Carrots | Apple | Sandwich
All the bases are covered! Three lunchbox components that are easy to pack, filling and delicious:
I made a sandwich with black bean dip and goat cheese – plus a little spinach for green color!
Carrots and apple equal more healthy, colorful produce and a bit of crunchy fiber.
Just got to Gram’s! Made a pit stop at IKEA for a few essentials I’ve since realized we need (closet rail, light connecter, one more drawer..) Trip went fine except I. Hate. 495!
See you soon!
katie @KatieDid says
Yum, simple lunch that travels well! Glad you trip went smoothly, enjoy your visit!
Averie @ Love Veggies and Yoga says
Glad you made it to Gram’s and survived both an Ikea pit stop and the Interstate. Hopefully you can cut back on trips to your second home, i.e. Ikea, now that you’re getting a bit more settled in the new house. I always find I live at Bed Bath & Beyond the first month after I move into a new place…haha!
Angela @ Eat Spin Run Repeat says
Haha you and me both!! I love that store! And it’s a good job there’s no Williams Sonoma or Crate & Barrel nearby.. that’d be bad news for my wallet!
Liz @ Southern Charm says
Loving that sandwich … I think I may have to add one for my lunchbox component tomorrow.
Cait's Plate says
Have fun at Gram’s! And I agree – those are DEFINITELY the lunch essentials – those are my go-to packed lunch items 🙂
I think I might steal your wine rack idea – we need one and I loved yours! You got it at IKEA right??
KathEats says
Yup!
Cait's Plate says
Yay! Thanks! 🙂
Ellie@fitforthesoul says
The bean dip sounds pretty delicious~I think I’m hungry now, good bye. 😛
J @ Ess and Jae V2.0 says
Wouldn’t it be great if every kid had this in their lunch box? I pretty sure this is what I ate when I was in grade school. There might have been a cookie or two on gym days, but mostly it was healthy. Did you eat this way in your lunch?
Khushboo says
Sounds like my lunch tomo…only diff is my sandwich filler is Pb & tofu!
Lauren says
I think you’re going to Baltimore, right? Coming from Richmond you could take 295 all the way up once you cross the Wilson bridge into Maryland. Then it hooks up with 695. No need to deal with 495! Signed, A Baltimoron who hates traffic
KathEats says
Oh that’s good!! Is there a good way to get from Towson to Charlottesville without getting on 95? That would be ideal!
KathEats says
(Or I-66 which is worse!)
Bridget from Richmond says
Hi Kath,
A fun (but about an hour slower) way to get from Towson to C-ville could involve White’s Ferry: http://en.wikipedia.org/wiki/White’s_Ferry. I have fond memories of ferrying with my Dad on weekend adventures when I was a kid. The road between Towson and the MD/VA state line at Leesburg should be discussed with someone who knows the area well (for example, stay off 270 and 370 and North of Gaithersburg, MD if you can) but it should be scenic and a fun challenge for your navigator. Bonus: you can hit the outlets in Leesburg on your way home!
KathEats says
Hmm…an hour more or 495 – that is a tough call! I’ll have to look more closely at a map 🙂
Anna @ On Anna's Plate says
I love fresh, crunchy carrot sticks 🙂 Have fun with your grandmother!
Sarah @ Sarah's Modern Bites says
I have been having carrots with my lunches for weeks now… something about them just sounds so good to me lately!! Beautiful pics!
Enjoy the time with your Gram! <3
Dana says
NOVA traffic is the devil.
(thankful I live in Richmond)
Heather says
Kind of random but let me know if you want to go to an evening hot yoga class in Towson! I know a great place www.lifelinepoweryoga.com
KathEats says
Oh I would have LOVED to but I’m almost always busy in the evenings when I visit here. Maybe sometime on a future visit I could go on my way in or out?

495 is the worst — spent a year commuting around it every day and drove myself nuts. Now I walk 15 minutes to work and it’s glorious! 🙂
Ashley @ Coffee Cake and Cardio says
Poor 495, he has no friends.
Hope @ With A Side Of Hope says
I’m glad that your drive went well! 🙂
That sandwich looks tasty. I love carrot sticks. They are the perfect snack when you want sometihng crunchy. Have fun with your family! 🙂
Lea @ Healthy Coconut says
You hate the 495….we here in L.A. hate the 405 freeway. That’s where carmageddon happened 🙁
Annette @ EnjoyYourHealthyLife says
Wahoo! I LOVE that kinda lunch. SO tasty, so filling, so healthy, so easy, so pretty 🙂
Caroline says
I had that exact same lunch today, except my sandwich was a pb & j. It’s the perfect lunch to eat between classes.

Apples and carrots are such great food staples! i am obessesed with both!
PR_Cal says
I love these kinds of lunches! I pretty much do this everyday, but switch up the fruit, veggie and sandwich types. Always easy, always healthy and always prevents me from heading out to spend $

You and IKEA are becoming best buds! 🙂

Glad you made it safe! Have fun!
Jen@FoodFamilyFitness says
Sometimes a simple lunch is the best lunch! I had a peanut butter sandwich and an apple over the weekend, minutes to prepare, but delicious and filling 🙂
Natalie the Awesome says
What kind of Apple is that??? looks yummy! 🙂
KathEats says
No idea!! But it was crunchy!
Elisabeth says
I love a good, crunchy apple – the mushy/mealy ones are so gross (AKA red delicious…) – guess that’s why Granny Smith are my fav 🙂
Katie @ Peace Love and Oats says
I literally eat an apple every single day of the workweek. EVERY DAY. Why? they are the perfect snack! I slice them up and put them in a baggie so that I’m not obnoxiously munching on one in class! (aka having juice drip all down my hand…)
Heather @ Get Healthy with Heather says
I love how you put this together… The 3 separated + the 3 words… Very cool Kath 🙂
kathleen @ the daily crumb says

This is absolutely horrible!!
Kiran @ KiranTarun.com says
Have fun at Grams! And hope you didn’t get caught too long in the traffic.
I love Ikea – it’s so difficult to window shop whenever I visit 😀
Chelsea @ One Healthy Munchkin says
Sandwich + carrots + apple is actually my ideal lunch trio too. That’s what I pack to take to campus with me almost every day!

Thanks!! We have Great Harvest here so I’ll check it out! Love your blog!
Bridget says
Your lunch made me laugh (and made me feel validated!) cuz that’s pretty much what I send to school with my kids everyday for their lunch — sandwich, carrots, apple. Not too exciting, but something we all agree on.
