Our weekend was full of summer fun. Hope yours was too!
Friday night we went to Fridays After Five and picnicked. We had salads from our garden with goat cheese, tomatoes, corn off the cob, avocado and a homemade dressing, and of course I forgot to capture a photo! Here was the vibe:
It was H.O.T. and M’s hair was humid enough to stand into a mohawk : )
Saturday morning was great because Maze slept until 6:30! That meant I got a wonderful 9+ hours of sleep. We had eggs and berries together for breakfast and then walked to the city market to get our fruits and veggies for the week.
We spent the hot afternoon at the pool with Matt. Adult swim was the best – we had the whole pool to ourselves before a million wild splashing kids jumped back in.
Late afternoon featured a lovely cocktail hour with mint juleps!
We also snacked on some Caromont goat brie I bought at the market over Nut-thins with radish and caper for a fancy appetizer.
Ride ‘em cowboy!
Pizza was on the menu!
Made with bacon, garden tomatoes and lots of great melty cheese. Plus salad and tomatoes from our garden.
Sunday morning balanced out Saturday morning with a 5:30am wake up : (
I made baked banana oatmeal minus the bananas plus summer fruit on top! It was sort of like an upside-down fruit crisp.
Topped with some almond butter:
After breakfast Matt and I traded workouts at the gym. I came home quite red in the face!
For lunch we made BBTs – bacon, basil, tomato plus more of that amazing goat brie. Peach + chips on the side.
After lunch I took advantage of daddy time and went out for a much needed pedicure.
We ventured out post afternoon nap to run a few errands and stopped into Kohr Brothers for cones! Mint + vanilla for me. Such a fun summer snack.
Our weekend concluded with a broccoli + cheese quiche. Broccoli from the garden! So far so good growing it.
And that’s the end of that chapter.

M’s mohawk is too freakin’ cute!! I can’t stand it!
Lily Parkes says
I second the motion to that cuteness of M’s! It looks like you really had so much fun. It’s great to see you guys fulfilled and happy. Oh, I love all the recipes in this post. 😀
Ali @ Peaches and Football says
OMG – Maze’s mohawk!!! That is just way too adorable!! I could look at that picture of him all day and laugh. 🙂 Too cute.
That baked oatmeal looks amazing. My mom shared one with me for this Amish oatmeal with dried cherries and walnuts that is really good but I haven’t made it in a while. Too hot to turn on the oven unless absolutely necessary – but I’m thinking lots of baked oatmeal should be made this Fall/Winter!
Tiffany says
Such a fun and sweet weekend.
You wrote “peach chips” and so I read peach chips without the “and” so I literally thought I must ask kath about chips that taste like peach! Haha!!
Have a great day!
KathEats says
haha oops!
Ashley @ My Food N Fitness Diaries says
Ahhh I LOVE Maddux’s hair in a little mohawk! What a cutie! Looks like you guys had a great summer weekend!
Mandy @ The Running Herbivore says
I am dying for the fruity oatmeal bake! For a vegan what would you replace the egg with?
KathEats says
You could try flax or chia eggs?
Bill Randall says
What are Chia eggs? I always try to include Chia seeds in my cooking because of the health benefits. I’d love another option!
KathEats says
If you soak a tablespoon of chia seeds in water it forms a gelled “egg” that you can use for baking
Laura says
I make vegan baked oatmeal all the time without any egg replacer. It works just fine!
Susan H @ The Food Allergy Chronicles says
I am drooling over all your delicious looking meals…homemade pizza, garden tomatoes, upside down fruit crisp, icecream, quiche…oh my! I just had my first pedi of the summer…love my pretty toes in a pinky red. I always love a touch of red! 🙂
Heather @ Fit Mama Real Food says
What a fun weekend! LOVE M’s mohawk. All of your food looks so delicious. So cool that your garden is doing so well. Hope you get more sleep like Friday night!
Chloe says
The pizza looks great. The crust looks home made. Do you have the recipe?
KathEats says
Yep, here it is!
Lauren @ The Highlands Life says
That pizza just looks ridiculous.
And that little onesie with the whales on the shirt! Oh so cute!
Georgia-Mae Morrison says
I should make that baked oatmeal. How long does it typically last? I was thinking I could make it and eat it for breakfast before work all week! It would be so fast, delicious, easy, and much less expensive than grabbing something on the run.
KathEats says
A couple of days in the fridge
Emily K. @ Leaf Parade says
That quiche looks great! And I’m loving Mazen’s new hair do 🙂

