^^”Where’d the frisbee go!?”
We were back to the grind – strength class/ABC conditioning followed by lunch, quiet time/work, outside play time, dinner.
Lunch was salad made with mixed greens dressed in lemon olive oil, lemon and salt plus yellow pepper, yummy cheese, cottage cheese and smoked salmon. I used to put cottage cheese on salads with blue cheese dressing all the time in college – an old favorite!
Dinner tonight was the KERF special with help from Grillmaster Matt.
I made some mashed sweet potatoes, which M loved. I boiled sweet potatoes for about 10 minutes (maybe 15?) until they were cooked tender and then smashed them with 1/4 tsp kosher salt, a pinch of nutmeg, a heaping tbsp coconut butter and a tsp of brown sugar. Quite nice! I always leave the skins in and Mazen called them “stripes” – ha!
I actually had plans for salmon for dinner, but one of the pieces I thawed out was just not smelling right, so we tossed it and made a couple of No Bull Burgers instead. M got the one piece of good salmon. He has gotten so picky that he won’t even try his vegetables most of the time, but he actually did try the asparagus! He got a few bites in and said he was done. I think I made it too spicy, actually. One step forward, many steps back : )
The adults loved the asparagus!

tonight at dinner we heard “it’s too green” in response to the 3 year old’s veggies. who knows what they’re thinking! 🙂

Haha. We should try some of those funky colored veggies – purple cauliflower and white carrots – although I guess neither of those were green to begin with! Funny M has no trouble with green smoothies : )

it’s gotten bad over here in the last few weeks – he will only eat his bread if I cut it with a fun cookie cutter. testing my patience for sure! 🙂 purple cauliflower is totally worth trying!!

Ack! The pickiness! My previously not picky girl turned a bit picky around 2 and at 4 now it’s still totally hit or miss. And my almost 2 year old boy has always been a bit pickier and has already started getting more so. I think it’s strange mine are so much more interested in raw veg than cooked. Tonight they totally snubbed fresh mozzarella… WHAT!? Oh well, on we go!

If Ryder’s hungry before dinner (always) I let him eat raw pea pods, carrot sticks or cucumbers and since it’s before all of the rest of the food, it is more like a treat. Great idea about using coconut butter! I shamelessly love watching Southern Charm. 🙂

Thankfully my 17-month-old will try almost anything I give him. We haven’t entered the super duper picky stage yet… He’s making up for his non-pickiness at meals with big tantrums in public, ha!

We had veggie pizza burgers and a mixed greens salad tonight. My son, who is 10, loved asparagus until about a year ago. He called them, “swords.” Now he won’t touch it. We keep trying…

Kath, Curious if you ever grill or if that is let solely for Matt? I do all the cooking around here – I love cooking and my husband does not – but I’ve never learned how to use a grill. They scare me – ha! But because of that, we did not grill once last year! Are they easier to use than I realize? Do I need to just learn how to use it and get it over with? Or have you also steered clear?

I do sometimes! It is easier than it seems…especially if you have a gas grill! Just plop on the food and test for doneness lIke you would in an oven.

If you can sear/sautee, you can definitely grill. The hardest thing for me is cooking steaks properly – I’m terrible about over/under doing them. But most stuff is pretty forgiving. Go for it!

same here! Have you seen any of the seasons where they bring veteren players back? Colby came back fairly recently but I didn’t feel the same way towards him the 2nd time around.
And I can’t believe Shirin was voted off last night – Boo!
