I got a little spoon heavy with the pumpkin this morning in my Kodiak cakes – I think the amount of pumpkin exceeded the amount of pancake mix! They definitely did not turn out as good. Too mushy and not enough doughiness!
But of course there was absolutely nothing that wasn’t delicious about this breakfast! Topped with a tiny bit of pumpkin spread, sunflower butter, coconut, chia seeds and a pan-seared banana.
Mug shot!! We had some mugs custom made by local potter John of Acorn Pottery. They are so pretty with their two tones! I smuggled one home from the bakery 🙂
Also got 9 hours of sleep last night. Now I’m feeling weird! Too much, too little – just give me 8 and I’m happy.
Have a great one!!
Claire @ Live and Love to Eat says
That mug is gorgeous! My 5.5 hrs doesn’t have me feeling right, either – at least it’s Friday!
Angela @ Eat Spin Run Repeat says
I think the Great Harvest mugs look great! I’m excited to get a full 8 hours of sleep each night this weekend. That’s the ideal amount for me too!
robin says
you eat alot of coconut, or it seems to me like you do. Is there health benefits to it and the oil?
Cait's Plate says
I’m making pumpkin pancakes as we speak!! Only using GH Cville mix as a base 🙂 I CANNOT WAIT to eat them!
Also? I adore that GH mug.

Ashley @ My Food 'N' Fitness Diaries says
I love those mugs! They are hefty and stout, which I love in a mug. I’m definitely not dainty when it comes to my coffee mugs. 🙂
Krissy @ Shiawase Life says
Love the mug! 🙂
Happy Friday, kath!
Laura Jane @ Recovering Chocoholic says
Pumpkin pancakes look tasty. I have a half used can of pumpkin that I need to use up. Wow, 9 hours of sleep sounds great. Ideally, I would get 8.5 hours, but I rarely have enough time to do that.
Mom says
Love the mug!
The Healthy Hipster says
Question: when you pan sear your banana do you add anything? Cooking spray, butter, coconut oil, sugar, etc? I usually top my oatmeal with raw banana bits but now that its gettin cooler I’d love a little warm banana action 🙂
KathEats says
I use a little oil from my Misto (usually olive)
Gina @ Running to the Kitchen says
Love that tablecloth! I definitely don’t have that problem with sleep. I could have 10 hours and not feel like it’s enough!
Chloe (In Fine Feather) says
Pancakes aren’t high on my list of breakfast foods (I prefer savory breakfast, yep…one of those people) but those do look good! I’ll definitely have to make some and have friends over for brunch 🙂
Averie @ Love Veggies and Yoga says
What a gorgeous mug! And a little heavy handed on the pumpkin in the pancakes, eh? That’s ok they still look delish!
Hilliary @ Happily Ever Healthy says
The great harvest mugs look great! I actually think I got the right amount of sleep last night! Which is shocking.
Hope @ With A Side Of Hope says
I love the mug! So jealous of your 9 hour sleep! I definitely didn’t get enough sleep at all. Happy Friday! 🙂
Courtney @ The Petite AthlEAT says
I am so jealous of that amazing table cloth! Where from?! Pan searing bananas. Why did I not think of this?! I thought of you this morning when I was making my Peach and Coconut Cream Custard oats. 🙂

A tea towel from Crate + Barrel
CarliCraves says
I also was heavy handed with the pumpkin in my overnight oats last night…who knew it was even possible to have too much? Nut butters certainly help tho 🙂
Marie@feedingfive says
I love your mug. So cool that they are custom made for your store. I too have some custom made mugs, from the kiddos, cute, but I love yours.
Cat @Breakfast to Bed says
I love that tablecloth. It would go perfectly for my fall decor!! Also? no such thing as too much pumpkin.

Nonetheless, the colors of breakfast are divine. Nice mugs, too.
Sunflower nut butter. I know TJs has some. And I happen to be going over there for lunch. Nice score for me. 🙂

