Car trip!! Such a longer drive that I remember. Thanks to Matt for driving!
I got some writing done on my laptop and am about 60% of the way through She’s Come Undone. It’s one of the most well-written stories I’ve ever read. Dolores is soooo complicated, and the plot just keeps changing!
FOOD.
Back in our lovely house, I unpacked while Matt made dinner! Another thank you!
Before we left on our trip, I pulled some wild Alaskan salmon [from Whole Foods] from the freezer so it would be ready for tonight’s dinner. Matt pan-seared it and oven-finished – it was great! We should have this once a week for both the flavor and nutrition!
We also had a wonderful pile of roasted sweet potato, parsnip and broccoli (the roots got 40 minutes at 400* and the broc, half that)
And tasted the German bread – good, but best with butter : )
Dessert was the last of the Ginger Elizabeth Lime + Coconut Chocolate Grace sent me earlier this year. I LOVED this flavor!
Allie@LiveLaughEat says
Your chocolate portion sizes are ant-like compared to mine 🙂
Mom says
Matt’s shirt goes nicely with the cloth napkin!
Cait's Plate says
I was going to say the exact same thing! Great minds think alike 🙂
Also Kath, that bread + butter looks just scrumptious!
Glad you’re loving She’s Come Undone…I read it years ago and it is still one of my favorites to this day.
Roxanne says
I prefer to believe that the napkins were sewed from the back of Matt’s shirt … just for this photo! That’s why you have that awful strange grin on his face, his backside is feeling a draft!
KathEats says
Haha
Mom says
Except that sure would make Laura mad as they just gave him the shirt for Christmas!
Lena @Fit on the Rocks says
How sweet of him to drive AND cook. That makes the crockpot meal I have bubbling away look like crud lol.
Kinley @ Better Off Barefoot says
That chocolate sounds very interesting!
heather @ run eat play says
Your salmon looks wonderful – I wish mine came out looking like that.
I read She’s Come Undone a couple years ago and I wasn’t really a big fan of it, even though I agree that its well written.
Erika - The Teenage Taste says
By the looks of it, Matt seems like an excellent cook! Maybe he should start a blog…Matt’s Meals has a nice ring to it! 😉
KathEats says
Haha! He used to cook a lot more – esp. when I was in school – but now I’m the chef since he’s the later worker at the bakery. But his meals are really good!
Kelli H (Made in Sonoma) says
Dinner looks tasty!
Clare @ SweetnSimple says
Love love love salmon! Your dinner looks soo yum.. Interesting flavour of chocolate too, would be keen to try 🙂
Kathy S says
I thought it was illegal to drive with headphones on — very dangerous too!
Potatoes look good!
Allison K says
Don’t know if it’s illegal, maybe depending on your state? Buy DEF dangerous.
Anne says
I agree. It seems rather dangerous to drive while wearing headphones, even if the volume is low.
Roxanne says
Definition of :
A headphone, earphone or earbud may only be used in one ear, and only if it is part of a hands free telephone function. Using it for a function other than hands free telephone if the device is capable of another function in addition to the telephone is prohibited.
It would appear from this that an in helmet intercom system for motorcycle riders would be allowed if sound is only delivered to one ear.
So Matt, find out what your state says about it… Better be safe than sorry.
Krissy - Shiawase Life says
Pretty opposite of my day…drove us to Short Pump, drove us back and made dinner, had to clean up…etc…blah…
dana says
She’s Come Undone is one of my favorite books!
Stephanie @ On the Road to RD says
That chocolate sounds delicious! Yum!
Emma Ruth says
i love that book! it really is an interesting story.
question…. do you ever use frozen broccoli or always fresh?? i only cook for myself and find i can never use all of my fresh broccoli before it goes bad. does frozen have less nutrients?
KathEats says
Always fresh, but for no good reason. Frozen likely has 98% of the nutrients
mel says
I like the texture of fresh better. Frozen broc grosses me out for some reason but I love frozen peppers, onion, corn, peas, etc in things!
Katie @ Peace Love & Oats says
What a good husband! And I really need to eat more salmon, although I do try and put chia seeds in a lot of my food for the omega 3s!
Grace says
Roasted broccoli – I do not know why I have never thought to do that before. And I’m lovin’ Matts mongo slice of bread! So funny, and I finally made Ginger Elizabeth truffle cookies this afternoon! Glad you enjoyed the bar 😀
J3nn (Jenn's Menu and Lifestyle Blog) says
The salmon looks divine! Props for pulling off another fab dinner immediately after returning from a trip. You have busy down to a science. 🙂

Looks like a yummy meal.
And Kathy S. is correct, it is illegal to drive with earbuds in both ears–hope he only had one in.
Susan H. @ The Food Allergy Chronicles says
Had salmon last night…great poached in ratatouille…quick and easy when you already have the ratatouille frozen in the freezer…just added some little potatoes and steamed brocolli…yummy! I also love to finish off the evening with a couple pieces of chocolate. The perfect touch of sweetness!

