Not me, the bike 🙁
So sad. So very sad. I think the hole patch blew. I heard a pop and a hiss and there was air on my leg. Luckily I was just a block from the bakery and Matt could drive me home.
We were already cranky and hungry for dinner, so this didn’t help! He’s now trying to replace the tire with our spare [on very little sleep…], but the spare doesn’t seem to fit so now I must take it to the bike shop in the AM. Bad timing, bike. Bad bike!
While we were scurrying around, Karen was waiting for us on the porch with a casserole in hand!!
She brought her famous Veggie Lasagna!!
Boy did it taste amazing!!
Thank you Karen!
Matt and I whipped up a 5 minute garden salad with avocado, tomato, walnuts, balsamic, salt and olive oil to go with it
And we served the Jefferson Vineyards Cab Franc – a delicious, smoky, leathered Virginia classic!
I had 2 small glasses
For a palate cleanser – Ben + Jerry’s pint of cheesecake brownie (that Karen brought) with a GH Cosmic Brownie!
Delish.
We are ALL past bedtime in this household – including that stinky bike!
Nite!

I’ve been in need of a new bike for years now, but I can’t get up the courage to fork over good money for the bike. I guess I’ll have to save up and consider it an investment! 😀

glad to see karen! how active/involved has she been in the bakery opening? I know she moved to c-ville with yall in hopes to play a major role.. has she been able to partake yet in the opening festivities? I know she is feeling better every day. Will she eventually be there all the time with you guys?
keeping her in my prayers…
KathEats says
She’s going to take over certain components – like our gift basket program – when she’s able. Probably not full time work though

The Veggie Lasagna looks to die for! That’s not even “my kind of food” “(which would be termed as chocolate and desserts) but i now have a craving for lasagna!
Karen is a great cook, clearly! And so are you and Matt…runs in the fam 🙂
CheezyK says
Yum! I haven’t had veggie lasagna for years … must now both try Karen’s version and hassle mum for hers.

Oh no your bike! It definitely needs a trip to the bike shop. What a great mother in law to have dinner ready for you three. What a great help.
Justeen @ Blissful Baking says
Too bad about your bike 🙁 but good thing Karen was there with dinner all ready! The veggie lasagna looks deeelicious – easy recipe too!
Laura says
That lasagna looks SO good. 🙂 Thanks for sharing the recipe: just one question: it says to put the uncooked noodles on the bottom of the dish first – are there ever any issues with these not cooking properly?
KathEats says
It seems to have worked 5-6 times for us!
Lyn says
I think uncooked worked better since they soak up all of the juice from the veggies.
Marci says
We just did an Ina Garten lasagna (on my blog today), and she recommends to soak the noodles in a bath of boiling water for 20 minutes. It was perfect, then you assemble and bake. I read your recipe yesterday to compare.
Michelle (The Runner's Plate) says
That’s so nice Karen was able to provide dinner! It looks amazing!
Katelyn @ Chef Katelyn says

Karen is the best! Her lasagna looks devine. By the way, can you see how much she and Matt resemble each other in the picture below the caption “Thank you Karen!” It looks like she is making a Matt face! 🙂
Emily says
Kath– I love your expression!! How are you able to hold “it” all together so seemlessly? Finding your blog has opened my life to so many great ideas & Experiences. I wish you all the best. You rock!
KathEats says
Oh mean, I almost broke down with this tire!
jennie says
Kath, What kind of music do you enjoy listening too? Matt?
KathEats says
My taste is very eclectic – pop, country, Glee, oldies, a little classic rock, showtunes.
Matt likes classic rock all the way! Plus bluegrass
Katherina @ Zephyr Runs says
Ahh bummer about the bike 🙁 🙁 🙁
Garden salads are the best, trumping simple salads by only a little bit. Simple salads are so underrated.
Allie says
Too funny! I definitely thought the utensils for the salad were straws in the wine!
Kate (What Kate is Cooking) says
Oh no! One of my worst fears is getting caught far away from home with a flat tire on my bike. Thankfully Matt could take you home!
J3nn (Jenn's Menu and Lifestyle Blog) says

Jumanah says
Sorry about your bike! Hope its fixed soon.
Karen’s lasagna sure does look good!
haya says
yay for karen!!
this is exactly why i can’t support tube patch kits. if you get a flat, just put in a new tube and you won’t have to worry about persistent future problems until you put a new tube in.
hope you all got some needed rest.
KathEats says
now that we have tubes on hand we’ll be using them only.
But the tubes did not FIT !!!! Matt couldn’t get it in the tire. Booo. I have to take it in to the bike shop this am
Carol says
Hope everything goes well with getting your bike fixed!

