Morning!!!
We’re so late because we went RUNNING. First thing to get it all done because we have a very busy day. Of course I didn’t want to go when I woke up. But as usual, Matt suggested we go. I mentally decided to do the shorter route. We went. Ran 4.8 miles. And now I’m high on endorphins!!!
Wheeeee!
And to top it off, breakfast was fabulous!
While I showered, Matt made whipped banana oatmeal. You know, I am not the oatmeal master. HE IS. I am too lazy to stand by the pot and actually whip the oats. I’m usually off preparing for the photoshoot or getting out toppings. But Matt patiently stirs the oats and they turn out SO creamy and fluffy!
Today’s toppings included a Brazil Nut butter by Futters. I have had this for YEARS!! (I believe it was a gift from VeggieGirl!) In the past, I haven’t loved the plain nut butters as much as the super fancy Nuttzo + Naturally Nutty flavored ones. So this guy sat in my stash. But now my stash is low!
And you know what I did? I stirred in about a tsp each of salt and sugar and now it is SO good!! Like an almond cookie (yes almond even though it’s brazil nut!)
Other toppings included Rosie’s Best chocolate granola, Lauren Espresso Maple Salty Pecans and butterscotch chips!!!!!!!!! Butterchips are one of my very favorite oatmeal toppings. They are anything but healthy though, so I only buy them when I have baking to do. And I have baking to do! Then I get to use the extras on my oats : )
Matt and I are working hard on bakery things these days – loan, contractors, layouts. And we’re taking Karen to an appt. this morning. Tonight we have Holiday Party #3!
Signed,
Cheerful in Charlottesville

butterscotch chips in oats = genius. this looks like the best bowl of oats i could dream of!
Lisa Fine says
I LOVE the idea of adding butterscotch chips to oatmeal. They’re so delicious – but I’m with you, I only purchase them for a special baking treat, which doesn’t happen much.
Anybody know of butterscotch chips that are made without artificial colors? Yet another reason I rarely buy them.
Michele @ Healthy Cultivations says
Oh wow! Brazilnut butter sounds really good. I love Brazilnuts but have never even seen the butter. Glad you had a great run!
Stacy @ Every Little Thing says
We have butterscotch chips in our pantry, so maybe I’ll pull them out!
Have a fun/busy day!

Nice job getting out of bed for the run! My morning was similar, I didn’t want to workout so I could keep sleeping, but the husband pulled me out of bed and I am so happy he did! I had a great workout in the gym! : )
Angela @ Eat Spin Run Repeat says
What a delicious bowl! I love butterscotch chips too – actually, all things butterscotch. Werthers Originals are my weakness. Have a fantastic day! 🙂

I love VeggieGirl…she is an absolutely sweetheart and amazing friend. I am glad you are enjoying the nut butter.
And what a tag team…you do the photoshoot, your hubs whips oats. Wow. My husband and I have been married 10 years and he has never cooked for me. Ever. I gave birth and 4 hrs later…was at home cooking. Enjoy the whipped oats 🙂
Ann @ Day by Day says
Yum, brazil nut butter sounds so good. I love trying all the different nut butters. I made some pistachio and cashew butters that both turned out really well!

You can’t stand in front of your oats to whip them because woman are multi taskers and men will do one thing at a time!:) Matt did a good job because your oats look delicious! I will be in the C-Ville on Saturday can’t wait!
Jessie -- TheMessieKitchen.com says
I’ve never been a huge butterscotch person but your oats inspired me the past few months and I am a huge convert. From holiday baking we have toffee bits, chocolate chips, mint chocolate chips, white chocolate chips and butterscotch chips. I’m in trouble…in the best way
Estela @ Weekly Bite says
I’d love to go for a nice long run right now. Too bad I’m off running right now.
Love the butterscotch 🙂
Gloria says
Really? Your hubby would rather go RUNNINg than snuggle up to you and sleep in?! Errrr…. right.
Matt says
Sorry you can’t understand how much we enjoy running together!
Kori says
I find that doing anything mutually enjoyable together is JUST as fun and beneficial to a couple as cuddling. Matt, you and Kath seem extremely happy together and have many things in common, and that is something to be proud of. 🙂 Enjoy your day!
VeggieGirl says
Yay, thanks for the shout out!! Enjoy the nut butter 🙂
Dana says

Good for you for getting your run on first thing! I debated that…then decided baking cookies and brownies first would give me motivation later..right? Haha. Have a great day, Kath!

Ohhh butterscotch in oats is SO amazing. But you’re right..they’re pure unhealthiness. I wish there was some way to make them healthier, but oh well! Treats are treats. 😛

Brazil nut butter, who woulda thunk that one up. I need butterscotch chips ASAP!! Everytime I see them on your oats I crave them. Have fun with your holiday parties!! And good luck on the bakery business!!

I think exercising with a hubby is nice… but on a cold AM, I thank Gosh for the times my hubby has snuggled up against me. Nice to know he loves my body/warmth.

Ah, Brazil nut butter! I think my favorite nuts are Brazil nuts, just a month ago it dawned on my that “hey that could be a nut butter!” but I wasn’t sure cause they aren’t SUPER popular (except around Christmas) and I did some research on Amazon and saw it but wasn’t sure if it would be good. Well I’m glad I saw your post today and you like it 🙂 with salt and sugar! Sounds good for me! Thanks and Merry Christmas 😀
Jil @ Big, City, Lil Kitchen says

Have you ever tried adding butterscotch extract? Buttery deliciousness without the cals! 🙂
That being said, Reeses PB chips are a tasty addition too.
Jasmine @ Eat Move Write says
My husband is deathly (DEATHLY) allergic to brazil nuts. You would think that wouldn’t then be a joke for us, but it is. I point out every brazil nut product I see and joke about life insurance. (We’re weird, what can i say?). I cannot wait to tell him about your brazil nut butter! :p
Dee says
I love butterscotch chips on oatmeal. It’s the perfect treat!

When you say he whips the oats, he is just stirring them constantly or does he use like an immersion blender or something? When I get back to eating oatmeal (I love it but it’s not allowed at the moment) I def. plan on stealing many of your recipes 😉 I always want to dive in when I see a pic! So yummy and filling!!
Kath says
Just stirring constantly – with a little vigor!
chelsey @ clean eating chelsey says
I am the oat maker around here – whipping them doesn’t take THAT long! 🙂
Amelia (Eating Made Easy) says
I never would have thought of butterscotch chips in oatmeal, but I can only imagine how divine they are when they melt right into it! Can’t wait to try. If it’s just a sprinkling of them, it’s totally justifiable 🙂
Justeen @ Blissful Baking says
i’m always so envious of your delicious-looking bowls of oatmeal!! mmmm!
Erin @ Big Girl Feats says
That breakfast looks sooo yummy. I had the same running conundrum yesterday. I was super busy and didn’t want to go but I convinced myself I would feel good afterwards and I did. I’m trying to get into the morning exercise habit before I go back to work again in January. Glad you got to go!
Katie says
