Today has felt so productive!
Lots of cleaning.
Lots of tax doing.
And I went to BodyStep in the middle! I’m getting braver with my group exercise. The thought of bouncing around aerobically for an hour sounded more appealing to me than other forms of exercise (perhaps to contrast the dreary rainy day?) so I hit up the 3:45 class.
It was powerful!! The instructor, Erin, who teaches BodyStep at my gym has more energy than any group ex professional I have ever seen! The class was lots of fun – and I worked up a sweat! Unusual for me and group ex.
I came home and sipped on this guy while I waited for Matt to come home to start dinner
Which is about the time I got sucked into the great tax vacuum.
Lucky for me, Matt was happy I was working on them and made dinner for the two of us
Asian Tofu Noodles
Whole wheat egg noodles topped with sautéed sugar snaps (they were on sale at WF!), mushrooms and roasted Twin Oaks tofu – shitake garlic flavor. He sauced it all up in tamari (like soy sauce) and Garlic Gold oil. Sriracha for the top – plus some salty peanuts!
I promise there were noodles under there!
I was so involved in the taxes that I skipped dessert. Imagine that!
Holly @ Couch Potato Athlete says
I hope you got through your taxes with little trouble — how nice of Matt to make you dinner 🙂
Allie (Live Laugh Eat) says
Siracha spots! “Skipped dessert” is a phrase I have never and will never say! I think I have a sugar problemo.
Baking 'n' Books says
Ditto.
The tofu almost looks like toasted croutons!!
Hannah says
Oh, I’m so glad you’re trying the flavoured Twin Oaks tofus now! I miss them so much! Got nothing like ’em in Australia 🙁
Jessica @ How Sweet It Is says
Sriracha is like my drug – I want to put it on everything.
Ann @ Day by Day says
For some reason I don’t ever want to go to group exercise alone. If I have a friend, I’ll totally go but I don’t like going by myself! Nice job on the tax work. I’ve got another year as a student until I have to start doing stuff like that. I’m not that thrilled about it!
Sarena (The Non-Dairy Queen) says
Dinner looks perfect! Super nice of Matt to take over that while you did the taxes…although, in my opinion, he got the better end of the deal!
Camille says
What a delicious dinner!
I hope your taxes are headache free!
Heather (Heather's Dish) says
you skipped dessert?! maybe i should do taxes more 😉
Kaitlin says
So sweet of Matt to cook for you! I need to get on my taxes… only about a month left!
Cindy says
I’m glad you had a productive day!
Valerie @ City|Life|Eats says
Love Twin Oaks tofu. They sent me some flavors to try that I had not had yet so I am totally excited 🙂 Hope you are done with your taxes soon.
Katy (The Singing Runner) says
Mmmm dinner looks fantastic!
Good luck with taxes!
Brittany says
I’ve got to try that Kombucha drink! I see it all over but never grabbed a bottle.
Annie@stronghealthyfit says
I had almost the same dinner! Pasta stir fry with tofu and mushrooms, carrots, pepper and snow peas. I shoulda thought to top it with sriracha! I used pickled ginger and spicy paprika paste to make a sauce 🙂
Nicole @ A Vegan in the House says
Okay, I think I need to buy some siracha sauce. Time to “kick things up” a little! Thanks
Annette @ EnjoyYourHealthyLife says
I love tofu!!! and snap peas 🙂 I really do not like doing taxes…I bet yours are heinous, though- good luck!!
Anne @ Baking Me says
Oh that tofu looks great!
Averie (LoveVeggiesAndYoga) says
The tofu looks awesome with the green veggies, yum!
Today I mailed my taxes
Cleaned my house
And drank homemade kombucha
We had a parallel day 🙂 Except your dinner looks way prettier than mine!
Stacy @ LoveDiscoveryGratitude says
I now feel very motivated to cook with more variety! Tofu is something I need to try to cook with. 🙂
Laura @ Sprint 2 the Table says
Kudos to you getting on the taxes. I just completed mine and feel SO much better to not be rushing last minute.
Dinner looks fabulous! I am sooooo looking forward to being about to eat beans again.
Sana says
No dessert? Those taxes must have been killer!
Diana @ frontyardfoodie says
I need to teach my hubby to cook! I’m not really good at teaching him and he’s all thumbs in the kitchen but it’d be nice to come home to that!
Although, his strong points are very strong……he hosts my website and is a whiz at computers so I can’t complain.
Kat @ Cupcake Kat says
I had tofu for dinner too! But I definately did not skip dessert (not sure if I could ever do that)
It’s great to have a productive day
J3nn (Jenn's Menu and Lifestyle Blog) says
You’re lucky you only missed dessert! Taxes make me lose my appetite altogether!! 😆
Alaina says
I certainly wish that my husband was that creative in the kitchen. Looks delicious! 🙂
Ashley says
We got a Shark vacuum a few months back and it’s freaking awesome. I enjoy vacuuming and especially love that you see all the dust pickup and that it’s not a mess to “release!” It has some awesome attachments, especially one for getting dog hair off the couch. I vacuum about twice a week because I love filling up the container with dust + dirt!! hahaha Those look like tofu croutons!!
