Stuffed Turkey Cutlets with Roasted Acorn Squash and Broccoli
My gosh I’m sure I’ll have 1,000 posts one day titled “amazing dinner” but this one was great – and we just kind of threw it together as usual (I love it when throw-together dinners turn out great!).
Sipped on a diet tonic and lime while we cooked and I made my lunch for tomorrow:
For the stuffed turkey, we took 2 small cutlets taken from a turkey breast, butterflied them (cut them open like a book) and then stuffed them with 1/2 oz each of reduced-fat Italian cheese, spinach and mustard mixture (super easy – just mix together in a bowl and stuff!) We also brushed the outside of the turkey with more grainy mustard. Baked at 400* for about 15-18 minutes. These were delicious and just the right portion side – no bigger than my fist!
For the acorn squash, we just cut in half, removed seeds, microwaved for 3 minutes to get the cooking going and roasted cut-side-down for 25 minutes. Then we added some Smart Balance spread and brown sugar and cooked for 5 minutes more (the pan was covered in burned juices – that’s OK!)
SOOOOOOOOOO GOOD!!!!!!! We ate the skin too. I told you I eat almost all skins!! It’s thin just like eggplant skin and probably contributed to more fiber!
And the broccoli, steamed in the microwave for 4 minutes or so and topped with lemon-pepper seasoning
All together…..
Dinner calories: Only 406 for this whole meal!!!
Snack
This afternoon around 4:00 I snacked on 2 clementines, half a serving of Mary’s crackers and 5 almonds. It was perfect and kept me satisfied until we ate dinner at 7:30.
New Toy!!!
I’m SO excited!!!! I got a new laptop!!! More details on why later this week 🙄 It’s got a cool slot for me to insert my camera card so I don’t have to lug around a cord. Fabulous!!
I’m so excited for tomorrow already:
1) Since it’s so warm I’m hoping to run on the track at the Y tomorrow. I love to run
2) Banana oatmeal is planned for breakfast and I’m already excited
3) I’m riding the lightrail again, which means no sitting in traffic!
4) Lunch. is. great.
5) I should be able to get in a nice long walk at lunch
6) The husband is cute

I adore acorn squash skin. I pretty much collect it from everyone's plates when I go home and the family has it for dinner! (I don't understand why they fork it all out… i might like it better than the squash itself ha!)

What kind of laptop did you buy? I’m in the market for a new one and need some suggestions/advice!

The laptop is an HP Pavilion dv2500t. We’ve been big Dell customers in the past but I think HP is doing everything just a little better. It was highly rated by Consumer Reports, and a comparable computer by Dell was a couple hundred dollars more expensive, had less RAM, and didn’t have a DVD burner.
If you’re shopping around, the most important thing to look for is minimum 1.5Ghz processor and 1GB RAM (preferably 2GB). Unless you’re really into high quality music, or video games (not likely considering this audience), don’t bother getting some souped-up model. For the average iPod owner, all new computers will have enough disk space for your music.
