Eggs!
I saw some eggs on another blog and got a craving for them, so we had them today with a tbsp of Parmesan cheese melted in and a slice of sharp cheddar on top. Yum! I actually prefer eggs for dinner (omelets and frittatas) but it’s nice to have them for breakfast every now and then.
We had one serving of baked oatmeal left and split it. When we got back from the gym, I put it in a 325* oven for the time it took us to shower and dress – probably about 25 minutes once we made the rest of breakfast too. I have to say, I think it might have been better today than yesterday!!! The extra baking dried it out a bit and gave it more of a crust. Next time I make it I might cook it a bit longer to get this effect. But this makes a VERY easy re-heatable breakfast! I’m not sure it would be as good in the microwave, but I’m sure it would still be a great option for on-the-goers. I drizzled a bit of maple syrup on mine –
The last bite of my whole breakfast was the best – a big plump banana marshmallow 🙂

All together with hot lavender tea –
Breakfast was about 420 kcal, 6 grams fiber and 30 grams protein. More protein and less fiber than usual. We’ll see how my stomach takes it!
Workout
Great workout this morning. Stairmaster with Real Simple plus 15 on the stat bike and some upper body lifting. Before I left I had half a potato bun with AB. This batch of potato buns aren’t as doughy 🙁
Lunch
After lots of special occasion meals and meals out I was looking forward to a homemade lunch, but then I got an invitation to go Uptown to meet the husband and his mom at this great place we’ve been wanting to try: Sonoma Modern Kitchen. I couldn’t say no!
I am off to write a 12 page paper on malnutrition and breastfeeding in Niger today. I WILL get it done!!
Oh, and the Costco Eco-friendly laundry detergent SUCKS. I could still smell sweat in our gym clothes after TWO loads. Ugggg. The husband threw out the receipt too so we can’t return it. I guess I’ll take it to GoodWill.

don’t worry! you can return anything to costco, even if you don’t have a receipt. They have a great return policy and customer service department (at least where I live). So just take it to them and tell them what happened!

yum yum yum that breakfast looks awesome! eggs are usually my quick dinner option since I eat my breakfast at work.. and I think they might have to be on the menu tonight!
And, I am with Jenna- what’s the brand of tea?! the closest I have found to straight-up lavender tea is Revolution’s Earl Grey Lavender…

Hmm I’ve never had kiwi with the skin on, but they are a pain in the ash to peel so I might try that….
Does anyone else get what I call the “raw tongue” after eating kiwi? Similar to eating a lot of Sour Patch Kids? Maybe all the tartness…

Mmm those eggs look delicious! Actually, that whole breakfast looks delicious. I prefer eggs for dinner as well but you’ve got the eggs there PLUS the oatmeal and fruit, so you aren’t missing out. Good idea!
I’ve tried those baby kiwis before, just recently actually. I was so excited when I saw them! The novelty of bite-sized kiwis is just so appealing.
I get that “raw tongue” thing from kiwi too though. I really like them but that drives me crazy! Anyone know why that happens?

I love eggs – whether it’s breakfast, lunch, or dinner! I made a crustless quiche for dinner the other night and I’ve been eating the leftovers for quick breakfasts and lunches. I adapted a recipe for this month’s Gourmet to make it a little healthier and it’s really tasty.
Ellie Kreiger’s broccoli frittata is also very yummy.

So, this is off topic, but I’ve been reading this blog since November and love the little community we have going here so I figured people would be cool with me posting something un-health related! (I’m putting this on Jenna’s blog, too… my other daily fave!)
Anyway, I’m looking to go overseas and teach english this fall, and I’ve been doing a lot of research online, but it’s really overwhelming and hard to tell which programs are good and which are shady. So, since so many people read this blog, I was wondering if any of you have (or are currently!) taught english or worked abroad, and if so, if you would mind passing on some advice! I’m mostly looking into Asia, just because I hear they pay best and are most apt to hire people without a TEFL certificate, but I’m open to anywhere (I’d LOVE to go to Europe). Anyway, any and all advice/information/contacts/etc. regarding best places to go, which programs are best, how to go about applying, etc. will be MUCH appreciated!! My email is [email protected]. Hi all – just looking for some cooking tips. I made whole wheat spaghetti last night with tomatoes, mushrooms, and zucchini. I cooked the veggies in a little olive oil first, and then added oregano and pepper while cooking. Then I added a sprinke of goat cheese on top to give it some pizzazz. Well, it was pretty good, but I needed some more seasonings to give it more pizzazz. Any ideas of other seasonings I could have used in the veggies to pick up the flavor a bit?

Kathryn, I’m with Anne; I was going to suggest fresh basil. Or thyme is really nice with mushrooms. I also like to browse the Penzey’s catalog for interesting spice mixtures (I use their “sandwich sprinkle” on everything, especially salad!) and recipe ideas.

