Where are all of my friends!?!?!? It’s so lonely here without you all 🙁
I had a wonderful evening with Larbs + Matt + Maynard
Upon arriving at their apartment via subway (and feeling rather cosmopolitan being in a big city by myself for the first time) we headed back out to Whole Foods for some dinner ingredients.
We decided on a “fresh fish and greens” (said in perfectionist voice) and corn on the cob. I was so excited to shop at a Whole Foods and find LOCAL stuff!!
I pulled out my Seafood Watch app whilst in the seafood dept. to determine what our options were. You’d be surprised by how many of my favorite fish are considered a poor choice for sustainability and over-fishing reasons 🙁 Our choices included Atlantic Wild Caught Cod, Wild CoHo Salmon, Imported Farm Raised Tilapia, Wild Caught Atlantic Flounder, Farm Raised Salmon from Norway, Wild Caught Yellowfin Tuna and maybe one more? NONE of these (except the wild salmon, which wasn’t on the menu tonight) were considered optimal choices. Actually the Ecuadorian Tilapia were the “best” choice, but certainly not local at all.
We ended up going with the Cod because it’s local and one of my favorites. Local > overfished in this case.
Look what I found!!!!!!! Sadly, no PB&J. I had the Tart in my hand and actually put it back since I have so many LaraBars at home!
Also saw lots of Amazing Grass and Vega – I feel like I “know” them from the Summit and all, so it was funny to see them in person.
Once back at L+M’s, we broke out a little white wine. My intention was just to have a few splashes to enjoy while cooking after a big weekend (although all things considered, I didn’t eat or drink that much this weekend)
I made a dip for the fish out of cornmeal and parmesan
With salt and red pepper
Trimmed and washed kale, which we steamed and tossed with TJ”s Muscat Orange Vinegar, salt and slivered almonds
Set table! Larbs put on the best music ever – Spring Rain, a piano CD I got in elementary school. Hearing it was so soothing!!

The fish turned out quite well. I browned it in a little olive oil after dipping (dry) into the cornmeal mixture. And added more parm for garnish
We did the corn in the microwave – it was quite delicious as well!
Kale wasn’t my favorite ever, but I love greens!
Splash #2 and 3
For dessert we split a brownie from the Summit Bake Sale and another Almond Butter Bite by Allie –
After dessert, I braved the deserted subway and made my way 4 stops back to the Radisson. I was kinda scared at times, but I hear this part of town is pretty safe. Still weird to be alone though!
I’m back in my “condo” and am preparing for bed. My flight is at 11:15 tomorrow, so I’m planning to get in a second fun workout at HealthWorks before I depart!

That’s a beautiful meal, Kath! I LOVE kale, too. It’s soooooooooo delicious! I love it raw, in smoothies, in juices, and I’ve also eaten it steamed. YUM! ;-D

VERY cool App that tells you about which fish have been over-fished.
I try to pay attention to that sort of info when I get fish, and I also avoid any seafood from Canada as a boycott until they stop the Seal Hunt.
(hopefully that doesn’t sound too ‘militant’… Apparently, lots of other people are, too, and Canada has lots tens of millions of dollars in seafood revenue 🙂 )

I know HLS didn’t discriminate, but would you OR someone else care to educate men ?

Yum fish looks great. I didn’t know about that list of fish you should avoid. I eat a lot of white fish like mahi mahi, cod and halibut. Interesting information though!

Kath– It’s so awesome that you specifically shopped local and sustainable. A lot of people (including fellow bloggers) don’t take the initiative to buy these items and I think it is one of the most nutritious and important actions consumers can take. Those tropical fruit tart Larabars are the bomb! Just got some last week at another Whole Foods and I’m hooked. FYI, they’re on sale at drugstore.com – as are the PB&J ones (have a couple to try, haven’t yet).
Your dinner looks great – the TJ’s champagne vinegar is so versatile – I usually use it in salads w/mixed greens & fruit ’cause it’s so bright and sweet. Never thought to try it on kale . . . worth a shot.

That stuffed duck is so cute! Dinner looks wonderful. Kale is on my list of things to try again. I’ve only had it a couple of times and haven’t been won over. My husband is definitely not a fan, but maybe if I prepare it differently? Safe travels home!

I just found the PB&J Larabar this weekend (finally) and yes, it lives up to the hype! As for kale, I’m not so much a fun. I really wanted to like it, as I like all things green, but it’s not my favorite.
As for the fish situation, I felt like a huge dork, but I had my little printed out “safe” fish chart the last time I went looking for a good piece to bake. Dork? Yes. Happy? Yes.

Another great resource for sustainably harvest or raised fish is www.ecofish.com
They have their own products, but also provide information on what species are overfished or should be avoided when farm raised. (great salmond burgers!!)

I live in Chicago and I actually feel safer walking alone in a big city than I do in more rural / suburban areas. Just stick to areas where there are other people / good lighting, and you’ll be fine!

Hey Koops! How long do you cook the corn in the microwave? I love corn on the cob, and my mom recently said she’d heard it turns out really well in the microwave, but we weren’t sure how long to do it, so we didn’t try it.
