both and it’s easy!
Patricia @Sweet and Strong says
I love powdered PB in yogurt or oats, makes them so creamy and delicious! Lately I’ve been having yogurt bowls or steel cut oats with almond butter. I usually try to prep enough breakfasts for the entire week to make the mornings easy.
Cassie says
Haven’t tried powdered peanut butter but really curious – i think you’ve sold me on the idea now. time to get experimenting!

Raisin bread used to be my guiltiest pleasure of all times! Now I switched to thinaddictives, due to gut issues, my stomach doesn’t like gluten that much turns out. But sometimes, I still do eat it, of course!
