"To buy a fat pig"
Farmer’s market was fun, but a bit rushed.
The highlight was this pasture-raised pork bacon from Grateful Growers, an old-school (in the good way) farm in Denver, NC. I’m going to use a few slices this week and freeze the rest. It was pricey, but totally worth it for the peaceful mind that comes with supporting this farm.
When I got home I turned around and left for my run with Stacey and Whit. We ran 5 miles on the Greenway at a nice pace.
We ended up in the Great Harvest / Trader Joe’s shopping center where we said hello to this guy who was just getting off work
A slice of bread makes a perfect post-run snack!
And then we shopped our way through TJ’s. (I had an old school PB&J sample while there!)
Once shopped, home, unpacked, and showered, I made lunch. Luckily the bread and PB&J bite tided me over well and I wasn’t too hungry. I finally sat down at 1:30 to this
Farmer’s market arugula tossed in this homemade dressing of 1 tbsp each of maple syrup, olive oil, and lemon juice, plus a pinch of salt, a tsp of whole grain mustard, and a whole crushed garlic clove that I shook with it and then removed so it wouldn’t be overpowering.
Topped with 1 slice of Applegate Farms turkey, ~1/4 cup navy beans, some red pepper + zucchini, WALNUTS (which I have been out of for weeks and was totally craving), and gorgonzola.
FAB.

GUESS WHAT I GOT MY PAWS ON!!! Our friend Kris just bought season 2 and is letting me borrow it!!!! I am actually not that happy with how the end of season 1 is going. It’s rather dark!
Mail time, mail time, MAIL TIME!!!!!!!!!!!!!!
Kristen of Simply Savor had these Amazing No Cook Chocolate Hazelnut Bites at the Summit Bake Sale and I lost the bid. Kristen offered to send me some anyways! She also has a fabulous video with the recipe on her site (which I love – colors, design and content!) Y’all know how much I love hazelnut butter these days.
Obviously I had one – er two – straight from the container. Fab. You. Luss.
Off to do things.
Fun times tonight are looming!

Daria (Summer of the CSAs) says
We’ve been eating bacon from our meat CSA and it is soooo good! A million times better than Oscar Mayer or any other big brand!
Allie (Live Laugh Eat) says
Ahh I’m so jealous! I missed GG Season 2 when I was in London and could only shell out moolah for the first couple episodes. I’m dying to watch it though.
Megan says
I love Kristen’s video for those cookies! How wonderful she sent you some…they look delicious! Your lunch salad looks great too…gorgonzola, navy beans, turkey! Yum 🙂 Enjoy season 2 of GG- it’s good!!

Hey Kath!! I love your blog and read regularly. Just a quick question ~ where did you get that bag in today’s photo? I’ve seen you with a few times and love it.
VeggieGirl says
Hooray for seeing Whitney!! So fun!!
Love the Blue’s Clues reference, haha 😀
emmy - eatventures says
I probably missed something and am asking a stupid question, but this could be the answer to my troubles – how did you have that bag with you at TJ’s? Did you carry it on your run, and if so, HOW? There are so many times it would be convenient to have a bag and I just can’t figure out a way to run with one.
Marisa (Trim The Fat) says
Salad does look fab! The hazelnut bites, too!
Heather @ Health, Happiness, and Hope says
I JUST got the Season 2 of Gossip Girl in the mail a few days ago and am already on disc 3! That show is SOOO addicting.
LOVE the looks of that salad! 🙂
Jess says
Really? I love the end of season 1! So satisfying. Season 2, however, is a very different story. No idea what happened to the writing on that show!
Simone says
Happy to see you had a nice run and food shopping experience with friends. I absolutely love grocery shopping (more than regular shopping), but I think I am weird in that I like to go grocery shopping alone. Something about it is so calming and relaxing, and when I have tried to go grocery shopping with friends in the past, it just ruins that whole calming feeling for me. I am so an introvert!!
Oh, and can you possibly come over to my house right now and make me that salad. DROOL!!
Shannon, The Healthy Beach Bum says
MMM bacon. I think I could literally eat it in every meal lol.Arugula looks delish in that salad.. now I know what I want to make for din din 🙂
Whit says
It was good running today! I will let you know about the bread ;). Enjoy your Gossip Girl.
Evan Thomas says
I wouldn’t have thought to use maple syrup that way but it sounds great
Hil says
Mmm…bacon. I agree that its worth some extra money to support responsible farmers. It’s really nice to know that your food was raised responsibly.
Lele says
That salad sounds like suuuuuuuuch an amazing combination of flavors! I’m particularly diggin the arugula, red pepper, white bean, and walnut combo. I’m going to need to make myself one!
theskinnyplate says
I’m a GG fan too. Looking forward to the new season, not a fan of Hil Duff, but I am excited to see how it turns out.
As always, I drool over the foods you eat. Off to plan a gigantic salad for dinner.
Sarah says
Everything is better with bacon!

Hallie (Healthy Twists) says
Those cookies look delicious! (And creative, too). The perfect ending to that salad…I am seriously obsessed with fresh arugula. We don’t get it in our CSA as much as I wish we did (which is, every week!)
Sarah says
Oh my gosh, those cookies look phenomenal!
Great job on the Farmer’s Market purchases. You are right that it is worth it to pay more to support a good farm. That is something I hope to do more of soon.
Have an awesome Saturday 🙂
Cait (Cait's Plate) says
Yay for Gossip Girl! I’ve been addicted to that show since season one. I can’t wait for this year to start! It’s torture living in the city where they film and not getting to see the episodes until the Fall! Haha.
Those cookies look awesome. Kristen rocks 🙂
Ashley says
I’m jealous that your farmer’s market has arugula–I roamed all over the farmer’s market in Raleigh yesterday looking for any sort of lettuce and there was none to be had.

When it comes to Blue’s Clues, well I’m a Joe kind of girl. Steve never did anything for me. 😛
Emily (Healthy Fit Mama) says
Chocolate hazelnut bites?! Yummy! They sort of remind me of my all-time favorite chocolates – Ferrero Rocher! Mmmm
brandi says
hope you have fun tonight! ha, we got local bacon today too 🙂 ours was $6/lb, which is about what it is at the store for the kind we get, so it worked out pretty good!
