We are getting dumped with snow….which is crazy because it was 50 degrees yesterday. All of our snow had melted. March Fools?
The day started with just rain…and this breakfast. Mango, Irish Soda Bread and eggs, all Mazen’s request! He’s really into mango right now. He calls it “mingo”!
Since preschool was cancelled yet again, we went to the gym, pretended we were at a beach resort and splashed around in the warm pool! I just bought a puddle jumper for Mazen and my GOSH what a genius invention! It’s like he turned into a full-blown swimmer in 5 minutes. He was so proud of himself kicking all around me! We are really looking forward to summer ’round here.
Our drive home was a little icy – the roads were filling up fast.
But lunch was nice and bright –
I made another version of my pita pizza. This time with hummus, chimichurri sauce, sliced tomato, avocado, cheese and olives. Carrots + hummus/chimi on the side.
And Greek mountain tea to warm up with!
We snuggled on the couch until quiet time <3
Dinner was Cook Smarts stuffed tomatoes, which was as simple as tomatoes stuffed with our leftover crockpot sausage + lentil soup and topped with some somked gouda cheese. The cheese made it!
Super simple salad on the side – greens, chili oil, praline pumpkin seeds and avocado
I’m thinking tonight is a good night for some dark chocolate and hot tea!

Hi Kath, for your reference, when I was a lifeguard we learned that floaties like that can be dangerous. Kids mistakenly think they know how to swim and might jump right in without them, or they can deflate and have the same issue. I’m sure you’re keeping a close eye on him but thought you might want to know! I’m so ready for summer too 🙂

Almost nothing closes due to snow here in Canada. We push through, cause we boss like that. 😛

…where are you AT? I’m in Eastern Canada, and we shut down when things get treacherous (7 school & business closure storm days and counting). Even with all the infrastructure we have to power through, sometimes it’s just safer to stay off the streets.

Tea and dark chocolate…the ultimate in cosy night comfort food! Love your little pita pizza, very cute! Who doesn’t love a good mango! It’s a like an avocado, such a difference between a good one and then every so often a completely inedible one…..when you hit a good one it’s like winning the lotto (the food lotto!) 🙂

What’s in your soda bread? If it’s raisins then in Ireland it’s called barnbrack (soda bread is white flour, Wheaten bread a mix of white and wholemeal and barnbrack has raisins in it). Pitta pizzas look yum!

This weather is insane!! It has dumped 8 inches here in Philly and now it’s going to be in the mid-40s and head into the 50s this coming week. While I’m not complaining about the warmer weather (I mean, running outside and jumping over puddles > treadmill any day), I wish the Mother Nature would be less of a hormonal crazy person these days!

The pool at the gym has been a lifesavor for us this winter, I don’t think I can take much more!
