Birthday Buttercream Bites!
The cupcakes cake out nicely! My icing kind of melted on me because i let it get too warm 🙁 But they survived, and it tastes awesome and it hardened nicely in the fridge after icing them. I topped them with some cacao nibs and walnuts for visual pleasure and a little nutrition 😉
I used some leftover batter to make an individual cake for the birthday girl!
After frosting, Matt and I ran a few errands around town and then met Justin + Amanda for lunch at Dean + Deluca at 2PM.
I had a few pita chip + pretzel samples!
I ordered a salad with goat cheese, garbanzos, cucs, sprouts, carrots, olives, sun-dried tomatoes and broccoli. Really I just wanted goat cheese!!
Sadly about half way through I discovered that the sprouts and mixed greens were WELL past their prime…
I couldn’t finish it so I took it back and sweetly asked if they’d prepare me a new salad with different lettuce. Kudos for D+D for nicely giving me a new salad – with much of the same. Since I’d eaten all the toppings off my old one, I’m saving this one for later as I had intended to do with my leftovers from the first.
Matt Panini was quite good!
I have no been able to quench my thirst today!!! I’m on water bottle #4 I think…
After lunch Amanda and I went to get pedicures!! I didn’t get a single pedi all summer (I did my own nails) and decided I’d treat myself for my birthday. Well the birthday came and went and I never had time so I asked Amanda if she wanted to join me and she agreed.
It was fabulously awesome….
While we pampered, the boys imbibed. Typical.
Had to share this hilarious furry spider at the bar! So cute.
At 5:30 we got dressed up and took the bears out Trick Or Treating
Beaker wears this shirt year round, so he was SUPER excited!!
My costume was…
Goldilocks!
Three Bears in tow.
Matt went as BREAD. Bob’s Red Mill + all brown. How appropriate.
Caitlin + Jason were sporting some hilarious wigs!
And little Kona went as a rooster!
They had a delicious [and healthy!!] spread of foods to eat
Caitlin made her grandmother’s cheese balls. SO GOOD!
Parsley, Pecan + Walnut Flavors with basically pimento cheese minus the pimentos in the middle.
Recipe just for you guys!
Caitlin’s Grandma’s Cheese Balls
- 8 oz softened cream cheese (any level of fat you like)
- 4 cups (16oz) shredded cheddar room temp. (low-fat or reg.)
- 2 tbsp milk (anything from skim to whole)
- 2 tbsp Worcestershire
- [KERF would add pimentos! And perhaps some lemon!?]
Mix ingredients together. Divide into thirds. Form into balls. Roll in herbs or crushed nuts. [Blue cheese can be added to one ball.] Refrige. Let stand 15 mins before serving.

I had a formal plate of food, plus a handful of pita chips, cheese and kashi crackers hand-to-mouth
Only one half pint of pumpkin ale. I was the designated driver and also just wasn’t feelin’ alcohol tonight.
Churton, on the other hand, got a little sloshed! (It’s OK, he’s 22)

The Birthday Buttercream Bites were AWESOME!!! The cake part was really really good. Very flavorful and moist. If anything a little too moist – they were weeping. I might add a little less oil next time, but I would definitely recommend these. [Recipe here.] The frosting tasted amazing, although it was weeping too as the butter melted at room temp. And the walnuts + cacao nibs made the perfect topping to go with pumpkin.
I had 2 – plus one more later on! I’d much rather have 3 mini cupcakes than 1 big one 🙂

I’ve had some eating issues in the past, and I especially admire the way you how you talk about your body when you’re feeling not-so-good about it. When I’m feeling like that, I tend to become upset and feel as though what I eat is not in my control, as though food is some larger-than-liife demon. Your rational, empowered approach to healthy eating and to your body makes you an amazing role model for me and for girls everywhere.
By the way, you also look AMAZING. While you know best when you have a couple pounds to lose, I really hope you know how beautiful you are 🙂

I realized that I ate pumpkin on Halloween, too, without even planning for it- I just went out for Afghan food and it was on the menu and sounded AWESOME (and it was!). I think you would love Afghan food- lots of awesome orange vegetables and yogurt sauces!
