It’s one of those days where time gets sucked into a vacuum of space. Where did it go!?
I worked on my computer all morning until I left for the gym around 11. It was a typical day: bike there, 35 minutes Squirrelliptical, weights, bike home.
Just in time to fill my grumbling stomach with salad. What is that black shadow!!? Could it be the vacuum of time!?!
The mix:
- Mixed greens tossed in lemon juice, olive oil, kosher salt and honey.
- Red pepper, grilled corn off the cob, carrot
- 2 slivers of leftover trout
- 1/4 an avocado
- Toss of salty peanuts
And a plumble jumble for dessert

I just started putting peanuts on my salads and I love it 🙂

great salad! I’ve never tried that kind of trout, but it looks great.

Mmmm what a gorgeous meal! Your pictures look fabulous…
I know what you mean about time just being sucked right out from under you…what the heck? Where does it go?
Recipes for Creativity says
Salted peanuts on a salad is such a good idea…I wish I had some right now!
Danielle says
What a great lunch!
Today is going by pretty quickly but I wish it was going as fast as yours, although I only have 3 more hours of work left, that sounds pretty good right now.
Hallie says
I’ve decided that avocado just makes a salad! And a sandwich….ok anything 🙂 I used to hate it, too. Crazy.
Rose says
Weird dark spot. Reminds me of Lost!
Lisa says
My new favorite salad is mixed greens & baby spinach with walnuts and strawberries (add in anything else you’d like) with a cole slaw dressing (Vegenaise, soy milk, white wine vinegar, tiny squirt of agave nectar (or a bit of sugar), celery seed or celery salt (or both) and pepper). Yum!!
Megan (The Runner's Kitchen) says
Great looking lunch! I like making salads because you can add all kinds of ingredients for a variety of tastes and flavors. Today I added roasted broc, hummus, and homemade pita chips to my usual veggies. Yum! I’m about to dig in…
Christie @ Find My Weigh says
Kath, I meant to tell you earlier in your post that you mentioned your trip to C-ville, one of the yoga studios on the downtown historic mall has a laughing yoga class on Saturday afternoons. Might be a fun thing to pop into if you have time!
Stacey says
What does that perrier water taste like? is it just carbonated water?? I have never tried it, but am wanting to!
JENNA says

Your food always looks so fresh! Makes me smile 😉

How do you eat 1/4 of an avocado? Do you save the rest? Feed it to the spouse? Toss it? I’ve always wondered…
leslie says

Loving the salad! And that plum looks delicious. I just love all the juicy summer fruit! 🙂

That salad looks great! I so wish I could come to the summit, the travel expenses just aren’t in my budget this summer. I’d love to meet all of you ladies someday!

I would have never have thought to put the salted peanuts on a salad. It looks delicious. I love pecans on a salad so I don’t know why I’m so surprised.

Salad looks great! I always get stuck in the vacuum!
I have yet to try a plum this summer! – and I love them! I’ll have to pick some up at the grocery store this week!

Hey Kath — This is totally random, and I have no idea if your website design is something you actually made, or a template, but I just randomly stumbled across this website:
http://dancebythelight.wordpress.com/
And immediately recognized it as looking like yours. Just thought I’d give you a head’s up just in case!!
Faith says
That salad looks really good! I’ve never had that kind of fish, but to me it looks similar to salmon, which I LOVE!
Holly (The Healthy Everythingtarian) says
That salad looks DEE-LISH!
JessicaR says
Stephanie — I think Kath’s site is based off a certain WordPress theme that people can customize to their needs. So I think that’s where the similarity comes in. 🙂
The peanuts in the salad look SO delicious! Especially with the avocado… yum.
Vanessa (Last Night's Leftovers) says
Great looking salad!
Sabrina says
This looks delicious. I ate something like this for lunch, but instead of trout, it was salmon.
Gina says
I am a new reader, and enjoy your blog. On Saturday I went back and read over 45 of your previous pages.
I love your photographs and recipes. I wanted to know who is your blog host. Thanks!
Mel @ She Runs Brooklyn says
Your salad looks yum– especially the peanut addition.
Salads for lunch have made me sad lately. Since it’s all veggies, I throw them all in, but then im SO FULL. But mentally, i’ve only eaten veggies so I’m snacking at 3pm just cuz.
I’ve had a sandwich yesterday and today and it feels better both in my belly and mentally!
Am i crazy?
Casey @ Double Scooped says
Bah. I must get a better camera!
Sarah (LovIN My Tummy) says
I hate to say it, but I think you have a Hugh Jass right there.
Joelle (Chasing Pavements) says
What a beautiful bowl!! Perfect for a pretty summer meal!
Christina says
My mom’s camera takes pictures like that sometimes when the slide covering the lens doesn’t open all the way. Don’t know if that’s the case with yours, but that’s what it reminded me of!
Meg says
What a great salad mix! That plum look perfect!
Anne K. says

I just put it in a tupperware and eat more the next day.
Stephanie ,
Yeah, I just use some generic theme 🙂 It is shocking when I run across it on the web though.
Gina ,
Thanks! I’d rather keep my host private – unless you can find it out somehow!? Just for site security.

The Food Addicts says
Kath, this salad looks delicious. So simple, yet so fulfilling. I love making salads too – and for some reason, it’s nicer during the summertime – maybe it’s the abundance of vegetables we can choose from!
