I have been SO productive and focused this week!! I’m all caught up with the major things I’ve wanted to do for KERF (more Home Neat Home’s are coming though! Many more!) and life’s to-dos.
My car is getting an oil change right now (that’s why I went on the above sunset walk!) and I picked dentist and OBGYN practices to call for appointments on Monday morning. Since we moved, I am overdue!
I haven’t really been all that cold this winter – I think I’ve learned how to heat myself. Space heater next to my desk when I’m inside, plus 2-3 layers. And my down coat with gloves and a scarf when I’m outside.
But boy-oh-boy am I excited for springtime on our porch!!!!! I miss it out there!
Congrats go out tonight to Vanessa of Life Undeveloped for being the lucky winner of the peanuty Cuisinart! I hope the rest of you guys aren’t too disappointed – we hope to do more big-time giveaways in the near future!
I snacked on some Nature’s Path goodies this afternoon while I worked. I could feel a spike in appetite (and thirst) from my workout today.
I worked and worked and worked and soon enough it was 7PM and dinner was overdue!
Luckily I was able to forget about it because all I had to do was heat up my leftover Wednesday soup!
Single ladies must embrace the leftovers. And today I doubled up on them. I think it makes sense for me to do a day of heavy cooking followed by a day of light cooking rather than a little of each everyday. More dishes to do!

I just had a desserty snack of a mug of Pero and one of Meg’s cookies I froze before Montana!

Lonesome Dove is taking me a while to get into, although I’ve been staying up so late I haven’t had much more time for more than a chapter a night. Going to try to fit in more tonight!
I’m taking tomorrow off of the computer [aside from regularly scheduled blogging!] to enjoy the day. Karen and I have some fun afternoon plans, and you-know-who flies in on his broomstick at 11PM!

SO true about single ladies embracing the leftovers (or at least, single ladies whose significant others are not around at the moment). Living by myself has been a process of finding recipes that reheat and freeze well, and that I don’t get tired of quickly…

Kath, I bought chia seeds and wheatberries today. Going to put chia seeds in my oats tomorrow. Not sure what to do with wheatberries. They are terribly confusing. Simmer for 2-5 hours? What?

This is when a pressure cooker is great. I usually cook chickpeas, other lentils and wheatberries from scratch and a pressure cooker does in half the amount of time!

Good point about the extra dirty dishes. I would totally make more leftovers if there was room in the fridge for them. Living with two roommates makes it hard to squeeze in all our food!

Uh, yum. Now I want crunchy granola, winter squash, and more cookies. I just baked a giant batch and ate 4.5 of them, I should feel bad but it is indulgence friday and that calls for major cookie lovin:)

Love that porch photo! I definitely embrace leftovers, as well. Although I struggle to eat them for dinner. I love the process of “making dinner” so I always want to cook new things at night, and then I always eat my leftovers for lunch…

Do you think you could do some sort of brief post on how you stayed organized in grad school? I know you used to use your computer to take notes, etc. I can never seem to figure out a convenient way to do that. A brief NerdKERF on the subject would be perfection. 🙂

I took notes in Powerpoint. Actually, many of my professors sent out slides in advance and I was able to easily edit them and turn them into flashcards.

I typed notes into a Google Doc if there wasn’t a powerpoint friendly way to manage the information.
I used Google Calendar to keep track of my assignments (different colored calendar for each class) and Google Tasks for a daily list of what to do.

You know what? Even when you have kids, the “cook a lot one day, eat leftovers the next” strategy is great. Since they eat smaller portions, sometimes they knock out the last of a meal while my husband and I move on to something more adventurous.

I would love to find leftovers once in awhile, but because I usually always want something different, we typically only make enough for one meal. Love when food is already cooked, though!! 😀

When you are looking for another good book I just started Bloodroot by Amy Greene and it is great- very easy to get into. It takes place in the Mountains of Appalachia. The characters and story line are gripping.
