Hi weekend warriors!! Staying warm? Thawing out? Maybe you just moved to San Diego and are basking in warm weather on a sailboat!? Wink wink Karen. We had a pretty low key weekend.
Well, Friday night was a little wild!
The boys when on a father-son date to Citizen Burger, and I joined some friends at Mono Loco for girls’ night.
Spice-a-rita!! It doesn’t have quite the same appeal as it does in the middle of the summer, but still tasty!
For my dinner I had a burrito bowl with crispy cod and shrimp.
We went out partying after that, and I stayed out way too late!! Fun times.
Saturday morning Matt went to work and Mazen and I enjoyed eggs, orange and toast before embarking on a massive furniture assembly project.
The end result will one day be THIS!
An organizer’s dream!!! It’s Home Decorators’ Martha Steward Living Apothecary Hutch + Open Storage Base. I am pumped for all those little cubbies! Here’s the hutch assembled. Imagine my excitement when I realized my vintage cheese box fit perfectly inside : ) The base is stuck in the mail, so I’ll be working on that in a few weeks. I’m hoping to put this in the basement and use it for arts + crafts and things plus files, obviously.

And then we took over them!
Before lunch I went on a run. It was so cold that my muscles froze and I was so stiff and sore when I got home. Give me 100* runs any day!
See – it really was a low key weekend: sweat pants and wet hair all day long!
A late lunch – sardines! I made a salad with greek yogurt, mustard, capers, jalapenos, pickles, carrots and green peppers all chopped together. Served with crackers and chips.
We played outside in 15 minute increments before it was too cold!
Saturday night we cracked this guy open –
And cooked the first of 3 Blue Apron meals I’m featuring in a few weeks : ) Thai Shrimp Curry!
It was delish and packed with flavor. Everyone agreed!
Sunday was full of chores, an indoor soccer game (we lost this time 🙁 ) and relaxing. Breakfast was pumpkin oats with crumbled oat berry muffin on top and peanut butter drizzle.
And post-soccer mac and cheese (the new Annie’s Grass-fed that they sent to me!) with some veggies mixed in. Hot sauce on top!

It’s on the menu as a burrito that you turn into a salad. It also has rice and beans and no tortilla chips or shell. ..so I don’t know! ?

Fun weekend! I am ALL about coffee porters. I had a chocolate coffee porter at dinner on Friday night and it hit the spot!

Wow! You accomplished so much. I would consider putting furniture together my workout but that’s just me. It looks gorgeous. We just put together a dresser this weekend it was tons of work but it felt good to finish.

That apothecary hutch is *amazing*!! I can’t wait to see how you dress it up! Also, playing with giant boxes is one of my favorite childhood memories. I’m sad to say that now I just see big boxes as inconveniently shaped things to be recycled but when you’re a kid they’re amazing 🙂

Haha I was probably 10 or so. My mom could tell it better! I cut doors and windows in a big cardboard box. It was fun!

Looks like a great weekend! I love Annie’s mac and cheese. So perfect to make for a quick lunch or dinner, especially when bulked up with veggies like you did.

I still haven’t found a sardine I can like, but you got me and my 2 kiddos totally hooked on tj’s smoked trout. We call it bacon fish. Yum!
I’m doing some consulting from home for my old workplace after being strictly sahm for 18 months, and keep thinking about you and your posts about making it all work as a wahm. If my contract gets extended beyond 1 month I’m definitely going to need some in home help because it’s hard to find a lot of time to work with a 1.5 and 3.5 yr old. Unfortunately I am in a pretty rural location and don’t have any great preschools close by. All in all though, I am LOVING part time working at home so far.
And wanted to say your 2015 notes to self totally inspired me. Working on my own now. Thanks!

Though it was good! Same as regular. ThiS was leftovers so the sauce was all soaked in.

We like to practice sweatpant (or pajama pants) weekends.
We ALSO like to practice pajama pants anytime we are at home.
I swear we all run to our bedrooms right when we get home just so we can change to our comfy clothes.
There is something that just screams comfort by wearing something with an elastic waist and a bra without underwire!

I did a week trial of Blue Apron and I loved the whole idea of it. But I actually love to shop and pick my own food and ingredients, so it just wasn’t for me. But I would highly recommend it for someone who is just starting to love to cook or doesn’t have time to research recipes on their own.
