The weather has sure showed me who’s boss lately – I’m feeling a little under it!
Not sick, under the weather, just a bit blah and tired – from lack of sleep.
The interviews went great this morning, but boy was it fast-paced to do 6 in a row like that! Lots of great candidates!
When I was finished, the sun had come out, so I decided to go outdoors for a breather. I didn’t have the energy for a run, so I just walked. Took my audiobook (Water For Elephants) with me. It was a lovely walk!!
Home for a late lunch –
CHEESE ‘n’ JAM!!!!!!!!! My favorite sandwich ever. I don’t like it melted or grilled cheese style. Just nice and chewy! The sharper the cheddar, the better!
On the side –
Salad with romaine and a big carrot, dressed in olive oil, balsamic and lavender salt and topped with brown rice crispies, walnuts and avocado. All amazing toppings!!
Sparkles make the day shine
I’ve got a few more calls to make for the biz. I’m kind of scared we’re going to use up our cell phone minutes this month!!!
You know what I love: cleaning up the kitchen after lunch and knowing it’s the last time I’ll do it today. We’re going out to dinner!!
Two nights of great quick healthy homemade dinners = one night off.
Freya (Brit Chick Runs) says
Wow, I didn’t realise you had so many people to interview!
Walnuts + avocado = awesome. I hardly ever have avocados in stock, but last time I did, I had that same mix. To die for!
I hope you feel a bit better this afternoon 🙂
Amy says
Is that salad in a Salsabol?
KathEats says
Yes!!
Annette @ EnjoyYourHealthyLife says
Glad the calls went so great! Feel better.
P.s. huge salads at lunch are the BEST thing ever! Off to go eat mine 🙂
Holly @ The Runny Egg says
That salad looks so good — I love how it is just bursting out of that bowl!
Valerie @ City|Life|Eats says
that salad looks awesome 🙂 and yay for a night off from cooking!
Alli says
Cheese and jam sandwidh…what a great idea!!
Cait @ Beyond Bananas says
Audio Books.. never thought of walking with them before.. good thinking!
Alli says
Oops..I meant sandwich with a ‘c’!
Heather @ Get Healthy With Heather says
Hope you find some awesome candidates! Interviewing can be so much work.
Don’t let that weather hold you down 🙂
janetha @ meals & moves says
I love the combo of salty cheese and sweet jam! Yum. Hope you get over the weather soon.
Jenny @ Fitness Health and Food says
ohh phone interviews, I hope you were able to get a good sense of the applicants over the phone I know that can be hard.
Sorry you’re feeling blah I definitely had that for a few days last week. I think the jam and cheddar sandwich, walk, and dinner out should get you right as rain! 🙂
Have fun!
Averie (LoveVeggiesAndYoga) says
Enjoy your night out to dinner and hope you’re feeling better by then. I agree, rushing around, lack of sleep, it all takes its toll.
I used to love cheese and jam sammies when I was a kid. I also used to put syrup on my eggs growing up. lol
🙂
Ash @ Good Taste Healthy Me says
I love cheese. I love jam. Together? I’m skeptical. But worth a shot!
Allie says
You should Skype your interview candidates! No phone bills, plus you get to see what they look like
KathEats says
I thought about that but I’ve never skyped! Is it easy?!
But also, then they could see that I haven’t showered!
Caitie says
You can also call them from your skype to their phone. Its just like a normal phone conversation. No video chatting! My parents do it occasionally to me and the only difference is that their phone number shows up as 0000123456!
KathEats says
I just remembered why I don’t Skype: my desktop doesn’t have a mic! But my laptop does..
Erin says
You can get ear phone for Skype that have a mic in them. We are stationed on Okinawa and used them at the USO when we first got here and didn’t have a house yet! Skype is super easy…our whole family loves it…even both grandmas!!
heather @ girlyeverafter says
BOO for feeling under the weather, hope you feel better soon.
I’m a huge fan of making a huge meal and splitting it up for lunch and dinner so I don’t have to worry about the kitchen later. Cleaning the kitchen is a major thumbs down.
andrea @ chocolateandoranges says
I’ve now tried cheese & jam and egg & jam sandwiches thanks to you – I would have never guessed I’d like either but I really do, glad I got pushed out of my comfort zone! 🙂
Katie @ running4cupcakes says
OMG – that sandwich looks awesome. Love the side view of the cut bread showing all the seeds and nuts. 🙂
Morgan @ moments of mmm says
I have never tried the cheese and jam thing! I need to make it a necessity after seeing this yummy looking sammie!