Looking forward to making some pumpkin pancakes this weekend!
Enjoy your day, Kath!
katie @KatieDid says
True, you can only go so wrong with pumpkin.. I’m sure they were still delicious!
Sarah says
I love these mugs! It looks like all of my pottery projects in high school were supposed to look like…instead of the slightly embarassing way they turned out!
kathleen @ the daily crumb says
i’ve made this mistake with pumpkin before! it’s a delicate balance and a fine line between the perfect doughiness and a pile of mush. always tastes good, though!!
cathyb@brightbakes says
I just ordered Kodiak cakes for the first time…and…..I’m SO impressed! I’m definitely a “everything-from-scratch” kind of girl…but after hearing you talk so much about these, I had to give them a whirl. Can’t beat the just-add-water when you’re pressed for time!
So Kodiaks and homemade sausage were our supper last night..with plenty of local maple syrup 😉
SO delicious.
I am curious…how much pumpkin do you generally add to the mix? (per one cup Kodiak)
cathyb@brightbakes says
Oh…and one other thing…I ran across this: http://doriegreenspan.com/2011/10/as-promised-the-recipe-for.html ……and immediately thoguht of you! 🙂 Biscoff Apple Crumble!
KathEats says
I usually do 1/2 cup Kodiak and maybe 1/3 cup pumpkin?
Lauren @ What Lauren Likes says
I love the colour of the pancakes! To bad they were abit to pumpkin-y 🙂
Anna @ On Anna's Plate says
Sigh, too much pumpkin…it had to happen eventually. 🙂
Zoe @ loseweightandgainhealth says
I am tempted to try pumpkin pancakes tomorrow, yours look wonderful. I love that tablecloth. Hope there’s one similar in England 🙂
Annette @ EnjoyYourHealthyLife says
cute mug!!
I NEED 9 + hours of sleep. If I don’t get that, I am tiiirreeed. But I am super duper active, so that’s probably why.
LOVE the pumpkin breakfasts 🙂

I love the mug! That kind of pottery design reminds me of going to the Renaissance Festivel, tons of vendors do pottery. Cool beans!

Karen says
Pretty mug! Have a wonderful Friday, Kath!
Karen says
Maybe John the Potter can make “Oatmeal Connoisseur” bowls for our morning grub, which you could sell through your Open Sky store? I’d buy some for sure! (Love that color combo too!)
KathEats says
That would be awesome, but I think they would be pretty darn expensive!
Liz says
That mug is awesome! 😀
deva @ deva by definition says
Are the mugs going to be for sale in teh bakery?
KathEats says
Yup!
Chelsea @ One Healthy Munchkin says
Love the mug! And I like that it’s a decent size too. I hate when they’re too tiny and don’t hold enough coffee for my morning caffeine needs! 😛
TeenyLittleSuperChef says
I’m pretty sure even mushy pumpkin pancakes are still totally yummy. Am I weird that I actually like them when they mush more and aren’t cooked all the way through? Especially when they’re topped with crunchy stuff like nuts and chia seeds. The idea to eat them alongside caramelized bananas kinda blows my mind. I think I know what I’ll be making for breakfast this morning. Thanks for the idea Kath!
KathEats says
I love them raw on the inside too!
Katie @ Peace Love and Oats says
Haha I got very heavy handed with the pumpkin last night. Literally ate half a can, mixing it only with some almond milk and cinnamon! It’s just so good…
Amanda says
Those look super pumpkin-y! Now you have me craving pancakes. Maybe this weekend…:)
Janet says
weird…I did the same thing this morning…strange texture to my pancakes, but the pumpkin flavor was great!
J3nn (Jenn's Menu and Lifestyle Blog) says
I am definitely out of it when I oversleep. I feel better with less sleep, but lately, since the weather has changed, I’ve been sleeping way too much and I don’t like it!!
Ashley @ Coffee Cake and Cardio says
I never would have guessed those were pancakes. Too funny. Happy Friday!
Health Bee says
Love the mug! Beautiful photos as usual. Happy Friday.
Laura (Blogging Over Thyme) says
Those mugs are gorgeous! I’m such a sucker for pottery. Those pancakes look almost like sliced sweet potatoes! Haha
Becca says
LOVE the tablecloth. So pretty! Also love the presentation of your breakfast; you’re good at food styling.
Do your breakfasts ever get cold when you take them out to photograph? I made pan seared bananas last weekend and I felt like they got cold by the time I got down to the table to eat them (and that was all indoors).
KathEats says
Only when I take them outside in the middle of the winter – like a snow photoshoot!
Ellie@fitforthesoul says
Coool that mug is so pretty!~And rustic-ish. It’s very YOU! 😀 And I agree, haha. Too much pumpkin does make the pancake mushier and hard to work with.
Emmy (WIne and Butter) says
I’m the same with sleep! Too much and im knackered – too little and i crash and burn…. its a very sensitive timetable! im super jealous of all your pumpkin goodiness!! Too much!? No way! Somebody needs to inform Uk supermarkets just how amazing pumpkin really is!!
The Mrs @ Success Along the Weigh says
Mmm….pumpkin. (See, doesn’t even matter it’s an OD on it…still looks tasty!)
Julia H. @ The Petite Spiel says
Ahah, at first I thought you were just eating straight pumpkin puree for breakfast from those pictures! It’s hard to imagine “too much” pumpkin, but I guess it’s like you said–you can definitely have too much of a good thing!
Awesome tablecloth, btw. All of your tablecloths/placemats/etc make me look forward to having a place of my own!
Lindsay says
I adore those mugs! Beautiful!! And who knew there could be too much pumpkin, EVER??!
