I woke up craving PB&J today – because I realized we had Cville Crunch in stock last night!
To make it all-the-more exciting, I turned it into AB&J French Toast!
A regular slice and an end piece, frenched up in an egg and cinnamon batter and cooked in coconut oil for the ultimate crispy crust. Topped with Naturally Nutty Cinnamon Vanilla Almond Butter, homemade strawberry jam, and coconut.
Raspberry Leaf tea makes her debut!
This breakfast was supposed to include a peach but I forgot it!! Strawberry jam threw me through a loop : )
Happy Tues!
Allie@LiveLaughEat says
I wish I could reach into my screen and take a sneak a spoonful (or 5) of that Naturally Nutty!!
Cait's Plate says
Haha – I agree with Allie. I actually had that SAME exact thought. Except for a spoonful of that entire dish (+5 of the Naturally Nutty!).
Love that tea bag message!
Angela @ Eat Spin Run Repeat says
Looks tasty! What brand of tea is the raspberry leaf? I like the inspirational messages on the tea bag!
KathEats says
The main brand – I can’t remember the name – but it’s the big herbal tea brand you find at Whole Foods. Beige box?
Michele Sparrow says
Is it Traditional Medicinals?
KathEats says
Yes, thanks!
Ashley @ Sweat for Sweets says
Sounds and looks delish! I also LOVE the little saying on your tea bag. Does every bag have a different quote?
KathEats says
Not sure yet!
Erica { EricaDHouse.com } says
I love when my tea tags say something sweet 🙂
Ashley @ My Food 'N' Fitness Diaries says
I love the idea to cook the french toast in coconut oil! Looks delicious!
Cherleen @ My Personal Finance Journey says
Peanut butter or almond butter, I wouldn’t care. I love them both!
Kim says
I just started drinking my RRL tea too now that I’m 37 weeks. Just wanted to let you know that I saw somewhere online that it can interfere with absorption of vitamins. Not sure when you take prenatals, but this site advised spacing out the tea and vitamins at least 2 hours!
KathEats says
Oh I hadn’t heard that – thanks for the tip. I think I’m going to make some iced tea so I can have it between meals!
Jennifer says
Yeah it’s the tannins from the tea that interfere with Iron absorption. Same reason you have to space the prenatals out with dairy/calcium foods.
Katie @ Talk Less, Say More says
Is that Yogi tea? I love their inspirational messages on each bag. I always look forward to reading them when I’m preparing my cup of tea. 🙂
Andrea says
Did you make the homemade strawb. jam?! Yum!
KathEats says
No I friend did
Rachel says
Love the quote on the tea bag!
Laura @ Sprint 2 the Table says
Cloudy mornings call for toast! I have french toast on my blog this AM too, but I baked the peanut butter right into it. That jam looks delish! Adding that next time. 🙂
Katie @ Peace Love & Oats says
Okay that looks ridiculously delicious.
Claire @ Live and Love to Eat says
Comfort food for breakfast sounds amazing – I only ever seem to have time for overnight oats!
Liz @ Tip Top Shape says
That looks like some delicious french toast 😀
Emily M. says
oh i love that quote on the teabag.
Melissa @ HerGreenLife says
Ah, raspberry leaf tea time 🙂 The French toast looks delish — it’s on our “make soon” list, but we don’t have the bread we want for it. Thinly sliced fresh peach on warm pancakes made a pretty acceptable alternative this morning, though.
~Christy @ wonderofallthings says
Delicious! Love the note on the tea… 🙂
Catalina @ Cake with Love says
I went to sleep with a PB & Banana sandwich craving, and this was the first thing I did this morning! Even before brushing my teeth (I know, gross), but I couldn’t resist teh temptation anymore! I have never had PB & Jelly, so this is on my list now!
The Mrs @ Success Along the Weigh says
So is that brand with the cute little sayings called Positivitea? Because if it’s not, it should be! Very cute!
kim@hungryhealthygirl says
Oh well, you can have that peach for a snack…..that’s what I did! Happy Tuesday! 😉
Alison says
Well that is one spiffy breakfast!! 🙂
Laura @ She Eats Well says
That toast looks delicious! I just enjoyed two slices myself, with flax peanut butter on top. Sometimes, the simple breakfasts are the best!
Sarah (The Social Eater) says
Mmmm…I should not look at your blog when I am hungry :-).
Jessica @ New Girl, New City says
I’ve been craving simple toast like no other.. and GH definitely has the best. Might need to make a trip soon..
B @ Crags and Veggies says
There’s absolutely no need for a peach when you have french toast with jelly! It’s healthy enough, right? 🙂
mary @ minutespermile says
Omg I love French toast. Thanks to this post I will be making it for breakfast tomorrow!!! Nom nom nom
Marcy says
Hi! I recently started reading your blog about 1 month or 2 ago and I really enjoy it. Everything always looks so good! I’ve recently started my own and have definitely been inspired by you to do so. I look forward to your posts on a daily basis. I had never heard of overnight oats before reading your blog and now I love them and have cooked them for others! Thanks for your daily sharing 🙂

This looks delicious! I’ve been in a pb & j mood too recently- it is even good on whole grain english muffins or rice cakes for a lighter treat!
Jeri says
Is cocnut oil better than the other oils to cook with? Or does it just give a good flavor.
KathEats says
Both – it has a high temp and it adds fun flavor
Spice Chicken says
How about a recipe for this toast?
KathEats says
It’s just a basic french toast – 1 egg plus cinnamon, soak the toast and seared in some coconut oil on both sides! Hope that makes sense
Spice Chicken says
Yes, thanks. Looks awesome. I’m a newcomer here, and I love your approach and enjoy the posts, which have given me some good ideas for my own experimental cooking. Your recipe for yogurt pancakes became an instant classic in my house.
