to rain and the end of a long, fun weekend.
to a sunny forecast and a beach trip on the horizon.
to a fridge that is low on fresh foods.
to a delicious breakfast anyways.
I filled my bowl with Siggi’s Drinkable yogurt, a whole sliced banana, Whole Foods Honey Bunches, chia seeds and sunflower butter generously drizzled on top.
Pumpkin Spice tea to pretend it’s fall
Anyone have a pocket full of sunshine?

Pumpkin tea sounds like a good choice on this rainy Monday. I actually opened my last can of pumpkin the other day. I was craving fall apparently!

Beach sounds fun! We’ve got a super sunny forecast coming up this week so I’m hoping for lots of after-work walks and time to spend with friends outside. Happy Monday!

Your sunflower butter looks especially drippy and delicious this morning!

I am unfamiliar with chia seeds. Can you explain why you use them, and what they are please?
Thanks, and your photos are beautiful ! 🙂
KathEats says
Thanks!
I use chia seeds for their texture, although the boost of nutrition is an added bonus. They have protein and omega-3s in the form of ALA. The texture is like sprinkles when you put them loosely on top of something and they gel in water (or oatmeal!) so they provide a thicker texture.

When is your beach trip?! So fun!
Dreary Mondays are the worst…it’s hard enough to get up and be productive, without the rain adding more deterrent, haha!
KathEats says
Mem day weekend!
Averie @ Averie Cooks says
funny about the pumpkin spice tea…I was thinking about making pumpkin cupcakes the other day!
Angela @ Happy Fit Mama says
If you find the pocket full of sunshine, can I borrow it? It’s gray and rainy here, too. Boo!!! Monday’s are extra hard when it’s raining.
Susan H. @ The Food Allergy Chronicles says
Thankfully it is lovely and sunny here in Southern Ontario…it is Track and Field Day at my son’s school. Having a quick lunch and have got to head back now! I love this part of being a mom!

Hey Kath,
Do you store you Trader Joe’s sunflower seed butter in the fridge or just store it on the counter top?
I love how drippy it is when you first open the jar but after it sits in the fridge it looses the drippy effect. I want to leave it on the countertop but on the side of the jar it says refrigerate after opening. Thought I’d ask if you’ve had success leaving it on the countertop. Thanks!!
Have great day! 🙂
KathEats says
I store it on my countertop. I think the fridge recommendation is just to prevent oil separation, which isn’t a problem if you just give it a stir before dripping it on
Amanda @flecksofgreen says
I think I have a pocket full of sunshine–but it seems as though that is the only place the sun is shining today! A gloomy day does not mean gloomy food! Your pictures are always far from gloomy. Though there might be sunshine in my pocket, there is definitely sunshine on your tabletop!
KathEats says
Please email it to me ASAP!
Amanda @flecksofgreen says
If only it were that easy! Then we would never have a cloud in the sky 🙂
Taylor says
OMG, I am crazy about sunflower butter. I put it on everything and I have been known to go through a jar in a week, without the help of my husband who doesn’t like the color. Thumbs down to him, up to the sf-butter!
Fran@ Broken Cookies Don't Count says
We could use some sunshine here in NJ also. Way too many dreary days!
Lexi @ You, Me, & A World to See says
Pumpkin spice in may? I can be down with that 😉
