Off to a good start this Friday! Getting up to workout was easy (I woke up dreaming, which is usually an indicator I got enough sleep). The husband joined me (which is always more fun) and we were on our way 20 minutes later. My workout consisted of: bike, bike, bike – three time’s a charm! Biked there, did 45 minutes of cycle class and biked home. It was quite cold out there this morning. I had to wear a jacket – and could have used some gloves too for the wind speed of going fast!
Continuing the charm theme, I had the same bowl of oatmeal for the third day in a row. Sorry to be boring, but t’s just that good! I usually switch up my mixes – adding different mixins and a toppings, but this week all I wanted was the following:
- 1/3 oats, 1/3 milk, 1/3 water
- 1 small banana (double banana style)
- Pinch salt + vanilla bean paste
- Raisins
- Wheatberries
- Granola plank
- Spoonful PB
Plus a coffee with milk and a tbsp of Nesquick for a little chocolatey flavor
Let’s hope I can continue to momentum with a stellar first organic test – yikes!!
I’ve got a light weekend study-wise, so I’m excited to celebrate the fall weather and relax a little. We don’t have any plans, except maybe something on Saturday night, so I’m planning to rent a movie tonight. And bake banana-walnut bread. I’d love recommendations for both!!
I love historical + dramatic films with creative cinematography like Atonement, The Queen, There Will Be Blood and Amazing Grace. But I also loved The Holiday and some favorites include The Notebook and Serendipity. Has anyone seen The Painted Veil?
And am looking for a low-fat but tasty banana bread recipe.

Do you like pumpkin? Because I’ve found a couple good banana-pumpkin breads, which to me, far surpasses the simple banana bread.
If you need a recipe, you should find a pumpkin patch of the most sincere variety. Then, around midnight, the Great Pumpkin flies along, giving low-fat recipes to all the good little boys and girls.

I just made this banana bread recipe but replaced the butter with half canola oil and half applesauce. It was delicious!!! And this recipe calls for less sugar than most recipes (which sometimes call for 1.5 cups for 1 loaf!!!) The bread was most, very aromatic and delicious.

oh, i loved atonement — such a well done, interesting movie. one of my favorite movies is stranger than fiction if you haven’t seen it, and i agree that waitress was great (and awesome food shots in it, too!). i saw darjeeling express pretty recently and liked that too although it was weird!

Applesauce Banana Bread Recipe #151301 (recipezaar.com)
1¼ hours | 20 min prep
SERVES 8 -10 , 1 loaf
4 bananas, ripe
1 cup sugar
1/2 cup applesauce
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
2 cups flour
Preheat oven to 350.
Place bananas in a large bowl and mash with electric mixer.
Stir in sugar and let stand 15 minutes.
Add applesauce and eggs and beat well.
Add remaining ingredients and mix well.
Pour into greased 9×5 loaf pan.
Bake for 45 minutes, or until wooden toothpick inserted in center comes out clean.
Remove from oven and let stand 10 minutes before removing from pan, cool on wire rack.
Seriously… this bread is to die for!! I like to make a little strusel topping with walnuts, brown sugar, butter and spices. The BF likes this better than the bread I used to make with butter!!

I would (and/do) always sub yogurt for the fat in banana muffins (I always make mini muffins instead of bread.) I have a good recipe, but it’s similar to all these others. I always use Egg Beaters w/touch of yolk, too. I also use a whole grain flour, sometimes oat flour, graham flour and/or whole wheat pastry flour.

Hi Kath and everyone. If you haven’t seen it yet, I really think you would enjoy PS I love you. It got beautiful scenery in Ireland and is extremely moving. Basic storyline- Hillary Swank is widowed and her husband left her a series of letters to be delivered at different dates after his death. It is extremely moving, not a totally sad movie, there are a lot of ectremely funny parts. Its stars Hillary Swank, Kathy Bates and Feebee from friends. I hope evryone has a great weekend.

This is a great banana bread recipe! It’s made with yogurt and I have substituted half the flour for whole wheat with success, so I think you could definitely use all white whole wheat flour.

A great movie that I just saw (even though it’s older) is “A very long engagement”. It is in French and all subtitled but it’s a beautiful movie. It takes place from 1917-1920 and it has the same female actress as “Amelie”. Everyone should watch it-it’s a wonderful movie!

Your body starts going into starvation mode if you dip much below 1200 calories per day. In other words, it holds onto the things you do eat because your body doesn’t know when it will get fuel again.
The other SIGNIFICANT reason why you shouldn’t dip below that number is that it is nearly impossible to get your daily allotment of nutrients/vitamins/minerals.
You are correct that metabolic rates DO vary, along with caloric needs, but not below that level.

