Our wedding is on TheKnot.com!
I think you have to join to see the slideshow, but it’s worth it 🙂 So cool! We’re also in The Knot’s North Carolina Magazine this season – just small page.
Early Breakfast
I had a cup of French Vanilla tea when I woke up…..
and some toast with jam and whipped cottage cheese before my workout around 8. I read about this whipped cottage cheese on Eat Like Me and knew it was right up my alley. It’s GREAT!! Cristin is right that it’s a great substitute for cream cheese. The only downside is I had to go to a special store (Fresh Market) to find it, so I don’t know how regularly it will be in the fridge (I went to Friendship’s website and did the store locater).
Workout
We headed to the gym around 8:30 – I wanted to go earlier than we did yesterday. I was happy to see they got 3 new Stairmaster Stepmill machines (my favorite) – all brand new! I did 40 minutes on them to celebrate. Followed by some upper body lifting and free weights. ~375 kcal burned.
Something Different
Throughout the summer I frequently have fresh berries over yogurt for breakfast while oatmeal is my winter staple. Today the sunshine reminded me of summer (despite the fact that it’s still only 50* out there) and I was in the mood for a bowl of yogurt – plus we have Swiss yogurt and Fage to eat rather than just Stoneyfield which made it more appealing.
My bowl included:
- 6 oz Fage
- 1 Weetabix biscuit
- Pom
- 4.5 oz pear
- Fiber One
- Ground flax
- 10 grams sliced almonds, toasted in the microwave
- Just a sprinkle of Trader Joe’s granola
I do think Fage is a little too dense/dry for this and wish I had used the Swiss yogurt, which is the exact opposite and pretty runny. I can only buy the Swiss at Fresh Market and picked some up on my special trip yesterday. It’s also more expensive so I talk myself into just eating regular plain yogurt on a regular basis.
With coffee (Fresh Market’s – yum!)
Today
No big plans today, but we might go to a wine tasting with my sister this afternoon. And we might rent the third Pirates of the Caribbean movie tonight (which we have put off seeing so we could watch Dead Man’s Chest again but now we decided to just go ahead and watch it). I NEED new jeans! I’m off to do some shopping! Have a good one.

I noticed that you eat fiber one alot, which has high fructose corn syrup and aspartame. i have heard bad things about both. What are your thoughts/take on it? Thanks! Enjoy the sun
p.s. would fage taste good as a replacement for ice-cream in a milk shake or is it too tarte?

Wow, what a gorgeous wedding! I LOVE your colour scheme and flowers, and you looked beautiful! And what a cute story 🙂

Hi Kath! When you used to take walks during your lunch breaks at work, did you bring tennis shoes with you to walk in rather than heals? I'm not sure what your dress code was at work but I was just wondering if you changed shoes! Thanks!

Wow your wedding was so unique looking- I LOVE that! You really stepped out of the box with your colour scheme and it really looked fabulous and professional. Congrats!! =)
PS- You cracked me up when you said " I was happy to see they got 3 new Stairmaster Stepmill machines (my favorite) – all brand new! I did 40 minutes on them to celebrate." LOL!

You and your wedding looked beautiful! I love the color scheme.

I should hire you to do my wedding! Did you do all the planning/decorating yourself. If so any tips-for example your favorite sources. It all seems like so much work!
What are weetabix, its looks like shredded wheat. Is there an advantage of using one over the other?

I was doing a search on whipped cottage cheese (that I also saw on eatlikeme) and came across another blog that mentions it. Someone commented that you can just put regular cottage cheese in the blender to whip it. I haven't tried it since I am out of cottage cheese, but it seems like it should work. I'm going to give it a try maybe today if I get to the store. I hope it works because I hate going on never-ending searches for certain products!

Kath's gonna be modest here, but she DID do all the color coordination herself. I'm not too picky, so I just let her do the deciding. Also I'm lazy.
But I was in charge of band stuff, etc!

I read eat like me too, what is so great about whipped cottage cheese? Does it taste different? I happen to like cottage cheese.
Ala says
Wow Kath you did the colour coordinating for your wedding yourself! I am IMPRESSED =)

It cracks me up that you like the Stepmill. I tried it for the first time this week, and renamed it "the stairway to hell" although…i've made it my new fitness challenge!

Becca,
My box of Fiber One doesn't have HFCS, but it does have aspartame. I go back and forth on artificial sweeteners. I don't like to drink diet drinks often or eat yogurt made with them, but I do put Spenda in my tea/coffee. For the Fiber One, I don't really have it that often and if I do it's usually a small portion. If I ate it daily, it might be more of a concern, but I think it's fine every now and then because I like the taste and other benefits of Fiber one.///As for Fage, it's good in smoothies, but I would use something cheaper if I were going to blend it! I've never thought about ice cream because we don't have an IC maker, but you could certainly give it a try. I think skim milk would probably be better though. But it might make a thicker frozen yogurt because it's thicker??
Tina,
I certainly did wear tennis shoes on my walks and I looked like a complete dork!! I even wore them with skirts. But it was worth it for the fresh air and burst of exercise! And to save my poor feet. I plan to pack them in my trunk so I can walk around the Winthrop campus this spring between classes.
Susan,
Weetabix = http://en.wikipedia.org/wiki/Weetabix
It's a little biscuity thing that I crumble over yogurt.
Rivermom,
Interesting about the whipped CC but it makes sense. I think I'm probably too lazy – I'd just eat the regular kind instead, or make the trip for whipped every now and then.
Elena,
It tastes just like regular but has a lighter consistency. It's much more spreadable-friendly for toast and things. I like it more, but it's probably not worth the special trips for me, as I like the regular kind too.
Thanks for all the wedding comments. I did do a lot of it myself – I made 160 of those programs by hand (but don't worry – the husband helped fold them and tie the bows 🙂 ) I had SO much inspiration from The Knot and the forums there, and I found a lot of great vendors who were recommended by brides in my area. I loved wedding planning and can't wait to do it again when my sister gets married some day 🙂
