Celebratory Beer:
I went out with my Chemistry friends to celebrate the end of two months of torture!
I debated between beer + salad and salad + pizza . I was trying to eat lighter because I’m about to go on vacation. Somehow I ended up with all three!?!
Spinach salad with goat cheese, pine nuts and roasted red peppers . And the best focaccia bread ever!! I always order this without the bread or croutons but I forgot tonight and they were too good to resist.
I also ordered a Hawaiian Pizza and split it with a friend. I was supposed to bring 2 slices home for the husband, but we each ended up eating 3 pieces. Whoops! It was so thin and small that it was like eating delicious air! The crust was even thinner than it looks here:
Lastly, I had a bite of a friend’s pita + hummus (not photographed) and a bite of another’s Chicken Florentine Pizza .
What’s sad is that I’m not full AT ALL!!! And I calculated about 1,000 calories for this dinner. But yes, I am satisfied and I guess that’s the goal of eating. But I want more pizza!!
I had a pretty successful shopping trip and got a few items on sale at Banana Republic where i had a gift card and 2 $10 coupons.
I wasn’t really hungry before class, but I decided to have a small bowl of cereal because we weren’t scheduled to eat dinner until 7 and didn’t want to get too hungry. So I had some Organic Morning Lite mixed with a little burned granola the husband made last weekend (which I kind of like) and hemp milk around 5:00 –
I missed the husband today (I always miss him after a whole weekend together) and I’m sad I’m going on vacation without him tomorrow 🙁 Better go snuggle up!

I almost cried when I read the last few lines there. It must be so beautiful to have a love like that. I kind of think I will never fall in love, but since I know it’s out there, so I won’t give up all hope just yet. Congrats on finishing chem. My classes end wednesday, can’t wait!

Congrats on finishing the class! Good for you for going out with your friends to celebrate! I love all the yummy pizza, but you still just have to count the calories huh? I guess doing it so long makes it a hard habit to break. Maybe soon you will be able to go out with friends or just sit down to a meal on your own and not calculate in your head.

I can relate to missing the hubby after spending the weekend together. I am always depressed on Mondays after spending quality time with him. And it’s 10x worse after a week of vacation! I love to hear that other couples go through the same thing. We are definitely blessed!

Congrats on finally being done chemistry! Looks like you chem friends had a good time. Dinner out with a group of friends is always fun.
I have some burned granola sitting in my cupboard as well. Although the burnt taste is a little of a disappointment, it has a pretty interesting and unbeatable crunch!

This really inspires me to maintain or even improve my health/fitness when I go off to college in August and resist the Freshman 15! 🙂

Awww! It is really hard after you adjust to being with someone for hours on end to then be without them. You think of something clever to say and look around and they aren’t there to share it with.

I’ve mentioned before that I have continued to keep a very rough estimate of calories in my head – and think I will for a long time. As I say, if I lived on an isolated vegetable farm, I probably wouldn’t ever count again. But as long as I attend parties, eat in restaurants, drink cocktails, order desserts, eat off buffets, etc., I feel the need to keep an outside check on calories because my brain + mouth sure don’t know when to stop when it all tastes so good.

Hi Kath. I have been reading the blog for awhile now, but have never commented before.
However I had to ask…did you and your fellow classmates have dinner at Brixx??? I am pretty sure I recognize the salad and pizza. I loved Brixx when I was in grad school at UNC-CH and the Chicken Florentine Pizza was my favorite. I’m in Florida now, and unfortunately, there are no Brixx here. Oh, well.