Memoirs of a Geisha is a good one. Admittedly, the book is better, but the cinematography and soundtrack are amazing!
I also really liked The Namesake. I loved the book, and I thought Mira Nair did a great job of capturing its essence.
The Power of One is also a favorite – old movie (early 90s?) set in apartheid South Africa. Great story, cinematography, and soundtrack.

Bake a little whiskey into your banana bread…. the alcohol with mostly burn off during baking but there will be a slightly nutty flavor left. Also if you want you can soak a little into the bread… there will still be alcohol but the flavor is a little more intense. I recommend Jameson or Crown Royal

How strange! I am reading the Other Boleyn Girl and its utterly fantastic, I’m loving it!!! Haven’t seen the film but can’t imagine it living up the book. I have become obsessed with the Tudors (due to the book and also there is a tv series on in the UK called the Tudors all about Henry VIII) and had to go to the National Portrait Gallery the other day because I wanted to see what they all look like! So….. I would definitely recommend reading the Other Boleyn Girl (by Philippa Gregory)

Here is my banana bread recipe – but I make them into muffins. Each muffin (or 1/12 slice if you make it bread) is 121 calories, 1.25 fat, 23 carb, 2 fiber and 4 protein:
4 medium bananas
1 cup all-purpose flour
1/2 cup whole wheat bread flour
1 cup splenda sugar
1 tablespoon softened butter
1 tsp. vanilla extract
1 tsp. baking soda
1/2 tsp. baking powder
1/2 cup liquid egg whites
1/2 cup greek plain yogurt
cinnamon and nutmeg pinches
Mash bananas in a bowl. Add all other ingredients and mix well. The bread takes longer to bake, about 50 minutes. The muffins take 20-25.

Bananas leave such a sweetness of their own that I don’t think a loaf of bread needs 1 cup of sugar (or splenda). I only use 1/4 cup sugar and sometimes use xylitol (have you ever used xylitol, Kath? It’s a natural sugar alcohol and looks just like sugar.) and it’s still great and sweet.
Ooh, The Power of One IS an excellent movie, I’d forgotten all about it.

I would skip the movie and instead read The Other Boleyn Girl. The husband would probably find the movie a little slow, but you would LOVE the book (side note Phillipa Gregory the author of The Other Boleyn Girl is coming to Boulder and I get to go to her reading!!!!!).

Feel free to sub whatever milk you like for the buttermilk – it’s just what I had on hand. And I’ve also used 2 egg whites instead of 1 egg and it comes out just the same. I like to sprinkle in either crushed peanuts or a crushed up dark chocolate bar but this is great without the addins too 🙂

Wow guys, 1 cup of sugar or 1 cup of Splenda makes for a very sweet bread. If the fruit is ripe try cutting the sugar content in half, you won’t miss it. I really like the recipes with buttermilk or yogurt as well.

I would also recommend Blood Diamond (I agree, thought provoking and a good guy movie), The Jane Austen Book Club (great ensemble cast. I loved Kathy Baker in this one), and Dan in Real Life (another great ensemble cast. Steve Carrell is good in this). All are great but very different.
And are y’all talking about Pride and Prejudice with Keira Knightly? I HATED that one. The plot was so different from the book and not in a good way. The BBC version with Colin Firth is SO much better. Granted, it is 6 hours long. 🙂

Okay…this is the best banana bread EVERRRRR!!!
Ingredients
Combine in a large bowl:
• 2 cups whole wheat flour
• 1/2 tsp salt
• 1/2 tsp soda
• 1 tsp baking powder
Combine separately:
• 3 lg very ripe bananas (about 1&1/2c) – mashed
• 2 eggs
• 1/2 cup honey
• 1/2 c milk or substitute
• zest of a lemon or orange (optional)
• 2 tsp vanilla or 1 Tbsp dark rum
• Mix wet and dry until just incorporated.
• Optional: Fold in approximately:
• 1/2 c chopped walnuts or pecans
• 1/3 – 1/2 c dark chocolate pieces
• 1/2 c chopped dates
Directions
1. Pour into a generously greased and dusted loaf pan – any smallish pan will work.
2. Bake at 350 for about 50 min – a toothpick inserted in center should come out clean.
3. Wait 10 minutes before removing from pan and placing on a rack to cool.
4. Enjoy 🙂
It is very good with chocolate chips and thaws well when frozen. Makes one loaf, about 16 127-calorie slices.

I don’t think HT has wheatberries. I’m not a huge fan of bulgur – it’s too small in texture so it’s not really chewy. But it’s good as a side dish. I definitely think you could try it in oatmeal and see how you like it.

Mmm banana bread! I have 2 ripe bananas that need to be baked into something at the moment, so I’ve already been percolating ideas along this line.
I found this Betty Crocker recipe while nannying one day and wanting to bake something healthy with the kids. It was easy, low fat, and tasty.
This is my new favorite banana-y bread, though. It’s actually more of a zucchini bread, but is soooo moist and delicious.
