Matt had the fun of going to the National Homebrewers Conference this weekend, so my parents came down to help me play with Mazen. I made an itinerary so we wouldn’t miss anything fun – from a trip to the Cville mall (the real one!) to a splash in the pool to Fridays After Five and dinner in the countryside.
We cooked in one night – I made the Chicken & Bean bake again.
It was delicious, but I used a GIANT zucchini and its water diluted the dish, so I would not recommend too many watery veggies (bake them on the side).
Still good though – served with Great Harvest rolls and some delicious white wines

We had a fabulous time splashing in the pool too. See the big slide in the background? Since mom and I could share baby duties, we each went down! It was very impressive for a small pool slide. Our pool also has a lazy river –fun! M loves to splash.
We all went to Fridays After Five for a picnic. Great weather!

I had the fun of going out with my girlfriends after M went to bed one night – yee haw!

Dinner at Positively Fourth Street {crabcake sandwich with roasted cauliflower!}
And dessert at Chaps!
Mom and I went to a friend’s baby shower on Saturday and Pea had his first time babysitting.
They did great together!
Dinner at Blue Mountain Brewery is always a hit!
Mom and I went on power walks every morning before the sun got too hot. On our final morning we went on our walk and thanks to a cold, M fell asleep. We just kept walking and walking to keep him resting and ended up covering 5.25 miles on foot!
By the time we walked to brunch at KK’s and back, we’d walked over 7 miles before noon.
Check out M’s new trick! He went from crawling to climbing stairs faster than I ever would have predicted.

Oh my! That crabcake sandwich sounds and LOOKS incredible! I’m a fan of ANYTHING crab and the cauliflower is calling my name too! So many of my favorite foods all in one dish.

I roasted cauliflower for the first time the other night. All the recipes I’ve found use lemon and I wasn’t that big of a fan. What do you use to season your cauliflower with? I’d love to try again.

I roast mine with just olive oil, salt, pepper and chopped garlic. I do the same with broccoli and it’s amazing!
