Seems like that’s all we’ve been doing – but luckily those are our favorite activities and my family’s idea of a great relaxing vacation.
After breakfast the husband and I followed through with our gym plans and checked out the fitness center at the club. After some time there, he and Andrew played tennis while I read on a lounge chair. We didn’t make it to the pool, as the idea of digging out the bathing suits and a change of clothes was too much work. We all came home for a 1:30pm lunch (after a nice round of much-needed showers).
I made a sandwich on Nature’s Own 12 Grain bread with some buffalo chicken, cheddar + swiss, tomato, banana peppers and mustard.
I only ended up eating half of this sandwich because I got full quickly from my other items.
And a spinach salad with balsamic and POM and some chips.
And my favorite lunch side –
I’m off to (hopefully) finish this book and then we’re planning to visit the Bald Head lighthouse as a family and climb to the top!

Just a quick question- I too get full quickly from eating veggies and such. When you can’t finish the main part of your meal (e.g., sandwich) do you usually end up eating it later? I find I get full fast from veggies but then my hunger returns within an hour or so and I usually just end up eating it later on. Just curious about your own experiences!

Yes, sometimes I do find myself extra hungry sooner if I have a big salad that leaves me full. Usually I would go ahead and eat the meal even if I am full to keep ensure I am kept satisfied longer, but since food is flowing here on vacation and I don’t need anything to “hold me over” as I would in class, I just decided if I do get hungry I’ll have one of my bars.

Sounds like a wonderful day! I wish my vacations were so active/relaxing. However, I usually go visit my parents and there’s really not much to do around there, though I did go on a nice walk with my mom and a (horrible FREEZING) walk by myself!
