Hi ๐
This cold is still looming over my shoulder, but I feel much better after this fantastic lunch!!
Lunch today totally rocked. This sandwich was amazing! The hint of Cinnamon Vanilla Sunflower Butter was just enough to taste over the jam and tempeh. Yum! And these tangelos are the best ever. Even my raw veggies tasted good – I think my body is craving them!
On the menu….
A slice of raw tempeh with Crofter’s Superfruit spread and a thin layer of Cinnamon Vanilla Sunflower Butter ๐
On Flax Oat Bran!
Such a great combo of flavors ๐
I try to get veggies into my lunch box even if that means just throwing ’em in plain or putting a few leaves of spinach on a sandwich.
A juicy, juicy tangelo – my new favorite orange!
It doesn’t look like a huge lunch, but that is a pretty heavy + calorie dense sandwich over there coming close to 400 calories! Appropriately filling though ๐
And added at the last minute for the perfect ending!
Have a great afternoon!
Jenn @ Livewellfit says
I need to try tempeh! It’s time, I can’t ignore it anymore! ๐
Beth @ DiningAndDishing says
i adore hummus/tempeh/cheese sandwiches. i highly recommend the combo!
Joie de vivre says
It looks like a beautiful day, even if it is still cold.
Freya @ foodfitnessandfreya.wordpress.com says
Oooh I so want to try tempeh! I googled it after your last post and it sounds so tasty ๐
I love how ‘normal’ your carrot looks – ie, that it was picked from the ground and so is REGULAR size as opposed to all these crazy baby carrots I keep seeing! The latter look TOO perfect IMHO :p
Have a good afternoon!
Jessica @ The Process of Healing says
Your sandwich sounds good!! I would never think of putting those flavors together… but Crofter’s is indeed quite awesome. ๐ Have a great day!
P.S. So jealous of your job today.. sounds fun!
Jessica @ How Sweet says
I don’t like regular sunflower butter, but vanilla-cinnamon sounds delish!!!
Stef says
biscoff! love it. those are so good. perfect little after lunch treat. glad you’re feeling a bit better, hope the cold disappears completely!
Katie @ Health for the Whole Self says
I just had a similar tempeh sandwich last night, except with hummus. It was also pretty calorie dense, yet extremely filling!!!
Kristen says
Lately I’m completely obsessed with the cashew butter + mega fruit preserves (earthfare) sandwiches. I use homemade pita bread made with white whole wheat flour and they are divine! The adult PB&J!
Christa says
What is tempeh? It looks interesting!
Deanna - The Unnatural Mother says
Your food is so yummy, and so inspired to eat healthy!
Estela @ Weekly Bite says
sounds like a delicious lunch! so sunny too!
Hannah says
Tempeh’s high in protein, right? So that’s an amazingly well-rounded lunch! And your job is fantastic- it must be so rewarding to work in a setting that’s proactive about helping people!
Food Makes Fun Fuel says
I don’t know that I could ever get myself to love tempeh that much
Sarah (Running to Slow Things Down) says
I’m so jealous that you’re eating outdoors on the patio!
Tempeh is delicious, healthy and filling to boot. Your sandwich looks wonderful! ๐
Cole says
That tangelo looks so juicy and delicious.
shannon (the daily balance) says
how is the vanilla-cinnamon flavoring? Does it give it a sweet, dessert like taste? Sounds very intruiging!
p.s. I CRAVE for just a little bit of the sunshine you have! JEALOUS!
sarah @ syrupandhoney says
I just bought some tempeh over the weekend and have never tried it before. Do you think I should try it raw first or ease myself in by cooking it the first few times I eat it? I don’t know what tempeh really tastes like but the other flavors in your sandwich sound wonderful.
Kath says
It really tastes the same raw vs. cooked to me. Perhaps because I don’t marinate it and everything to cook it. I just like the chewy texture and find the taste to be very neutral. Just take a bite and if you hate it raw put some kind of strong sauce on it!
Liz says
Funny — I tried tangelos for lunch today too and thought they were so delicious! I had never had one before — definitely my new favorite too!
Ally (Exercise and Pies) says
Tempeh is amazzzzing! I’m loving the fresh look of lunch, makes me a tad bit hungry for lunch myself!
Allie (Live Laugh Eat) says
I can’t frickin’ wait for that sunflower butter to arrive on my door step!!!!!
Jil says
Crofters jam just sounds amazing…I have seen it everywhere lately…I’ve gotta get on that.
Christie @ Honoring Health says
Hope you are feeling better soon!
I’ve said it already but I will say it again. Your little table signifies spring/summer and I am SO happy to see it.
Allison (Eat Clean Live Green) says
I’m so happy to see your food outside again… spring is in the air!
I’ve never thought of putting Tempeh on a sandwich… interesting!
Tara says
Sadly I’ve never had a tangelo but i think i must!
Anna @ Newlywed, Newly Veg says
Lol– that sandwich looks so plain and sad from the outside! But I bet it tasted amazing! ๐
Heather (Heather's Dish) says
tempeh scares me!!! but the sandwich sounds good anyway ๐ i just wonder about the texture and temperature…
i hope you’re feeling good the rest of the day and have fun with the health promotion stuff! ๐
Sarah Ikegami says
I LOVE tempeh! I use it for all kinds of things, salads, stir fries…I even put it in a bowl of savory oats with spinach, miso and an egg this morning!
Have a sunny day!
Lauren @ Eater not a runner says
I still haven’t tried tempeh but I do have to say that sandwich sounds delicious ๐
lynn (The Actors Diet) says

