Biting my nails over here in the Tar Heel State….
Wow guys, I am still so impressed with the comments on the Barney Butter contest!! Winners will be announced first thing in the AM!
Needless to say, you all evoked a huge craving for nut butter in me so I promptly had some for snack
On top of Gina’s banana bread, half a real banana and some Kashis –
I was starving around 5:30 and realized the husband was not due home until after 7 so I ate knowing I probably spoiled my appetite. I thought I didn’t for a while, but by 7:30 dinnertime I wasn’t really hungry but could tell I still needed a meal.
Bone Suckin’ Bowl
This meal was supposed to be a beans + rice Mexican dish, but it turned more into BBQ bowl. We initially were going to use a few jalapenos from our garden, but the husband put them in a pot and did NOT take out the seeds (he should know after 1.5 years of marriage that I do NOT eat the seeds!) and the entire house was BURNING our lungs. We were coughing like there was smoke. We had to open the doors and throw out the jalapenos and just start over. Luckily there were no other veggies in the pot yet!
I boiled some black-eyed peas from scratch this afternoon and made some short grain rice too. Also involved were collard greens, frozen corn and frozen okra, both veggies that I think taste nearly as good frozen as they do fresh. I tied the veggies together with a few TBSP of Bone Suckin’ Sauce, coriander and cumin. Plus some Mexican cheese + greek yogurt on top.
I am staying up tonight and am planning to skip early morning workout in favor of running with my Girls on the Run coach before my lab test. The next 48 hours or so are going to be insane with 2 tests, my school lunch menu, and packing and leaving for my Chicago trip just minutes after my Organic test. No time to pack!

Not to be too strange, but I left you a comment on last night’s dinner and thought you might have missed it in all the Barney Butter craziness today. :0) Enjoy the election coverage tonight!

Wonderful southern dish!
My brother Charlie from www.backtothefridge.com one time tried to CAN sliced jalapenos! It was so acrid that he had to remove his family for a day!
I love seeds in my jalapenos! But sadly, my husband says that I have burned my tastebuds so bad, I can’t taste anything!

I’m lovin’ that black and white plate! Normally, I’m not big on prints, but that one is quite nice.

Yummy! Your BBQ bowl looks fantastic!

I agree with the frozen corn comment– but only if it is Trader Joe’s extra sweet organic corn (which is often even better than the fresh stuff!)

Hi Kath!
Can you recommend a heart rate monitor?
Thanks!

According to Google Analytics, I have 4,000 unique visitors a day! I think there are a TON of people who just skim through and never comment, but they sure come out of the woodwork for contests!

Wow…..4,000 visitors, that doesn’t surprise me! I’m sure it will continue to grow and grow.
The ‘peanut butter orgy’ (as Amy put it) looks scrumptious!

It warmed my heart to see black-eyed peas- my grandma makes them Every year on new years to ‘kick it off right’… it’s a tradition. How appropriate that you’re having them on such a monumental night!
I didn’t mean to come off as a ‘physiology snob’ or anything in the last post. I’m really sorry if it was offensive, just thought I’d share a little of what I had learned.
Running with the girls sounds like a great choice for tomorrow…
I’m watching election coverage and it’s all pretty intense! Can’t wait till we know everything for sure tomorrow!!
Lida says
a real banana? as opposed to a fake one?
dinner looks great!

Grounded Fitness says
Damn Kath! 600 comments? No wonder you got invited to Chicago!
I think its funny that your pantry remnant meals have more ingredients than my right after a grocery shopping trip meals.

jess ,
No worries! I think it all depends on your goals and likes, so there probably not one right answer.