What kind of fruit jam do you prefer with the cheddar?
KathEats says
Raspberry!! Particularly, Great Harvest Raspberry!
Morgan @ moments of mmm says
It’s officially on the grocery list!
I saw a Red Jalapeno Jam at GH yesterday. Have you given that a shot? I don’t think I would ever be brave enough.
KathEats says
I haven’t tried that one, but I’ve tried similar and they rock!
lynn @ the actor's diet says
i love cheese n jam too – unmelted. but without jam, melt baby melt!
natalie (the sweets life) says
Oooh we went out to dinner last night and it was GLORIOUS to have a break from cleaning the kitchen! 🙂
Glad you have some good candidates, I love interviewing people!
Estela @ Weekly Bite says
I need to try the cheese & jam asap!!!
Angie @ Musings of a Violet Monkey says
I think I’m taking a night off from cooking as well, T just doesn’t know he will be running out to Chipotle for take-out, yet. 😉
I have some outside work that I need to tackle in and around my gardens when I get home from work (at 6:30pm). I won’t much feel like cooking after that, tonight!
I love cheese ‘n jam sandwiches, too! Sharp is the ONLY way to go.
~
Abby says
Cheese and jam…I need to hop on this bandwagon. lol.
Nacho Lindsay says
Blerg. Nacho Lindsay feels your pain. If spring doesn’t show up soon, I am going to crack some skulls.
Josie @ Skinny Way Of Life says
I agree there’s nothing better than a cheddar and jam sandwich on chewy bread, it has to be chewy!!! yuuum!
Brittany (A Healthy Slice of Life) says
mmm… cheese and jam on good bread = delish!!
Mary @ Bites and Bliss says
I’ve never had cheese and jam before! Actually that sounds really good. I love jam on just about anything, so I don’t see why cheese would be any different!
Becca says
What kind of GH bread is that? It looks to be full of seeds… yum.
I don’t eat cheese anymore, but that combo sounds mighty good. I used to like mozzarella cheese and cranberry dressing (the kind leftover from Thanksgiving or Xmas meals) sandwiches waaayyyy back when.
KathEats says
Dakota!
Amanda (The Nutritionist Reviews) says
Wow that’s a lot of interviews! Good luck. Hope you found some great people.
Emily@SavoryandSavage says
Doing phone interviews is tough – Grats on getting them done.
I agree – the sharper the cheddar the better 🙂
Candy (Healthy in Candy Land) says
Brown rice krispies on a salad–genius idea! Especially for those of us unable to eat wheat/croutons and desperately miss a little extra crunch. I’m going to try it for lunch today!
Sarena (The Non-Dairy Queen) says
Sorry your feeling under the weather. That lunch look perfect for showing the weather who’s boss! Have fun tonight!
Jess (Sweet Potato) says
Cheese and Jam! Simple and perfect!
J3nn (Jenn's Menu and Lifestyle Blog) says
I had sparles in my water today, too. <3 seltzer
Cheese + jam = awesome. And yes, the sharper the cheddar, the better!!! I was thinking that parmesan and fruit spread would taste amazing, too.
Hilary says
I’ve never had a cheese and jam sandwich – I’ve never thought of it. And I am so excited to try it – I bet that it is better with sharper cheddar. And on a wonderful, nutty bread… Yum!
Feel better Kath. I understand what you mean by feeling “under the weather.” We’ve had record rains here (in the Pacific Northwest) and everyone seems to be just a little (or a lot) blah lately.
Chelsea @ One Healthy Munchkin says
Sorry you’re feeling crummy today! I’m feeling a bit foggy from a lack of sleep too. Fresh air always helps though! 😀
Lauren says
Kath – I thought I remembered seeing a millet and chicken sausage dish on your website, but I searched through and was unable to find one. Was this your site I saw it on or another one?
KathEats says
We had chicken sausage with brown rice just a few days ago?
Letitia says
April 13th the Get out post!! I remembered thinking that looked good and knew it wasn’t that long ago so I went to the archives and found it. At least that is what I think you were looking for.
Lauren says
Yes you are right!!!! Thanks Letitia!
VeggieGirl says
Hope you feel 100% better soon!
Joanna says
Hmmmm…I ‘m on a major sandwich kick right now and I happen to be out of PB but do have jelly and cheddar. I am going to try strange sandwich idea! Question: what kind of jam? It looks like raspberry?