Your breakfast looks great! I haven’t been able to get away from a grains based breakfast but I might give eggs another try.

Kathryn, you’re missing one of the most important pasta ingredients (in my opinion, anyway): garlic! Heat up the olive oil, and before you put the veggies in, saute the garlic. Also, after you throw the veggies in, you could add a little white wine (1/4 or 1/2 a cup) and cook until it reduces a bit. That adds a nice flavor. I also agree with the basil and pesto suggestions.

To anyone- when you are counting the calories in a salad, how do you account for the lettuce and vegetables? they dont seem to count for too much on sites like calorieking. For example, today I had a salad (about 3 cups) with cucumber, tomatoe, 1/4 of an avocado, 1 cup of garbanzo beans and 1 tbsp dressing. So would I mainly just count the avocado, garbanzo beans and dressing since they are calories dense?
What do others do?

Anne- I am going to email you if you want. About 1.5 years ago I moved to England (from Canada) to teach and was able to get a job quite easily. I know it’s not Asia, but it’s abroad so I just thought you might be interested. It’s not even teaching ‘english’ because I teach every subject, but let me know if you want some info.

I taught in Japan for a year. Was a wonderful experience. Culture shock! Good extra money since I was able to also tutor folks privately. Just research your program carefully and maybe ask to speak to some references. -K

hi everyone! this is kind of off topic but I work out almost every day of the week and have toned most of my body..except these dang lovehandles/lower back fat!! does anyone know of any good moves to target this area? any tips would be appreciated because i’m tired of seeing the fat there when i wear anything with elastic (my scrubs and pajama pants.) edamame22, here is what I did for the crustless quiche. If you don’t eat meat, you could easily swap the ham for something else. Don’t be scared of the cheese – this serves four and has 365 cals a serving.
Coat a pie pan with cooking spray and sprinkle evenly with 1.5 tbsp dried bread crumbs.
Cook one small onion and 1/4 lb cooked ham in 1 tbsp butter over med-low heat.
While that’s cooking, combine: 1 cup grated Swiss cheese, 1 cup grated low fat cheddar, 2 cups skim milk, 4 eggs, and salt and pepper (I added nutmeg here, too, since I always do in custards.)
Spread the onion mixture evenly in the pan and pour over the egg mixture. Bake at 425 for 20-25 minutes. Let it stand for at least 15 minutes – it’s too runny if you cut it right away. It WILL be runnier than normal quiche, but all the better to mop up with a nice piece of bread on the side. Enjoy!

Kath, you are pretty swanky! You would be a great party planner. Maybe that’s a potential application for your RD…you could plan parties with healthier menus? Or do healhty, yet gourmet catering?
To whomever asked me how I got over binging:
Unfortunately, my way of getting over it was not very healthy, and equally unfortunately I still have small binges, but nothing like the ones I used to (where I would eat an entire pie and a pint of ice cream post a pizza). On my last super binge I made a true resolve that “this one is the last”…in order to ensure that happened, I tried to make myself associate binging with extreme physical discomfort. I had eaten enough to have bad stomaches before after a binge, but this time I decided that I would eat until I literally puked. So here you must understand that I was a binger, but NEVER a purger. I think throwing up is disgusting and painful, and it makes me feel so horrible. I do not understand purgers at all; calories absorb so quickly that puring acomplishes absolutely nothing in the way of balancing out the damage already done by eating the food in the first place, not lest that is so extremely unhealthy for you. So …yeah, I ate until I throw up. I had diarrhea. I felt very ill. So now when I approach the honest-to-goodness-too-full point, I stop eating. I almost fear being too full. One day I hope to get back to the place where I can know fullness/hunger much better.

I used a large Calphlon griddle (http://www.crateandbarrel.com/family.aspx?c=489&f=9212) but I used to use a large Circulon saute pan – our everyday cookware. Just something big and wide and non-stick.

Good question! If it’s just lettuce/spinach and a few low-cal veggies, I usually just ignore them or just count as 10-25 or so, depending on size. I rarely count mixed greens. If I”m having a HUGE veggie salad, often I just count as 50 kcal per 1.5 cups or so. Only if I have peas, beans, corn, or other more calorie-dense items to do itemize it 🙂

My understanding is the best way to get rid of love handles is to lose fat overall with cardio (since spot-targeting doesn’t really work). Perhaps KellyT would have a suggestion on her blog?

Thanks for the encouragement! Small-event catering is definitely going to be something I look into as a package I offer as an R.D. (healthy dinner party for 8 cooked in your kitchen!?) Actually the husband and I might do something like this at his mom’s condo, but we’re not quite sure of catering laws yet.
