Chem Lab went well – it usually does. It’s just a pain to get through in general. I was really excited about trying my Coconut Cream Larabar today but I came out of chem with zero hunger! Go lunch! Guess I’ll just keep postponing it. I really want to just open it and take a bite, but then I’ll just eat the whole thing by accident.
I came home and did some more work and ended up having a small glass of wine leftover from a bottle of red my parents brought back from a restaurant they went to on the way here. I reasoned it was going to go back if I didn’t consume it soon! It was juicy and delicioso.
I also did get hungry around 5:30 and had 2 super-stale but super-chewy toast points with some homemade hummus.
For dinner I made a Spiced Lentil Salad with a mish-mosh of ingredients. It turned out great, and I have enough for my lunch tomorrow 🙂
Toss together in a bowl:
- 2 cups cooked brown lentils (hooray for Sunday prep work!)
- 1 cup chopped broccoli, steamed in microwave
- 2 cups sliced sugar snap peas, steamed in microwave
- 1/2 a giant sweet potato (9 oz), steamed in microwave
- 1 stalk celery, chopped
- 7 walnut halves, chopped
- About 1/3 cup raisins, hydrated in some hot water
- Dressing:
- 1 big tablespoon honey mustard
- 1 tbsp maple syrup
- 2 tbsp cider vinegar
- 2 pinches salt
- 1 tsp garam masala spice
- 1/2 tsp cayenne pepper
On the side the husband took the other half of the giant sweet potato and made Sweet Potato Latkes. They were good on the outside, but pretty much raw on the inside, so this recipe needs tweaking.
He used:
- 1/2 giant sweet potato (9 oz), grated
- 1 garlic clove, grated
- 1 egg
- Cinnamon
- Salt + Pepper
- Tsp brown sugar
I ended up microwaving mine to get the insides (and raw garlic!!) cooked and added some ketchup.
I am feeling a little hungry at the moment, but I didn’t drink my water with dinner so I’m off to have some now. There’s too little time in this day!! My Foodservice recipe adjustment is turning out to be way more work than I had planned. 😥 I was hoping to take a bubble bath or something tonight, but our bathtub isn’t that appealing and I’m out of time as always. Maybe just some cozying up in bed to read about nutrition during lactation.

What would you liken the taste of lentils to? If I love beans, and grains like wheatberries, quinoa and cous cous – would I like lentils? I’ve tried so many new things since trying to eat healtier, but lentils seems to be the one that I have taken the leap on yet. Just curious 🙂

Help! Ants have taken over my kitchen. Not just baby sugar ants..big black ones. Anyone have any way to kill them until the exterminator comes? they are seriously taking over my kitchen. I have been spraying them with Glass cleaner with ammonia but that smells awful. Any suggestions would be appreciated. I will probably repost this tomorrow. I know a lot less people read blogs at night.

This is a REALLY silly question or you may have answered it before but i couldn’t find it in the frequently asked questions….but how much water do you drink per day? Do you only drink during your meals or throughout the day and not account for it? The reason is because I counted how many cups of water i drank today and it amounted to 23 cups! I don’t know how healthy that is….hehe.

You were in my dream last night (oh yeah, super creepy award winner right here, no doubt)….and what did said dream consist of? We totally got stoned together and then ate oatmeal. I’m dead serious. We consumed a gigantic pot of oats and you kept laughing at me for adding more PB! (good natured chuckling). We were talking about bloggers and how you never know what someone on the internet is “really” like–you know, the traditional joke that the 34 year old female schoolteacher is really the 47 year old man etc–and I said, “I always thought it’d be hilarious if, out of all bloggers, veggiegirl turned out to actually be a really fat middle-aged man who worked as a carney or something.” And you replied by spitting your oatmeal bite out of your mouth and claiming to have always thought the exact same thing.

I know you can’t really tactfully reply to my last post, but please, please let me know you at least read it. I think the husband would enjoy it too. I can just picture you guys chuckling about how PC you have to be (and justifably, no worries) over the internet (I mean, you even go with darn instead of damn) and if us readers only knew this that and the other. If you like all of those you’ll love lentils. I’d liken them to a mild mushier black bean. Maybe a little pinto bean flavor? There are different types of lentils and they all have a slightly different taste but for the most part they’re all beany.

Good question and I don’t know if I’ve ever answered it!! I wish I drank more water, but I’ve never been a big plain water drinker. I usually have a 20 oz bottle during my workout, tea/coffee with breakfast, a full Sigg bottle (20oz?) in the morning, a seltzer (12oz) with lunch and maybe another 1/2 Sigg in the afternoon and then another 8-12 oz with dinner. Not sure what that adds up to, but I should probably add another 1.5 Siggs in there!

I have had Cinnamon Bun and liked it, but it’s a little too much cinnamon for me. I used to be a bigger cinn. person and I think I overdosed or something because I don’t like as much in large quantities.

I just mean he took his bread and toasted long slender (points) slices in the oven. It’s easier to type than that whole description! They are still kind of crunchy/stale a few days later.

The coconut cream pie larabar is TO DIE FOR! Its so moist and chewy. Also much better than the peanut butter cookie bar in my opinion.
The sweet potato latkes did not turn out well? Aw, I really like the idea behind them though!

1) they should be fried 🙂
2) they need to be thinner
3) make sure alllllllllllll excess moisture is pressed out of the shredded potatoes…
you can probably find tips elsewhere, according to my entirely jewish family, my mom makes the BEST potato latkes…although, they wont admit that to her sister (my aunt), who makes sweet potato latkes as well……hers tend to be burnt to a crisp with not much substance in the middle.