Random, unsolicited sandwich suggestion: Rosemary + cheddar is the best flavor combo ever and I’m obsessed with working it into sandwiches. My fav is smoked turkey breast, cheddar, apple slices and rosemary. Use toasted Ezekial Bread, of course, and drizzle it with olive oil. Amazing!
KathEats says
Yep- rasp! I love everything Rosemary!
Kate (What Kate is Cooking) says
Jam and cheese are the best together!!
Natalia - a side of simple says
You always remind me how much I do love sharp cheddar and jam sanwiches 🙂 I’m a pb and jelly girl at heart but I do like to give the rest of the family some love every now and again.
Little Bookworm says
Hope you feel soon Kath! Good luck with all the phone calls!
chelsey @ clean eating chelsey says

Hope ya feel better Kath!
sarah says
Hurry and get a new cell phone plan.
faith says
yea for someone else doing our dishes tonight! where are the boys, I’m hungry!
KathEats says
Haha – just texted you the same question! Haven’t heard from Kanz all day!
kaila @ healthyhelper blog! says
I love jam on sanwiches…especially savory ones! Have you ever tried egg, jam, and laughing cow swiss on a corn tortilla?!?! It’s an amazing combo!
Melissa @ Journey to Marvelous says
Cheese and jam…why haven’t I thought of that? I’ve eaten fruit compote with brie but not with cheddar in a sandwich. Must try this ASAP!
Katelyn @ Chef Katelyn says
Margarine + jam used to be my fave combo when I was a kid! Cheese sounds even better, I wonder how Daiya would taste? Beautiful sunshine….and that salad!! 🙂
AShley says
I agree!! The sharper the better! Enjoy your night off…I totally feel ya on that! I’m not opening a bakery but still crazy busy over here. 🙂
Christine (The Raw Project) says
Busy day, but lunch looks great! Love the fun dish colors, very spring!
Heather @ Health, Happiness, and Hope says
Same here with the weather – can’t wait till it turns around for the better! I must try a cheese and jam sandwich. They always look SO good when you have them!
Jack O'Brien says
I am SO jealous of your ability to just hop on your bike or walk to downtown for dinner with your hubby! I’m miles away from ANYTHING, it’d be a complete marathon for me if I wanted to do anything like that 🙁 Aka goal in life is to live somewhere like Charlottesville!
How bad was your rain last night? It was so bad up here in Central NY that it clogged up the highways and literally FLOODED them OVER the cars!!
staceyhealthylife says
I’m glad you had some good candidates. It can be so hard to find good hard workers who understand what excellent customer service is. I run a coffee shop so I totally understand.
Molly says
This weather has made me so tired, too! During my appointments, I’ve yawned more than talked with patients.
Paige @Running Around Normal says
Aw feel better, Kath! Hope you get some good sleep tonight (and me too!!)
Lorie says
Kath-
I need to try that cheese and jam sandwich-it always looks intriguing! Have you ever tried an egg and peanut butter sandwich? Spread peanut butter on one or two sides, and then make an egg-like patty (whisk the eggs and then pour into a pan), almost like an omelet, but smaller to fit the bread. I’m not sure if it would work with a runny-style egg?! The peanut butter gets all warm and runny when you add the hot egg….Yum! I definitely encourage you to try it 🙂
Lorie says
(spread the PB on the bread 🙂 )
KathEats says
That doesn’t sound good, but I sure bet it is!!
Kat @ Cupcake Kat says
I tried cheese and jam sandwiches because you mention it so much. Its actually really good! I like adding jam to lots of sandwiches now
Hannah says
I read Water for Elephants while standing in line at the Uffizi Gallery for three hours. Love that book!
Khushboo says
Love cheese + jam sandwiches! If anyone doubts, one word: CHEESECAKE!!
Tasha @ Voracious says
This is my kind of lunch! A sandwich and a salad – perfection. And what a salad, it is overflowing with deliciousness. But I’ve never tried a jam and cheese sandwich, looks good, though!
Marjie says
mmmmm brown rice krispies on a salad, I must try this tonight. I read this as I was eating my salad with craisins and raisins….I love to say that!! But some would have been over the top if it was topped with the brown rice krispies-thanks for the idea
Kathleen @ KatsHealthCorner says
I’ve never had Cheese with Jam before. It sounds AWESOME! 😀
michelle says
Cheese and jam, huh? Huh, interesting, kind of want to try it now!
Katie says
That looks so delicious! What kind of bread do you use? I keep seeing it appear in a lot of your post, and it always looks so delicious!
KathEats says
Great Harvest Dakota!
