We had a great weekend packed with friends both old and new!
Friday we stayed home, opened a bottle of wine and ate soup with Karen, who left for a month in San Diego on Saturday!
I spent the rest of the night prepping for a baby shower I hosted on Saturday morning!
Here is my gorgeous friend Meg, who will be the mom to baby Rose soon!
We had a rose theme for the shower, obviously, and my friend Jessica made these amazing cupcakes!
We also had tons of fruit, bacon and egg casserole.
Tomato, basil and white cheddar! Plus 18 eggs, a cup of milk and an hour at 350*.
Alice made her amazing crumble bars!!!!!!!!!!!!!!!! {They are these}
Lastly, we had a delicious cranberry punch with sherbet float
Those of us who like wine before noon spiked ours with some rosé wine!
Served in my grandmother’s antique champagne glass
Hours later, Matt, Mazen and I drove out to Blue Mountain Brewery where we met up with some blog reading friends – Tricia and her husband just moved to Cville from San Francisco and Meg and her husband were visiting from Maryland! Both have toddlers so there was tons of discuss. Meg’s TWINS were home with the grandparents ; )
The standard Blue Mountain flight was consumed : ) {FYI, those glasses are smaller than they look!}
We shared nachos
Filled up on salads
And looooooved on some of the best pizza in town the country!
We had an amazing Sunday! We spent the morning chilling on the porch with coffee while Mazen played games.
Then we ate toast and went on a run on the Monticello Trail. I can’t remember the last time I ran all the way up to the top without stopping (it’s 2 miles uphill). Before Mazen was born, that’s for sure! At least Matt was the one pushing 50lbs of stroller
We ate leftover pizza and tomato/avocado salads for lunch – plus watermelon!
And called it a great weekend!

That pizza looks so amazing!! And that shower is giving me so many ideas for my roommates engagement party!
Ali @ Peaches and Football says
Ha – Maze’s crocs are pretty stink’in cute. I love the rose theme for the shower. Is that what the name of her baby will be? I am always amazed how creative people are – I am definitely not. Heck, I have a wedding coming up in over a month with no theme at all. 🙂
KathEats says
Yes!
Alison @ Daily Moves and Grooves says
The baby shower looks so adorable! I love the idea of a sherbet float. All that pizza is sparking a craving for me now too 😉

Beautiful shower! Can you ask your friend Meg (the mama to be) where her dress is from? I LOVE that collar! I’m 28 weeks and something that amazing is unheard of for maternity clothes!
Maria says
Lovely from start to finish!
Kavi says
That looks like such a lovely shower! Makes me want to throw a brunch party soon!
Leah (goodnight cheese) says
What a wonderful looking shower, so nice of you to throw it! Though it seems your guests a camera-shy, haha.
Did you make the egg casserole, or was it brought by a guest?
Drooling over that pizza.
KathEats says
I made it!
Leah (goodnight cheese) says
Oh, it looks delish! Perfectly browned and you can see the herbs peeking through. Were all 18 eggs in that dish, or did you do two batches?
KathEats says
Thanks! All 18 were in there
Eileen says
Looks like a fun weekend! The name Rose makes my heart melt. <3 Best wishes to your friend.
Hannah @ CleanEatingVeggieGirl says
I would like to dive into those pizzas and that beer flight right about now! 😉
D says
Can you post the recipe for the egg casserole? How much cheese, milk, etc.
KathEats says
It was 18 eggs, about 1.5 cups cherry tomatoes, 2 tbsp fresh basil, 1 cup white cheddar, 1 cup whole milk, 1 tsp salt and pepper to taste. Grease your dish well with butter and cook at 350* for about an hour. I’m going to make it again and will do a formal recipe!
Gillian says
That pizza, those cupcakes! Yummy weekend.
Laura @ She Eats Well says
Looks like such a lovely shower – I love the Rose theme. And I absolutely love the punch with sherbet – I have never seen that and it is such a great idea!

This is so weird, but I’d say about half the time I read your posts, the number of comments are at 26! That number really is YOURS! ha!
Beautiful shower and a great looking weekend!
KathEats says
Haha love it!

What an elegant party – the rose cupcakes, the punch, the bouquet — everything looks so pretty! I was vegan for years before recently trying some local eggs, so I have to admit 18 eggs sounds like so many! Looks like your guests were well fed and I’m sure your friend appreciates all that you did for her.
Karen says
That rustic looking pizza is rekindling a long dormant love for a classic, cheesy thin crust — despite the fact that I’m a committed vegan 🙂 That creation is surely a sight to behold!
Heidi says
Crazy! I helped host a baby shower on Saturday and I was in charge of the drinks!! What did I do??? Sherbet punch!! My recipe was: lemonade, ginger ale, and rainbow sherbet! I got that recipe from my mom who would make it all the time for many baby showers since I was a kid.. She was called The Sherbet Punch Queen! It’s the best, and you can switch it up to your liking! Happy memories 🙂 congrats to your momma to be friend, with little Rose on the way… I’m partial to Rose since that’s my 7 year old daughters middle name <3
Happy week!
Kamado Jim says
Wow, that pizza looks AMAZING! Still waiting on my pizza stone to come in the mail, but I’ll be stoked if mine come out looking half that good!

Janine says
okay, random but I have an 18mo old son and have been debating the crocs 🙂 mostly for water/sand areas.. do you find it gives him blisters at all or would you suggest them? Thanks lady!! They are juuuust expensive enough that I don’t want to buy them to end up not using them at all 🙂
Janine
KathEats says
No blisters. They are amazing!
Kimberly says
For whatever it is worth, we love crocs for our kids. The best part is that when the kids are younger, they can put them on themselves. The other best part is that they are easy to keep clean (crocs, that is 🙂 ) and can go with just about anything (if you buy a pretty neutral color like navy or brown). I’ll buy sizes ahead if they are at a good price because at some point they’ll fit into them. Hope this helps!
Stefanie says
Problem with crocs…they are so bad for your feet!
KathEats says
How come?
Anne says
Gorgeous photos – certainly a picture tells a 1000 words. Love the one looking through the wine glass. I admire all the scrumptious looking food.
robin says
Love this blog:)
Lisa @bitesforbabies says
Can I just say I’m DROOLING over all those food pics! Looks like you put on a lovely shower…and of course, the food looked amazing! 😉
Katie says
Love the last picture of Mazen! My son used to have the exact same Crocs. I miss the days of little feet in little Crocs. Last week I bought my 7 year old size 4 1/2 wide tennis shoes and hiking boots and he told me yesterday that the shoes were feeling tight! Mazen is looking like such a big boy lately, he’s at such a fun age. I also had to mention that I love that toast picture with the one little drip of PB/nut butter.
Sandy says
The pizza looks delicious. Would you mind if I asked what adventure Karen is on in San Diego? I’m always looking for new places to spend time and explore now that we are retired.
KathEats says
She’s just enjoying one of her favorite places and getting away from east coast humidity!
