Help! I’m drowning in a sea of cookies and eggnog right now. I need a little vegetable island on which to be stranded for a few days. Perhaps one with a perfect salad?

Here are some tips to get some more vegetables into your week without resorting to the crudités platter.
My favorite? Massaged kale salad. It takes minutes to make and you can safe leftovers for another meal without worrying about wilted lettuce.
Favorite combos:
-A few tbsp of prepared pesto
-Sesame oil and rice wine vinegar
-Maple syrup and smoked olive oil
-Flavored balsamic vinegar and extra virgin olive oil
-Fresh herbs and parmesan cheese

I agree! When people say they “hate brussels sprouts,” and you find out they’ve only ever had them boiled, well, of course they didn’t like them!

Just a wee bit of jam in place of honey in a dressing recipe, so maybe 4 tbsp oil, 1 tbsp vinegar and 1 tsp jam.

I’ll definitely be sharing this with my nutrition and training clients, thanks for posting! So many times I have clients worried about the “calories of making their veggies taste amazing” I try to encourage them that a whole food based diet that taste good is much better than a processed bland one!!!!!!

What a coincidence!? I am reading your post while eating roasted eggplant sliced lengthwise topped with cherry tomatoes, onions, bacon and parmesan cheese. I also love massaged kale salad.
