Sunshine, FINALLY! Our weekend started with some crazy winds that cut the power for a good portion of Virginia. Some of my friends still don’t have it. We were lucky to only have had it glitch a few times. And on Saturday, the skies were bright blue.
Friday vibes:
We made our second of four Blue Apron meals for dinner: seared steaks with mashed potatoes. Steak isn’t something I usually crave, but it always tastes so good! We had cabbage and apple saute on the side.
After dinner, Thomas and I had a special date night in to watch The Shape Of Water. We had the idea to order cookies from Red Eye Cookie Co. which delivers hot cookies to your doorstep for a $2 charge (and an $8 minimum). What a cool service from Red Eye!
We tried four kinds (two of each) and nibbled on them all weekend. The chocolate chip and cookies & cream flavors were AMAZING! The peanut butter and signature red eyes (like red velvet) cookies were good, but I am a classic cookie kinda girl.
On Saturday morning, we made oatmeal – whipped banana chia with cinnamon vanilla almond butter.
And then dug for fossils!
The House Fairy brought Mazen this egg, which was great and much easier to dig into than the big block we did a month ago. Afterwards, you assemble the little fossil inside. Very cute!
Mazen went swimming, I fit in a workout, and we had leftovers for lunch, which was half a pork sandwich T brought me for lunch on Friday.
On Saturday afternoon, we went to the Big Room at acac Adventure Central with our neighbor, and then the boys played outside for a good portion of the afternoon.
We had Blue Apron Ginger Chicken Burgers with sweet potato fries for dinner.
T and I started The Handmaid’s Tale (it’s on Hulu, which I am doing a free trial of) and LOVED the first episode. I can’t wait to see what happens. (I should know because I read the book, but I think that was like 20 years ago – eek! – so I don’t remember the plot.)
Sunday:
A bed made by a 5 year old. Lol. I’ll take it!
And finally, an epic breakfast to end off a great weekend! T got croissants at the grocery store late Saturday afternoon and made us these breakfast sandwiches with egg, cheese, and bacon. Talk about a treat!
On Sunday afternoon, I had my first outdoor soccer game of the season (and it was a glorious sunny day for playing outside!) and then went to a girls’ night Oscar party in the evening.
Hope you had a good weekend! What did you think of the Oscars? Have you watched The Shape Of Water or The Handmaid’s Tale?

How have I never heard of the Red Eye cookies you speak of?!? Gotta try them out!
I’ve been watching Handmaids Tale- it’s sooo good! I can’t wait to see The Shape of Water!

I know what you mean about sunshine… it was all last week and finally I see peeks of the sun! Along with the dreaded humidity of Hong Kong spring… but oh well. Anything for warmer weather! 🙂

We have Insomnia Cookies up here in the DC area. Same deal with the delivery and the cookies look the same. So good!
Wind caused a whole lot of shenanigans up here but thankfully our home went unscathed.

I love Handmaid’s Tale! I also read the book years ago, and I think they did a fantastic job with the series. I can’t wait for season 2.
Linda @ the Fitty says
Hey Kath, do you generally watch your portion sizes when you have a meal or naw?
Katie says
My boyfriend and I did watch Shape of Water. We went in having NO idea what to expect and were both pleasantly surprised. I wasn’t quite ready for it to end, but it was good!

What did you think of shape of water?! I have found it fairly polarizing in whether my friends and family have enjoyed it, so I’m curious of your thoughts!
KathEats says
I liked it, but it wasn’t in my top 25 favorite movies or anything.
Shari says
I assume those are Cara Cara oranges pictured with the sandwich? Thanks to your recommendation, I am now a huge fan. They are so tasty!
KathEats says
Yes!! They are the best!

Hi kath, I’ve noticed lately you eat less tofu and more meat. Do you think your tastes have change or is it the change in partners?
KathEats says
I think change in partners 🙂

Haven’t watched it yet, but the Shape of Water was partly filmed in my city! They also film some of the Handmaid’s Tale here – the Commander’s House is just down the street from my office!
KathEats says
oh cool – which city?!
Jennifer says
I live in Hamilton, Ontario (Canada). Shape of Water was filmed half here and half in Toronto. The Handmaid’s Tale is filmed mostly in Cambridge, ON (about 45 minutes from here) but a lot of the house exteriors & walking in the streets is filmed here. A few months ago HT took over one of our small stadiums and erected scaffolds which, from the street, appeared to have Handmaids hanging from them. While it wasn’t the nicest image to see from afar, it was pretty cool to see them filming what seemed to be a pretty important scene! I love watching the show but I’ll admit, I’m always on the lookout for local spots when I watch it!
KathEats says
That’s so cool to have these filmed so close to home. And eek on that scene!
Birtina says
Kath, where did you buy the beautiful plates and bowl with the uneven shape? They are so nice.
KathEats says
They are these from Crate and Barrel. Come in a lot of colors!

Handmaids tale was by far my favorite by far!!!!
