Hiya!!! I’m wrapping up a great weekend and have lots of photos to share 🙂
We kicked off the weekend with a Spring Break trip to ACAC Short Pump (that’s our gym for those of you who don’t know). The newer, fancier location is about 45 minutes from Charlottesville, and it’s worth the drive for the rooftop pool deck alone!
My three friends and I took the kiddos to the KidsZone there while we got in a workout and some hot tub time. Ever since our last visit, Mazen has been asking to go to “the big ACAC” so he was thrilled to go for a repeat visit with all his buddies!
Us moms did a quick 30 minutes of cardio because we were at the gym, after all.
But this location feels so spa-like with the fancy locker rooms and the roof. We donned our suits and hit the hot tub. It was a really chilly day, but the hot tub was perfecto!
Since there is a café and bar on the roof too, we of course got some wine. Before noon. #dontjudge #springbreak
We showered and then quickly purchased and scarfed down Whole Foods salads. Loved that curry tofu!
After lunch we took the kiddos to the Short Pump outdoor mall for a train ride! They LOVED it!
The train is such a clever marketing tool because moms must ride with the kids and the train takes you past many of the stores in the mall, tempting you to come back and buy All.The.Things! I need a return visit to the Athleta store, STAT!
On Friday night I stayed in and heated up these leftover meatballs and veggies from the freezer.
Saturday morning smoothies! Banana, peanut butter and strawberry heavy.
I spent most of Saturday working on my updated blog design! I worked with Liz on the new header, inspired by watercolor, rose gold and glimmer. Love how it turned out! The rest I did myself, including a new color scheme and some new graphics on the About page and others. There are a few more updates to come! I love tweaking the design about once a year depending on my moods and trends at the moment. I feel the black makes things look sharp! Hope you like it too!
Quick leftover sushi lunch while I worked!
On Saturday afternoon I ran to Whole Foods for groceries and all the CHEESE!
The cheese was to celebrate Sarah at her birthday party that night.

I kept my wine drinking to a minimum though because I had two intense soccer games on Sunday! PB & J toast and coffee started the day –
And then these were my snacks during the game. I didn’t touch the crackers, but ate the banana, trail mix and granola. Plus 2 bottles of Gatorade mix. I played in 2.5 hours worth of games, and we were totally pooped by the end!

I ended the weekend with some food prep and whipped up a bunch of meatballs and sweet potato fries to have this week.
Then I ate some for dinner with sautéed veggies. Still learning the whole “cooking for one” thing!

I adore your new design! The font is awesome, and the rose gold is so perfect for you. 🙂 You’re right that either black or white make it look sharp. Lovely food, and now I’m wanting more Super Toppers! I haven’t seen that flavor before. Maybe I’ll go have a looksee at Amazon…;-)

Curious about your cooking for one-does it not work to just cook as you would have previously then eat a bit at a time? Is it a matter of getting sick of the same thing before it’s gone or….? What’s to figure out, I guess I’m asking? (<–there's no way to make that not sound snotty, sorry!) I have a neighbor friend going through a similar season of life and figure you might have a nugget of wisdom that would help me relate/help her.

I just feel like cooking a big meal every night isn’t practical, so I’m trying to figure out ways to cook more efficiently so I don’t have to cook from scratch every night. So big batch of meatballs eaten 3 different ways for lunches and dinners. Trying not to get sick of it too! I’m sure I’ll figure it out in time : )

I’m a single mom whose son went off to college this year so I totally got what you were saying. It’s not so much the intellect of it (cook less if the obvious answer) it’s kind of more of breaking the habit of cooking more, leftovers not getting eaten as quickly, the freedom to cook or not cook based on your mood, do I want to eat a big batch of xyz every single night this week, plus it all just being different, etc. I get it. It takes time to readjust.

Yep, I am also separated and the getting used to only cooking for one instead of two and NOT getting sick of things while also taking advantage of not needing to cook as many nights a week is an interesting balance to find. I have found that cooking 2-3 times a week with enough servings to cover most dinners and lunches, leaving room for 2 dinners and 1 lunch/brunch out a week, is a great balance for me from a health, budget, and socializing perspective. If I really get sick of something before it’s gone or end up with more food than I need for the week, I throw a couple servings in the freezer for a few weeks.

Love the new blog design. The pink (I mean rose gold!) is really classy! So fun to keep it fresh and current. And even though it’s a transitional time in your life right now, I’ve noticed that you’re looking beautiful and looking and sounding happy and upbeat on the blog. Aren’t girlfriends the best!? Piggybacking off another comment here…might I suggest the book The Pleasures of Cooking for One by Judith Jones? She shares some good techniques for organizing small amounts into new meals, etc, that you may find helpful. It’s very practical and well written! I’m sure you could find it for your e-reader as well 🙂

While I don’t think Dana means any harm and is genuinely interested in Kath and Matt’s well being, her post is a little outrageous. Yes, Kath is a public figure, and she features her life on her blog. However, she has the right to keep her personal life private. Going through a separation/divorce is very draining, and I’m sure doing so publicly is even harder. Not to be rude, but quite frankly, it’s none of our business.