Kim says
Hi kath! Thanks for the great post! That pool looks amazing! Is that a public pool or swim club? I have a six month old and would love to have a place like that to play! Is it expensive ? Love the Mohawk by the way 🙂
KathEats says
A public pool : ) It’s $90 for the summer for a family of three and there are multiple pools you can go to with that pass
Sarah says
Love that baby mowhawk!
Paige @ Healthy Hits the Spot says
You pictures make me so happy!! So beautiful and full of life! Also, love your earrings in the picture of you and Maze! Where did you get them?
KathEats says
Thanks, they are from this shop at our city market http://www.etsy.com/shop/girlsdayout
Carly @ Snack Therapy says
Mazen’s such a little rockstar with that mohawk! I always see amazing things about Kohr Brothers, but I don’t think they exist here in California. Sadness…
Joelle @ on a pink typewriter says
Maze is too cute! And I love your nail polish.
Karen says
Lot’s of inspiring and delicious eats in this post, but the mere mention of garden fresh tomatoes has my mouth watering…so, so sweet this month! I’ve been popping grape tomatoes I bought at our farmer’s market like candy! Oh, and I love Maze’s hot weather ‘do…melting my heart!
Kristi says
Seriously jealous of that pool! Wow! We live in a beach town (still a 20min drive to the beach though) but babies and beach is quite the hassle! I’d love to have access to a pool where the chairs and umbrellas are ready to go!
I’ve noticed in a few pictures that Mazen’s lower legs look pretty tan compared to the rest of him and I thought I’d pass on a tip for the BOB (since lower legs are the only part sticking out of the awesome canopy) – I use one of our A+A blanets folded to size and clipped with clothespins to the red dangling strap on either side of the stroller. Maybe you do something similar but I haven’t noticed in any pictures so thought I’d pass that along.
KathEats says
I know! I put SPF 50 on him for our walks but we are out so much the sun is still making itself known. Do you clip the blanket to the carseat straps? Does it lie on his legs and make them hot?
Kristi says
Yes, we’ve been avoiding the beach for that reason! So hard to find a balance between outdoor fun and too much sun. Yes I think those red straps are the carseat straps. I use a solid white A+A and they are so guazey I don’t think it makes baby hot. If you’re willing to sacrifice one you could cut it to a smaller size and that would eliminate the fold. I clip it at the part of the strap that connects to the stroller so it’s more suspended than actually resting on baby. Play around with it! I do the same with our umbrella stroller but clip it to the stroller fabric directly.
KathEats says
I’ll have to see if he likes it. I bet he would just pull it off! I wonder if a damp one would actually keep him cool
Jessica says

Your weekends always look soooo fun!!!!
Who watches little Mazen during Adult Swim? I wish they would have Adult Swim at my pool. So fun for parents!
KathEats says
Oh he comes in with us!! Babies are allowed in parents’ arms : )
Danielle says
That is awesome!! I wish our public pool would allow that. Babies aren’t even allowed in the big pool, even with swimmie diapers, only the baby pool that is only a foot deep so it doesn’t keep them very cool.
Stephanie says
What a cutie pie! Do you mind sharing where you got Mazen’s pool hat?
KathEats says
This is it. Thanks to elastic, it actually stays on. And if we’re swimming, he leaves it on (amazing). It’s UV protective too.
Kim says
Love the mohawk! So adorable!! I rarely get a chance to make “weekend” breakfasts, but your fruit-topped baked banana oatmeal looks amazing. I’ll have to give it a try sometime when I’m actually home for a weekend morning meal!
Holland says
Do you happen to have a link to that baked oatmeal dish? Looks delish!
KathEats says
Yes it’s linked above in the post baked banana oatmeal

Great blog!

Ive been craving soft serve ice cream cones, yum! And I want to make that banana oatmeal bake this week, looks delicious topped with all that fruit!
Amanda @ veggiesndogs says
The pizza looks great! Do you make your own pizza dough? If so can you please share the recipe 🙂
KathEats says
Yep – it’s here.
Katie @ Talk Less, Say More says
That quiche looks delicious! And those green beans get me all excited for fresh beans from the garden (hopefully) SOON!
Jean says
Mazen’s mohawk is the just cutest thing ever! Always love reading about your happy family. 🙂
Katie says
Hi Kath- My husband is working in Charlottesville for the summer and we have been visiting on the weekends. Where is that pool and can you get a weekend or day pass?
KathEats says
It’s the Meade Park pool and it’s $5 per adult to go. Maybe I’ll see you there sometime!
Amy says
Got to beware of those “wild splashing kids” …ha ha, you’ll have one soon enough!
Your quiche is beautiful!!!
Chelsea @ Designs on Dinner says
Aww, I love Mazen’s hair! Just throw a black leather jacket on him, and he could be an extra in Grease
Kelly@KellyRunsforFood says
That all looks amazing. Of course I zeroed in on the pizza! I think I may be stealing that idea soon since we have a ton of tomatoes from the garden to use!
Karen D says
Okay, I am seriously freaking drooling over here. Your food this week looks SO good!
Two questions:
1. How do you cook your green beans? They look way more delicious than my boring beans. Do you saute them or add any sauce?
2. Am I reading your quiche recipe correct – you don’t include cheese? Is this to cut back on fat/calories because of the crust? Don’t you miss the cheese?
KathEats says
We usually sautee the beans in some water and then when they’re tender add a sauce – this was a mustardy herb sauce I believe.
This quiche had cheese! That other one didn’t. It just depends on what we have on hand. I don’t miss it if the ingredients are good.
Lee says
That little mohawk is the cutest thing.
Elisabeth says
Awwww! Love the Mohawk 😀
Donna says
Kath, just wanted to let you know that I had smoked sardines (Trader Joe’s brand) for lunch today, and it was delicious. I’ve always loved canned tuna, but this was even better. It didn’t even taste fishy! It was more liked smoked chicken. I mashed it up (surprise, no heads, no bones or skin to mess with), added a little mayo, some leftover mango salsa and curry powder. Ate it with Wheat Thins—-and LOVED it! Thanks so much for the video on it.
KathEats says
Yay!!
Monica says
Mazen is so adorable! And all your food looks amazing!
Christian Fitness Diva says
The Pizza looked DELISH!
The running joke in my house is that I could eat pizza every day I like it so much…so of course it is the one thing I really noticed in the post lol.
Oh and I feel you on “Adult Swim” once the kiddies get in the fool it’s all over 🙁
Lisa @bitesforbabies says
I need to get my hands on that book! Too cute 😉
Neil Butterfield says
Man that pizza looks awesome! I swear you should get into food advertising!! 🙂
Sue B. says
How did the baked banana oatmeal turn out without the bananas? Did you add more liquid? I get migraines from bananas so I am very interested in trying this recipe now!!!
KathEats says
It was slightly drier. I might add a bit more milk next time
Alyssa says
Love the summer photos!!
Amy says
Wish I could find some goat brie that I liked. The last time I bought it I didn’t think it was great. Love this post, btw!
