We are alive! We just barely made it out of the DMV safely. Matt was almost sent home for lack of a correct format of proof of residency, but luckily the manager accepted it after I pulled up our lease agreement on my very, very smart phone! We also had a slight title issue with my car, but licenses and plates will arrive in the mail in 10 days.
Any guesses to what my new license plate reads!??
Now we have to get our cars inspected ASAP because evidently our North Carolina inspection stickers aren’t worth pennies anymore. Good thing we have alternative means of transport a.k.a. bicycles!
The DMV robbed us of 2 hours and 303 dollars. Not the best, but not the worst.
We arrived home at 12:30 for a leftover lovers lunch. [Virginia, is also, for lovers.]
Piles of mixed greens, collard greens, tofu + eggplant, yellow mater, quinoa and brie. I think that pretty much sums up our week!
Plus a few chips on the side.
I bit into this apple and you’ll never guess what came exploding out!!! Peanut butter!! It’s my lucky day!
Blog friend Madison sent me two jars of her homemade nut butter [After perusing her blog, it is clear she is quite a recipe diva!]. Today’s was a a quadruple nut butter made with peanuts, almonds, walnuts, and pecans. It was fabbbbbulous. Right on all of these accounts: Good runny consistency, crunchy bits texture, salty, peanuty, stick-to-the-roof-of-your mouthy.
Lots more to do today, but we’re hoping to get the weekend started with a bang tonight!!
Jessica @ How Sweet says
That picture of the apple and peanut butter is great!
And how great is it that a smartphone can come to the rescue?! Who would have thought?
Estela @ Weekly Bite says
Love the apple pic! If only that really happened!
Christine says
I bet your plate says
GR8 HVST
or KERF, but, naturally, everyone will say that.
When I get a house with a yard I will plant an apple tree that grows peanut butter apples. Haha!
Trish @IamSucceeding says
Great looking lunch!
homecookedem says
Just looking out for you Kath… maybe you should remove the hint for your license plate for safety reasons? Love you girl, want you to be safe!! 🙂
Kath says
I thought about this long and hard. What would be dangerous about sharing a license plate? (I’m honestly asking!)
Jasmine @ Eat Move Write says
I think she’s referring to possible stalking. The world is weird. Still. If you had a KERF shirt or a KERF bumper sticker or something, people would still know its you. I’m not sure a license plate is any more threatening than any other type of self promotion. Just my two cents.
Pam says
I agree that the world is weird… I don’t think sharing a license plate number on your blog is exactly safe! Just my two cents about being careful!
Marla says
Yeah, people can follow you or find out where you live….
sorry to be so scary about it all but I really think it is not a safe idea
especially for a woman. You never know who is reading on the worldwide web.
Safety first !(and fun after 😉
Emily G. says
I don’t think it’s completely unsafe. Obviously posting anything personal on the web isn’t safe. If someone really wants to get her, they will from things far less time consuming than a license plate. I’m not sure how RDs are, but most professions where you need a license are publicly listed somewhere. For instance, I’m an insurance agent…someone can easily look up my name in the database and know my address, phone number, and work number. Public records. People who read this obviously know she lives in Charlottesville and her name is Kath (or Katherine etc.) Younger and that she is a licensed RD. Psychos can easily look that up.
Marla says
Of course that’s true!
Maybe I am more of a worrier than others 😉
homecookedem says
I’m with you Marla, I’m a worrier too! 😉 Didn’t mean to come off as bossy, just a suggestion for your privacy, that’s all! 🙂
Emily G. says
LOL You didn’t come off bossy at all and I completely understand where you’re coming from..which is why I don’t post public info (I had a major stalking issue from a previous blog and had to shut it down). I just think there is so much public information about her that knowing a license plate number is kind of petty.
LOL I think I watch too much Law & Order and CSI.
Valerie @ City|Life|Eats says
I love the picture of the apple with the peanut butter. Awesome shot!
I live in Washington, DC and whenever I take the subway to Arlington or Alexandria, I see signs and posters that say “Virginia is for lovers” and for some reason they totally crack me up. I bet the DMV has plenty of those posters. LOL.
Laura @ Blogging Over Thyme says
Hehe, most likely KATHEATS. Those nut butters look awesome!
Holly @ couchpotatoathlete says
I think your license plate will read, hmmmm, KERF?
Smart phone for the win! I don’t know what I’d do without my blackberry sometimes.
Ella @ The Princess and the P says
I bet it says KERF26! 😉
Leianna says
I hated switching cars and licenses over from MN to IA, such a hassle and money waste! But it has to be done. Apples and nut butters = great fall snack!

