You guys often ask me if there’s ever a time I’d like to just skip a blog post and call it a night? Tonight’s one of those! I gotta get to bed!!! But because I love you all so much, I decided to eat dinner and blog per usual. I don’t think I could ever skip a post on purpose!
This afternoon I learned all about the germs on my hands and how to wash them properly
That killer sandwich held me over allllll afternoon and pretty much alllll evening! Maybe it was the extra slice of turkey I put on (I usually do 1 and I put on 2 inspired by the Dishing Up Nutrition podcast I’ve been listening to – they love meat! I love their "Ask The Nutritionist" shows.)
Or perhaps it’s the first two weeks of my cycle.
Anyways, I wasn’t the slightest bit hungry when I got home from work, but I knew I’d be starving during yoga if I didn’t eat a snack (or the usual me would!)
So I heated up a pear topped with cinnamon, Mix My Granola and a few almonds. Yum!
I answer>ed a bunch of emails and then got back in my car to head to Y2Yoga. I was giddy with excitement! However when I got there, I discovered that the schedule had changed and my favorite instructor wasn’t teaching 😥 The lady that taught was nice, but the class was a bit slow paced and didn’t do anything hands-on (no chance of a foot massage!) so I left with my vinyasa itch still unscratched since before Christmas!! I might go to the Saturday AM class to try to satisfy my craving.
While I was gone, Matt was busy making salmon salad:
I really wasn’t even hungry when I got home and it’s past my bedtime and I almost went straight to bed. But during my shower my stomach started the very early stages of hunger and I knew I hadn’t had enough calories and soon enough I was digging into my salmon portion –
His salad was canned salmon (from Costco) with carrots, cuc, jalapeno, mustard, mayo, salt, pepper, dill and cayenne. It was great!
Dessert was Biscoff x2 which was nothing more than a fabulous palate cleanser 🙂
Bedtime now!

Just wanted to mention that I made your bean burgers last night… fantastic! Thanks for sharing the recipe. I enjoyed mine one an arnold sandwich thin with pepperjack and some BBQ sauce. I made an extra to bring to work for lunch and had it on Kashi triscuits with some Laughing Cow. I think this may be my first comment, so I wanted to also mention that I truly enjoy reading your blog! It’s one of the main ones that I keep up with because I appreciate how real and honest you are! Keep on writing 🙂
Also, I have really enjoyed your school rotation experience as I am a teacher and would never go near the food in our cafeteria because it is completely unhealthy 🙁 Can’t all schools teach kids about healthy eating at a young age?
Kath says
I need to make those again too!

LOVED LOVED LOVED your article on the menstrual cycle. i found myself shaking my head yes and agreeing to everything you said!

Thanks 🙂

Kath, I am relatively new to your website and enjoy it. A question I have…so many of your meals are combinations of foods layered or mixed in bowls. Aside from your lunches at school, do you ever have plate meals…i.e. some sort of meat, potato and a salad? A hard boiled egg and toast? Is it hard to digest all of the nuts and seeds you toss onto things or is your body used to them?
Thanks!
Kim
Kath says
I do eat plated meals (more for dinners) but I prefer one-bowl entrees!
Eileen says
That salmon salad is just gorgeous! I think I have all the ingredients … might have to make it for lunch tomorrow! Thanks for the idea. I’m in one of those ruts where some of my food is boring me.

Last night on Throw Down With Bobby Flay the opponent made belgian waffles with a peanut butter that I think was a blend of peanut butter and biscoff! If I get my hands on some cookies, I’m going to try to recreate it

I have never used salmon to make a salad – I just stick to tuna – but there is a can of salmon in my pantry I may just need to try it.

I agree with Carly its so nice to see you in the schools making all this interesting, tasty, healthy foods that kids actually eat! You should come to the school when I am doing my teaching practicum… or my university cafe for that matter!

That salmon salad looks wonderful. What a great, quick, and healthy meal to have on a worknight. I’m incredibly inspired by you to keep up my healthy eating habits even when I’m so incredibly busy. If you can do it I know I can too!

Salmon salad looks fantastic!
Reminds me of my poor man’s antipesto (tuna, mayo, dill, salt, pepper, celery, red pepper and purple onion, all chopped up!)

I am new to your site, and have really been enjoying it! I just read your “Embrace the Cycle” link and was relieved. I know that my cycle effects many things, but nonetheless I was becoming discouraged this week because I have been sticking to my plan perfectly and actually gained a bit. I started today, so I’m hoping maybe my weight will allign with my hard work in the next day or two! The salmon salad looks amazing too! I don’t like salmon, but I’m thinking I need to try that with chicken.
Chelsea says
I have that salmon in my cupboard right now. I see a salmon salad sandwich in my future!
Sucks about the schedule change-I HATE when that happens 🙁
Only 1 more day until the weekend!!! I hope it’s a relaxing one for you.
Kayla says
I love the pics of your hands, very cool.
I’m also really happy to see all your posts about the food at schools because food was horrible at my schools: one of the things they had all the time was 3 breadsticks, a cup of marinara, a cup of cheese sauce, and then pick a side (optional, at my school the popular pick was tater tots) and a drink: how is that a meal?!. What you’ve been showing us looks so much better!
Penny (Blonde Bibliophile) says
If you ever decide not to post for a while, definitely let us know first. We would file a missing person report!!!! 🙂
Salmon salad looks very tasty.

Sorry you didn’t enjoy the yoga class. I know how disappointing that can be. When I show up to yoga and don’t get what I expect, I just use it as an opportunity to learn something new about myself.

I wonder if the same instructor taught both classes. 🙁 Mine was rather uninspired as well.
Ana says
Omg, I loved reading your “embrace the cycle” article, that is exactly how I feel month after month. It was like you read my mind and wrote everything down. I have noticed the exact same pattern you described and ever since I realized I couldn’t change it I really started to learn to live with my bodly hormonal changes and it has really helped me out to not feel bad about those two weeks that demand more food and when I have less motivation. Not easy, but I am happy that I got to the point of understanding it! (although it did take me 30 years to get there!!)
Kath, I read your blog everyday and really, really enjoy it! I haven’t commented much but I wanted to say that I really like reading about your activities!
Do you work as a food scientist, nutritionist? I am graduated in Biology (2004), and now decided to go back to pursue my real interest, which is food. I am taking classes on Nutrition and Food Science and all I can say is that I am loving it! I hope one day have as much fun as you do with food!
And I live in NC too, in Cary (close to Raleigh).
Just wanted to say hi!
Love your blog,
Ana

I’m working on my dietetic internship.

Hey, weird! That Dishing Up Nutrition show is local to where I live & airs on a radio station here. It’s not my favorite because I think a lot of the hosts are pretty old school in their nutrition opinions, but I’m glad it gets people thinking about what they put in their mouths & the food/health connection.
That salad looks delicious!

Stopped by when I saw your handwashing reference, then had to read the rest. Great blog! Keep pushing the handwashing!

how many calories do you have everyday?
seems like you have low calorie intake per day..
Kath says
Usually between 1700 and 2000. Seems pretty adequate to me. Lunch today was light, but it was a special circumstance. And probably still 400+ calories.
Tanz says
Your salmon salad looks amazing! It’s so important to get a dose of yummy fish regularly. I have that same little coral bowl too! I found it in old town Sonoma and I really wished I would have picked up the whole set. If you know where to find more, let us know!
How are you liking the vinyasa yoga? I hear it is more of a work out, but I’m pretty sure I need to try out yoga stretch before I jump into vinyasa!
Have a lovely day–I’m baking up your walnut, oatmeal, flax bread with maple syrup instead of honey as I type 🙂
