Minus Frodo + Gollum!
I got a lot of my tasks complete today – tomorrow I just have some writing to do. I need one of those audio programs to talk my words!
We had a super late lunch so I didn’t really need a snack, but when we put dinner in the oven I snack on a handful of these babies
Dinner was a baked feast –
Two Tofu Towers. This was a block of firm tofu marinated briefly in Nakano rice vinegar, tamari, honey, brown sugar, garlic powder, and red pepper flakes. More details coming in the form of a VIDEO on one of my favorite blogs in a few days 😉
On the side was roasted asparagus tossed in canola oil, salt and pepper
And half a tiny sweet potato drizzled in ketchup.
It was a good one!
Matt and I are halfway through Out of Africa. No, I’ve never seen it! I still can’t believe I went to Africa and back – it feels like a dream!
I’m going to do some blog reading and then book reading in bed. Nite!

Try marinating it in sesame oil, soy sauce, 1/2 jalapeno pepper and fresh ginger. Very good. Do you prefer canola over olive oil?

Adi – just a thought, but do you drain the tofu before you bake/fry it? Without draining, tofu has so much liquid in it that it often stays kind of “wet” and may not be that appealing. Try placing the block of tofu on some paper towels, with a cutting board on top of the tofu, and put some weights on top of the cutting board (a couple of cans of beans or a heavy book will do). Leave it for at least 15 minutes, and there should be a lot less water in it (you can even leave it in the fridge overnight). 😉 If you don’t like the texture, another tip is to cut the tofu rather thin, and bake it on a wire rack instead of a baking sheet, at least for the last few minutes (I’d recommend placing a baking sheet underneath, though, or otherwise your oven might become a mess!). Make sure not to overbake it, however. Once you have the right texture, it’s easy to alter the taste with different marinades. 😉
Kath, I know this might be a stupid question, but how long (and at what temperature) you bake the asparagus? Strangely enough, I have never prepared asparagus in the oven!

I prefer olive but Matt always uses canola for some reason. I like canola for baking because of its neutral taste and olive for veggies.

Looks great! I don’t like tofu but my hubbie does, I’ll have to try this. Did you cook everything at the same temp for the same amount of time? Just curious. I usually nuke my sweet potato chips for a few minutes and then finish them off in teh oven. I’d love to know how you cooked this meal. Thanks!