Chelsea @ Strawberry Sweat says
Homemade nut butter! Just one of the many reasons why I want a food processor
Samantha @ Bikini Birthday says
Yowza.
The MTO here always seems to be busiest around the end and beginning of the month. We actually have kiosks in public places where you can renew your licence, plates, emissions test, etc… so it’s really convenient. no waiting!
Jessica@tastyandtrim says
I don’t know what I would do without my smart phone! It has saved me quite a few times by allowing me to pull things up from my email. That nut butter looks delicious 🙂
Hillary [Nutrition Nut on the Run] says

super jealous of the nut butters!
Heather says
I hate the DMV – it is never a pleasant or easy trip.
I hope you got a fun license plate – I love reading vanity plates while driving!
Stacey says
Ugh, I’m glad you made it out of there alive. And I’m going to guess and say that the new plate says “KathEats”?? Hope you have a good rest of the day!
barefootgirl (our first CSA) says
I’ll bet KERFRD as well 😉
Courtney @ Bread & Bokeh says
That salad is so gorgeous and fall like!!! My vote is for KERFRD too!!!
Jessica @ The Process of Healing says
Wow what a salad!!!!
Allison K says
I have always wanted vanity plates! But can’t ever figure out what to put on them. I compromised by getting specialty plates, from our Alma Mater-the extra money we pay each year goes to scholarships.
Laura says
I’m assuming you got KERF on your plate? THAT IS AMAZING!!!!! I soooo want a personlised one when i am older too!
woow…for a second there i actually beleived the peanut butter came out of the apple! shhhhh i’m not gullable! xx
Caitlin (EatFeats) says
Oh my gosh, a peanut butter exploding apple…that’s the dream. That nut butter from Madison looks so delicious, and the combination of different nuts sounds so fun!
Sarah (Running to Slow Things Down) says
KERF?? That would be my first guess. 😀
The homemade nut butters must be so fun to eat. 😀
Dorry says
That homemade nut butter sounds perfect! What a nice treat.
Heather says
my guess is KERF of course!
I hate the dmv!
Erika @ Food, Fitness, & Fun says
Wow – mixed nut butters?! Can you believe I have never heard of them! Sounds good, maybe I’ll have to take the time to make ’em myself…
Stacey says
Why would you share your license plate? I don’t get it.
Amber K says
I LOVE that I can drive out to a nearby city’s DMV. The wait at the one by my house is ALWAYS about two hours. The wait at the other one? The LONGEST it has ever taken is 15 minutes.
Stacey (The Habit of Healthy) says
Homemade nut butter, what a treat! It sounds like you are finding your new smart phone very handy.
Maria @ Kale and Cupcakes says
Hey Kath! The husband and I will likely be in C-ville on Sunday for the first time – we’ll only be there for a hot minute. Suggestions for a couple of places that we must see/eat at while there???
Kath says
Oh fun!! I’d recommend Beer Run (for beer 🙂 ), Eppie’s for lunch, and Arch’s on The Corner for the gooey brownie!
Jillian says
Am I the only one who got nervous for a second about what came out of her apple?? Maybe I’ve just had a bad experience. lol
I’ve never thought of making my own nut butter… I should look into that!
erica says
ugh, the DMV. say no more! i’m getting a headache just thinking about DMVs…..but i’m gonna have to go w/everyone else and guess your plates read: KERF!
Michelle @ Give Me the Almond Butter says
I’m guessing with everyone else saying KERF or KERFRD. Something like that.
Nicole of Raspberry Stethoscope says
I’m gonna guess “KERF 26”
HefiA says

Kate says
That salad looks gooood especially the little chunks of cheese! Now I’m hungry. Thanks. Haha 🙂
Mary @ Bites and Bliss says
I’m going to guess the plate says “KERF”, “KATHEAT” or something along those lines. Unless you’re just messing with us and it ends up being a generic plate 😉
Camille says
I’m glad you survived the DMV!
My guess is: KathEat
Sarah K. @ The Pajama Chef says
that pb apple looks FAB! if only apples came that way….
laine @ beets, butter and mountaintops says
I bet you got 3BEARS.
And I agree it’s fine to put your license plate. That’s not a number anyone can do anything with and honestly if someone wanted to find you they can just go into the Great Harvest store you are opening. Or stalk the hot yoga classes in town.
I think internet safety is important, but also overrated sometimes. I have a website for my job that lists my office address. So, anyone wanting to find me can just come there.
Cara says
Mmmm…nut butters.
I just checked out Madison’s recipe and may give it a go.
I am not sure how successful it will be without a food processor, I only have a blender.
We will see.
Janna (Janna's Keeping it Real) says
My guess is KERF RD
Sandy says
You are going to love fall and apple orchards around Charlottesville. My son almost was arrested at the Charlottesville DMV when he went to get a VA license on his 21st birthday. He had a copy of his social security card instead of the real thing. Apparently that is against the law and they called the police who not only questioned him they called to question me about where I had made the copy and what kind of machine!
Leanna says
Oh that dinner looks AMAZING!
Hannah says
While I must say that apple looks a little bit like its pooping (yep, I’m 23… so what? :P), the nut butters sound glorious. You and your generous friends!!
Allison L. says
When I first looked at the picture, your apple looked like it was throwing up. Gross, yes. But mostly just funny. 🙂
Grace says
Oh I feel you on the DMV. We just got our licenses, but we haven’t yet done the title/license plate/car things yet. Our first Virginia DMV experience a few weeks ago took us about 3.5 hours. Ugh, the trauma.