Simply Life says
Hope you got a good night of sleep!
Paula says
I had the same thing happen to my bike. During the day I leave my bike outside in the sun. We were living in TN at the time and it can get HOT!! Anyway, I went in the store came out and BOOM. One kid was outside and told me how cool that was. I never had that happen before so I don’t know if it was the tube or the heat or a combo of the two, but now I park my bike in the shade just in case.
KathEats says
Mine was inside the bakery, but good warning!
Mary Frances says
Just like in your vehicle that you drive, air pressure should be checked frequently A N D tires need to be inflated a few pounds in the fall and deflated about the same in the spring. The warmer temperatures cause the pressure to go up and if there is too much pressure the tire could blow. In the winter when it is cold the pressure goes down and you can get a flat tire. Even if the tire doesn’t blow or go flat, improper tire pressure will cause uneven wear on the tire tred and will have to be prematurely replaced. The recommended tire pressure is embossed on the side of the tire.
Mary Frances says
Oh, pressure should be checked before using the bike/vehicle because when it is driven, the friction from the tire on the road produces heat and causes the tire pressure to increase a few pounds. Therefore, if a tire were at the correct pressure on a 50 degree day, but you suddenly got a record setting hot day in the 90s the pressure would go up a few pounds and then if you drove it the pressure would go up a few more pounds–possibly causing a blow out or the tire to pop if the pressure exceeded the maximum.
Amy says
What perfect timing for Karen’s beautiful face to be waiting with dinner! And it looks DELICIOUS!
Sorry to hear about your bike issues…hope they’re resolved soon and you’re back on the road!
Amanda- The Nutritionist Reviews says
That fresh mozzeralla looks amazing in that lasagna. That’s great that Karen can come over and spend time with you guys like that. : )
Fancy says
I have made Karen’s lasagna many times and it is ALWAYS delicious! I highly recommend it to everyone, you must make this asap. Quick question, Kath….what are those delicious looking white blobs on top??? Mine never looks that amazing! I’m thinking perhaps fresh mozzerella? Hmmm…
KathEats says
She used real mozzarella slices!
Fancy says
I totally made it for dinner last night….DELICIOUS! 🙂
Christina says
Yes, get A BUNCH of tubes at the bike shop! I bet if you go in (instead of Matt) they will show you how to change a flat. If not there are tons of videos on youtube- it’s super easy to learn. Then you wont’ have to curse life anymore!
But if you carry a tube in a seat pack and a frame pump maybe it will get stolen? You can at least keep a set at the bakery and a set at home.
Also, when I went on weather.com you were an ad on the sidebar! For opensky. Pretty awesome!
KathEats says
Weather.com!?! Coolness!!!!!!!
Good idea to keep them at the bakery!
Karen says
Yes, I saw you on the sidebar today (for OpenSky) when I went to allrecipes.com!
Karen says
Between your facial expression and Karen’s, this post provided me a good laugh this morning. Sorry re. your bike – these things always happen when at the least convenient times, huh? Hope its a quick fix for the bike shop. What a blessing to have Karen’s always-hospitable grace ready with a delicious meal waiting for you on a tiring day.
karla says
agreed with the other comments. GET A TUBE, TIRE LEVER AND A PUMP (learning how to fix a flat is super easy) and that will never happen again! patches are the worst!
; )
http://www.rei.com/product/779850/lezyne-pressure-drive-mini-pump
i carry this one with me everyday
Chelsea @ One Healthy Munchkin says

Sarah@The Flying ONION says
Bikes (just like computers!) are much needed and enjoyed but they drive me NUTS sometimes. Flat tires are the absolute worst!
Ally (Girl V Food) says
Oh noooo!!! One of the things I absolutely love about you is your willingness to bike everywhere. It’s so good for the environment and so good for your legs to just coast. I don’t bike nearly as much as I should! 🙁 I hope the bike gets fixed ASAP!

Will keep that Jefferson winery choice in mind. Our lake house is minutes from there.
Would have loved to see you last weekend, but it got busy with the guests fishing, swimming, etc.
Will catch you next time we are down that way!
The bakery looks awesome, Kath; quite an accomplishment!!!