Ajay says
I LOVE! LOVE! LOVE! bodystep. Erin sounds like she teaches the same way I do. It’s a lot of fun – I know it’s cheesey, very daggy & slightly uncool but I have a whole load of fun, and get a great workout!
Gina says
I love a great vacuum! My mom bought a Dyson recently and the thing is a beast. I’m totally in love with it.
Christin@purplebirdblog says
That dinner looks divine… egg noodles are so delish!
lynn @ the actor's diet says
good luck with the taxes – we just finished ours and it feels GREAT!
Emma (Namaste Everyday) says
I’m trying to do my taxes from here in New Zealand….not easy. we’re all in this together! also there is just something about sauteed snap peas that puts me on cloud nine! I had them twice next week, and just that pic is bringing me back!!!!
Emily @ Savory and Savage says
Those sugar snap peas look sumptuous! The noodles underneath were just a secret surprise!
Sarah (Running To Slow Things Down) says
Oh taxes. The funnest time of the year. (not). 😉
I hope you managed to conquer them and get it all done! Your meal looks fabulous. 😀
Stephanie @ Walking my Talk says
That tofu dish looks delicious! WHile I really enjoy eating tofu, I’m not very good at cooking it.
megan @ blackberries for jam says
At first I thought those were croutons on your noodles! I wish I could get my hands on that Twin Oaks tofu! And I give you credit – taxes are not something I would choose to end my weekend with!
Kristen, Sweetly says
Taxes trumping dessert does NOT sound like a good day, but hopefully you’ll get through them soon.
Chelsea @ One Healthy Munchkin says
I wish I could get over my fear of group exercise too! They look like fun, but I’m way too scared to go alone. 😛
Angela @ Eat Spin Run Repeat says
Wow, that meal looks fantastic! I’ve got to get on my tax situation soon too… the goal is to get it done super early and not have to scramble at the last minute… perhaps a project for next weekend! 🙂
Stacie @ Imperfectly Healthy says
I’m with the others – the tofu definitely looks like croutons!!
I’ve done a few group exercise courses, but I can never get past feeling a little self conscious. I’m much more of an “alone exerciser.” 🙂
Ryane says
Does your gym offer BodyCombat classes?? They are soooooooooooo crazy intense. No way you would NOT sweat in that… so take it if you can!!
KathEats says
No 🙁 Nor Body Dance or whatever the dance equiv. is 🙁
Ajay says
That would be BodyJam… or coming soon – Sh’bam! (OMG I can’t wait to teach it!!)
Ryane says
Sh’bam is so fun!!
Amanda says
sigh, I also have to work up a lot of courage to attend gym classes too.
Jill says
ohhhh, TAXES. They control my family at this time of year since my husband is a CPA. Can’t wait until April 18 so the kids & I can see his smilling face again. The plus side – I’m a small business owner too – nothing better than having a CPA at my fingertips!
Hope you have a good CPA at your fingertips as you embark on your new business venture!
Errign says
The tofu looks like croutons – sounds pretty yummy!
Which flavor kombucha was that?
KathEats says
It had lavender and elderberry. Loved it!
Amy in WA (Texas transplant) says
I saw that someone else asked about BodyCombat – the BEST! I’m glad you’re starting to enjoy the group ex. I especially love them (BodyStep, Pump, Combat, Flow) for days I’m not feeling super motivated to go to the gym…I know once I’m in there, I’ll have a good time, and I’ll stay for an hour! I enjoy working out on my own or with my hubby, but group exercise is invaluable to me for the fun/motivation aspect – and I LOVE Zumba (we have the best instructors – www.zumbachicas.com). Happy Monday!
Ash @ Good Taste Healthy Me says
That looks so crazy good. I wish my fiance liked tofu. I think it’s so tasty.
I love workout classes too. I feel they always push me harder than I push myself on my own.
Kristen @ Change of Pace says
It’s the spring cleaning thing! I’ve got it going on too… I just… can’t… stop… 🙂
5kChic says
Hi:
I see all of these fabulous meals that you make and I was wondering how much do you spend on groceries week/month or however you shop?
Thanks.
5kChic
KathEats says
Less than $250/month
Alyssa says
Kath, it would be great if you could do a post on meal planning and grocery shopping strategies! I always wish I could be a more effective meal planner and use groceries more wisely. I often buy ingredients for one recipe but then the leftovers get wasted if I don’t incorporate them into something else. I’m sure you have tips 🙂
chelsey @ clean eating chelsey says
I love group classes – sounds like fun!
5kChic says
A blog on meal planning/shopping would be so great….Hope its on your busy bee list of things to do……
