Long time, no scuffin!!!
Also long time, no sleep like last night! I slept WELL! Although my hips/butt/glutes were at an all-time low in terms of pain and ache early this morning, my eyes stayed shut most of the night. I’m well rested today – baby did you hear that!?
Matt brought home this Berry Cream Cheese scuffin from the market last night and I was excited to incorporate it into breakfast. Our scuffins have only gotten better over time as our bakers have mastered their skills! (Scuffin = scone + muffin hybrid!)
I crumbled about 1/3 of it into a bowl layered with a cup of greek yogurt, a chopped peach, a sprinkling of raw oats (for more fiber/whole grains), chia seeds and a spoonful of Big Spoon Peanut Almond Butter.
Served with tea, in the nursery, for good luck!
I probably should have had a big bowl of oatmeal today because the famous Meal Makeover Moms, both RDs who run a fantastic website, interviewed me all about oats in their latest podcast! Check out their blog post here and the podcast here!

Mmm, scuffins. Sounds like a must try! I love that you ate it in the nursery! Fingers crossed for a special delivery!
Ashley @ Coffee Cake and Cardio says
Oh man, that looks awesome!!! I think a scone/muffin combo is just about perfect. I do love scones though.

The good news with late pregnancy aches and pains is that as soon as you give birth, they are totally gone! I remember in the hospital, even with the recovery, feeling so much more like myself and so much more mobile just not being pregnant any more. I dropped something under my hospital bed and was amazed that I could get on my hands and knees and reach it without feeling ungainly at all. Even with my body healing, I felt a million times better almost instantaneously.

It was pushing 7am here on the West Coast and with no post up yet I was sure you had gone into labor last night!

Sending positive vibes your way. Being on pins and needles is never fun for soon-to-be parents. Towards the end my husband was always thinking the phone was ringing to tell him it was ‘go-time’.
Angela @ Eat Spin Run Repeat says
Oh my, that sounds goooood! My sister lives in London and is quite the baker, so next time she comes I’m getting her to make me some scuffins too. Keeping fingers crossed for the baby today! 🙂
Laura says
hang in there, kath!! when is your official due date again? and have you discussed inducing or c-section options yet?
KathEats says
Tomorrow!
No talk of induction

Hope @ With A Side Of Hope says
I love that scuffin! It looks so good. 🙂 I wouldn’t mind having one of those for breakfast. I can’t believe you are due tomorrow already. I feel like you just announced that you were pregnant! Time really flies.
Alison says
That almost looked like blue cheese crumbles!! Glad it was just scuffin.
Brie @ Coxswain Dilemma says
Sending good luck your way!

I remember with my first baby (born 5 days after due date), I starting sitting in her nursery all the time. “Come on baby. Isn’t it pretty? Don’t you want to come out and see it?” Enjoy the last little bit of being pregnant! Though I couldn’t wait to hold each of my three babies, I found that each time a tiny part of me was sad not to be pg anymore. They’re so much easier to care for when they’re on the inside 🙂
Rachel says
That scuffin looks great! I’ve never heard of them before lol

That bowl of goodness looks fantastic. It’s loaded with all those energizing bits of goodness that you’re going to need… hopefully very, very soon. I just can’t wait for the little one to arrive!

well I hear oats are great to eat when breastfeeding, so maybe it’s best to take an oat break now if you’ll be eating lots of them in the future!
