I’ve got a lot to share from this weekend, so fasten your seatbelts!
Friday night we went to the monthly social fitness class + happy hour at ACAC. I’m already looking forward to the next one! The evening starts with a themed workout and ends with an hour of drinks and snacks on the roof. Tonight’s class was Field Day themed!
We started with a 30 minute athletic conditioning class led by Chris. Jump, Matt, jump! HI GABY!
Then we competed in potato sack relays, scooter races, and sprint relays.
Followed by a classic water balloon toss
And lastly, a parachute experience!! I actually got to lead this with the mic because I have a good memory of 3rd grade and could remember all the fun things to do with a parachute.
Then we hit the rooftop for dinner – catered by Great Harvest!
We had assorted sandwiches, rolls with dips and spreads and cookies. And WINE of course!
Saturday morning my friend Alice convinced me that 12 hours was enough recovery time between workouts. So I glugged some coffee and ate a slice of Raspberry Swirl to fuel up before heading to 9am athletic conditioning.
And we skipped (not ran) back to the gym for a hard-core class!! More Chris. More good music. More fun. More sore legs.
Matt and I showered there before we went to the city market for groceries, and Mazen finally got up the courage to touch a fire truck.
Lunch back at home was a salad with leftover Cook Smarts olive chicken, heirloom tomato and a mini quesadilla made with a local corn tortilla and a slice of cheddar
I spent the afternoon developing a yummy coconut butter ball snack recipe with homemade Cheerios for a future post
And getting a pedi. Gratuitous toe shot!
I had a capp while I was out picking up cupcakes for our Sat night party!
We hosted a bunch of our employees over for an appreciation soirée later that evening. Unfortunately it rained. Fortunately it stopped raining long enough for M to learn how to play corn hole!
We munched on chips and dips
Caprese skewers
And grilled big juicy burgers.
Matt also made a salad that was a nice change from your typical side of grilled veggies. He tossed grilled squash, eggplant and corn in a sesame dressing. Loved it!
I did lots of chip eating, so I had half a burger and some sides
Also because I was saving room for THESE! Sweet Haus to the rescue.
Sunday we somehow ended up staying in bed until after 9! M woke up a little later and then brought some toys in with us while we woke up slowly. So nice!
For breakfast I made a smoothie from Tina’s new book, The Part Time Vegetarian (PTV) Smoothies and Juices. Lots of raspberries!! Served with apple toast and coffee.
We went on a family run/walk to the park mid-morning. I was planning to take the day off but we ended up walking 2 and running 2 miles.
Leftovers for lunch! Cook Smarts tuna orzo with cheese on top.
I went to visit my friend Meg in the hospital – she had baby Rose yesterday!! She was sooo cute!!
Then I made some more book recipes (these are all for a review post) – this time from Kylie’s new Single-Serving Cookie Cookbook. (It’s a BRILLIANT cookbook!) I’ll tell you all about this soon!
And I finalized my Coconut Cheerios Balls!
We wrapped up the weekend by cooking two leftover burgers and making a salad with avocado, tomato and leftover grilled veggies. I went bun-less because of all the taste-testing I’d already done!
Night night!

You look so cute (and thin) in that parachute picture! It’s like I can imagine exactly what you looked like in third grade – so proud that you knew all the parachute rules! What a fun weekend you had. 🙂

I have a random question that I hope you don’t mind answering. Charlottesville seems like such a cool little city and, going by your photos, reminds me a lot of Asheville. I’m just curious if C’ville is very gay friendly. My partner and I love finding new places to visit with our little girl and have even thought about moving to a smaller city. We just fear losing the culture offered to us now living in a larger city and we wouldn’t want our child to be the only one with two moms.
KathEats says
From my experience it’s pretty gay friendly. Our neighbors are actually two moms with a daughter : ) I can get their opinion if you’re seriously considering it. I have a few friends who are gay as well, and I haven’t heard them complain. But small towns are small, so I guess it’s hard to tell from afar.
Katie says
Thank you for your input! I don’t know how seriously we are considering a move right now. I know we would like to (and discuss it often) but Atlanta has been our home for so long and we do love it. We just feel like our quality of life would be so much better in a smaller town where we wouldn’t have the traffic (and smog!). I would love to be able to walk or bike places instead of driving but, even in the suburbs, it’s not really practical. Also, even visiting friends can be an hour commute and that limits socialization. Our daughter is only 21 months old and we are really thinking about her future quality of life in a big city. I can at least see a visit to C’ville in our near future. It seems to be such a cool place and we really do love VA! Thanks again!
Kylie @ immaeatthat says
That part about having a good memory of 3rd grade cracked me up:) All I remember from 3rd grade is learning cursive. And I’d seriously consider making a trip to Charlottesville just to try those Sweet Haus cupcakes…they always look to die for!
KathEats says
And timed multiplication table test!
Alex @ True Femme says
Wow what a packed weekend! I totally understand the sore leg feeling 🙂 I try to remind myself it’s a good thing because it means that I got in a good workout and did something good for my body (and it helps me get to my next workout faster). Homemade cheerios? Can’t wait to hear about those!
Allie @ Running on Peanut Butter says
What a fun looking weekend! I NEED to attend a fitness class like you did Friday. Just so cool! Those burgers looked phenom!
Elisabeth says
Looks like jam-packed, awesomely fun weekend! Your party burgers look delicious – how do you guys make yours (what meat/seasonings?)?
KathEats says
We used 85% grass-fed beef and Matt makes them with breadcrumbs mixed in and a special spice blend that I’m not sure of

Great post! Loved seeing how each day pieces together instead of your “lately” posts where it’s harder to see how everything flows throughout each day.