I love the relationship you have, so precious :)!

Mmmmm I was just craving salmon! You always read my mind somehow. I can’t believe you can do all that in a car! I know that I’d get super carsick and then you know what~heh.
Annette @ EnjoyYourHealthyLife says
I LOVE a crunchy apple–looks tasty!
liz says
Great blog & I love that She’s Come Undone too. Read it way back when I lived in Charlottesville. And yes please to salmon! Just a quick tip: To get rid of the white stuff (albumin), you just need a little salt brine!

His second book, I know this much is true, is also very good. I didn’t care for the last one that he put out though. I can’t remember the name.

I love salmon, but have not had it in a long time! I need to buy some sometime.

Lexi @ Cura Personalis Foodie says
Mmmmm salmon is the best! I wish it wasn’t so expensive, but I love it nonetheless 🙂
Roxanne says
I wonder if you ask the store to cut it into a smaller piece (they’re always so huge) so you won’t have to pay so much?
Lynn @ the actor's diet says
I read that book over a decade ago – remember loving it!!! Would be nice to revisit again.
Tiffany says
You two are such a cute couple 🙂
Kathy W. says
that would be my perfect dinner…down to the chocolate.
Averie @ Love Veggies and Yoga says
Glad you guys made it back and I cannot read in the car. Maybe a sentence or two at a stoplight of my email from my iphone but I could never just dive into a book on a screen like that. Recipe for carsickness. More than you need to know but Im envious of you that you can do it!
Tami@nutmegnotebook says
Salmon is one of my favorite fish meals. Was your chocolate from Ginger Elizabeth’s from Sacramento Ca? I love that little chocolate shop!
KathEats says
Yup!

Except for the parsnip chips, I had the exact same meal for dinner last night! Salmon always feels like a treat!
Stacy @ Say It With Sprinkles says
Welcome home!!
Rosie says
Happy to see the Ginger Elizabeth mention. She’s a hometown girl with a fantastic chocolate shop here in Sacramento. Apparently Santa thought I was a good girl this year because I got some lovely items in my Christmas stocking from her place that I am still nibbling on. Enjoy!
Katie says
Love the Whole Foods frozen salmon!!! I’m down in Blacksburg (with no WF), so we drive up to Charlottesville every other month for a big shop 🙂
Fran@ Broken Cookies Don't Count says
It always feels good to get home after a road trip, doesn’t it?
Roxanne says
My mom cooks salmon in coconut milk and there is no fishy smell to deal with after! Try it!
Emily says
That salmon looks delicious. Where did you get that cute red mug, though? It’s adorable!
KathEats says
It’s a Davidson mug!
Hilliary @Happily Ever Healthy says
That salmon looks delicious! Such a sweet husband for making dinner!
Allison says
Dinner looks delic and bet it tasted even better knowing your man cooked it for ya! A taste of chocolate is the best way to end a night… I’ve been loving the Ghiradelli Peppermint Bark with Dark Chocolate left over from Christmas- it’s so hard to just break off a square or two 😛
Willow @ My Own Trail says
She’s Come Undone is one of my all time favorite books! I occasionally teach Intro to Women’s Studies as an adjunct, and I always assign it as one of the readings for the course.
Rebecca @ Naturally Healthy and Gorgeous says
Salmon looks great and is so healthy!
Sara says
Thinking of heading to the closest Whole Foods this weekend. Does the salmon you buy come fresh or frozen?
KathEats says
Frozen
Molly @ RDexposed says
How long was the salmon seared for..? I need to do this with our salmon!
KathEats says
I think like 5 minutes on the first side, then flipped, then roasted for 10 mins
Alyse says
Dolores’ conversations with the shrink are great. She fights him so hard. The second part of the book is my favorite, when she starts to “get better”. 🙂
Emily says
I LOVE LOVE LOVE that book. I think I have read it five times or more.
Kavi @ Lab to Fab says
You just reminded me that I have Whole Foods wild Alaskan Salmon in my freezer too! Guess I know what I’m having for dinner tonight : )
