The calm before the storm!! As of Friday at noon I had absolutely nothing on my weekend calendar until Sunday night! I got a lot of household stuff done, and went to 2 athletic conditioning classes. It was a nice weekend!
Friday night we met up with Karen and went to the Greek festival at the Greek church in town. They always have good food – and amazing pastries! Karen and I went two years ago when Mazen was just a tiny baby.
On then menu: Greek salad, pastichio, spanakopita, Greek-style green beans, and a roll. Glass of wine was extra!
We met up with some of Karen’s friends and shared this huge tray of pastries for dessert. My favorite are the “nests” as I call them, but their real name is kataifi.
Back at home we read stories and gave turtle kisses. Big boy bed!
Saturday morning I went to 8am athletic conditioning class, which kicked my butt. Literally – I felt like someone had! Afterwards was the perfect opportunity to try out ACAC’s overnight oats!
This was their apple spice flavor. I’ve also had their cranberry almond (a bite of a friend’s) and thought that one was a little better. This one was all chia and flax!! I’m not sure if there was actually apple in it – maybe apple sauce? But I could taste plenty of cinnamon and nutmeg!
Mazen and I played for the rest of the morning – trains, blocks and tea party – before Karen came to take him on a bus ride and out to lunch!
I had a really late lunch of a salmon burger (Whole Foods brand) with a Spinach Feta roll, salad with cheese and toasted almonds and grapes. Hot tea allthetime!
That afternoon while M was gone with Karen, I cleaned out our bathroom closet – so many hotel shampoos and beauty samples! FYI, BirchBox boxes make great storage boxes!

Then I went to Pottery Barn to pick up a few Thanksgiving supplies!
Saturday night we made a quiche for dinner. Here’s the recipe:
We are getting eggs from our neighbor and had an overflow! Matt made the crust extra thick : ) Inside we put spinach, red peppers and cheddar cheese, plus salt, 7 eggs and about half a cup of milk. Delicious!
Saturday night = We heart Portlandia – that is all!
Sunday morning we had family French toast!
And then hit the gym for athletic conditioning #2. All I have to say is that my legs are realllllly tired now!!
More quiche for lunch….
Sunday afternoon I got more ducks in a row and then watched the finale of Survivor Season 18 – Tocantins. 10 seasons down, ~16 to go!
We babysat our neighbor’s daughter on Sunday evening and had pasta with pesto for dinner.

Ohhh, I’m with Matt – I love a thick crust on a quiche (okay, on anything pie-shaped or related). Do all quiches deflate a little as they cool, or is it just mine?? They always look so pretty and fluffy when I take them out, and then when they cool a bit, they look less…enthusiastic.

Do you often find yourself buying premade(not cooked) food from whole foods and then cooking them at home? Do you have a post on how to save money whole still buying hewthy and organic? I can’t afford whole foods but it’s so delicious and such good quality.

I studied abroad in Greece for a semester 5 years ago (ah college!) and the food was my second favorite to the amazing temples/architecture. Kataifi was one of my all-time favorite pastries, and that’s a tough call because I lived right across the street from the cutest little pastry shop that had the most amazing desserts. I also loved that actual Greek salads are served with a slab of feta on top–no crumbled feta ever! I miss those days 🙂