Bree@beeskneeslife says
I would have never thought to try tempeh raw with a sweet companion. Thanks for the idea!
Meg @ Be Fit Be Full says
I just picked up a few tangelo’s yesterday. I haven’t had them in a looong time! Tempeh scares me. I’m not sure why though??
Nutritious Foodie says
That’s a nice lunch
Heather says
did you eat outside? looks like a nice day!
Hillary [Nutrition Nut on the Run] says
I’m with ya about having veggies for lunch. I’m currently sitting here munching on a bag of raw cukes, carrots, and cherry tomatoes =]
Q: What is tempeh?
kate says
im so jealous that you get to be photographing outside and enjoying spring like weather ๐ tangelos are also my favorite citrus! yum!
jaclyn@todays lady says
Your lunch looks so good to me right now. I just finished my own lunch and feel as though I could eat that sandwich! It’s one of those days for me where I’m constantly hungry!!
Susan says
I love tempeh-nut butter-jam combos! People don’t seem to understand how freakin’ amazing it is! Kudos Kath!
Allison K says
I need to try the tempeh-nut butter-jam combo!
Jentree says
I LOVE tempeh!
Everything I have read about tempeh suggest that it NEEDS to be steamed or cooked for 20 minutes before eating…
Do you have a link to some information that explains otherwise? Thanks!
Kath says
I emailed the company last year to confirm and got an email saying yes, indeed, it can be eaten raw.
https://www.katheats.com/end-with-breakfast/
Jentree says
Wow, thanks! I think I’ll give it a try…much easier to bring for lunch when I don’t have to cook it first!
Megan (bites of the apple) says
Last night I got a tangelo and a blood orange from WF to compare…the tangelo DEF won, although I wish it were less seedy.
tempeh gives me the heebie jeebies!!!
Paige(Running Around Normal) says
Sounds like a fun day at work!
What are you eating on? I love the back drop for the lunch photos! haha
Tempeh and nut butter and jam? Can’t say I’ve tried that combo, though I am intrigued!
Sarah (OC2Seattle) says
Yeah, tangelos!
Heather @ Get Healthy With Heather says
Never tried tempeh before and wouldn’t think to combine it with jam and nut butter… What an interesting combo! How’d you try tempeh for the first time?
Lisa @bakebikeblog says
Great looking sammie – however I just can’t manage tempeh. I have tried – but to no avail ๐
Stacey says
I am soooo hitting up Great Harvest while I’m in Charlotte this week! Glad you are liking WIC ๐

Tania @ Moment Anew says
What exactly does tempeh taste like???

Never tried a tangelo – will keep an eye out at the shops for one to try
Sam (Merit to the Carrot) says
It’s so great to see some outdoor dining back in the KERF casa. I love raw tempeh on sandwiches!
Leena says
yum! i absolutely LOVE tempeh! i think it has so much more flavor than regular tofu! I’ve never tried it raw.. but your sandwich sounds delicious!
Simply Life says
that bread looks like it’d make any sandwich taste amazing!
Kath says
GUYS: We have had a gross rainy day here in Charlotte and I ate at my desk!!!!! These photos were taken yesterday when I packed my lunch to get some good photography. I WISH I was eating in the sunshine!!
TEMPEH: Tastes very neutral so don’t be scared. It’s kind of like old bread would taste – but in a good way. If you put peanut butter on it it will taste like peanut butter!! Give it a try. You have nothing to lose!
Katherine @ localvoracious says
Wow does that sunflower butter sound good! Going to have to get myself some ๐
Daniel says
The sammich looks pretty good. I was wondering though, is your Flax Oat Bran bread 100% whole grain? And if so, is it still soft or a bit dry? Just going from experience it’s kind of hard to find a completely whole grain bread that still has a nice sandwich texture. I find Ezekiel to make good toast but kind of on the dry side for sandwiches.
Nature’s Pride does have a good and very soft 100% whole wheat bread but by the sounds of it, something like Great Harvest only has 5 ingredients or so and I’d prefer as few ingredients as possible!
Kath says
It is not dry AT ALL!! So so moist – the best part about it. Chewy and doughy and moist. You must find a GH! And yes, most of their breads are 100% whole grain.
Ashley says
Ooooooh what a fabulous samich idea!!! So quick + easy too! I would have never thought of that combo. mmmm Speaking of strange combos I tried out the LIME chocolate chip cookies from mama pea’s blog! I think the altitude messed with the recipe a bit…but the taste was weird yet somehow satisfying haha
Cynthia (It All Changes) says
I love when a simple lunch can be really filling.
Kristilyn (My 29th Year) says
I really have to give tempeh another try! I had it once over a salad and wasn’t a huge fan of it, but maybe I’ll try your way – with some nut butter and jam. ๐
I try to get my veggies at dinner most of the time, or I make a Green Monster for breakfast, OR I’ll bring chopped up veggies with hummus for lunch. It’s usually only a once-a-day thing, though.
