Virginia can’t decide if today is supposed to be rainy or sunny – we’re getting a mix of both! [Although now that I think about it, we haven’t had much rain at ALL this summer! Good for biking!]
I made a bowl of leftovers for lunch. One of those classic blogger meals that doesn’t look as good as it tasted
Greens, sautéed tofu + zucchini, leftover crockpot stew + rice, and cantaloupe
30 minutes later, my stomach still felt a little hungry. What is with my stomach? This meal should have totally satisfied me, as it has all the food groups and a good amount of volume. I’ve had a big appetite my whole life!
So I broke into a few samples by Hail Merry possibly making it into an OpenSky deal. I figured I could use a little something rich to sit heavy in there.
These are little tarts – like big peanut butter cups but with a pie-crust bottom – made with real food
Lemon is not my favorite flavor (I’m usually a chocoholic) but this was incredible lemon + coconut. (The top kind of smeared off, but it tasted great. I noted that 1 serving was 1/3 of the tart, so that’s what I had even though I could have eaten the whole thing easy!
I’m gearing up to head to the bakery. The question is…do I drive or bike?
Allie (Live Laugh Eat) says
Hopefully the sun comes out soon so I can sit by the pool…and people come into the bakery!
Kelsey @ My Search of Summer says
Those look so tasty! And the rain can’t decide whether it’s staying or going here either – the sun is out right now but there was just thunder and rain coming down about 10 minutes ago!
Julia says
Lunch looks good to me! That Hail Merry thing looks interesting
Ashley@MyFoodandFitnessDiaries says
That’s a pretty delicious looking leftover combo if you ask me!
I say bike! Extra exercise and a little rain won’t hurt. 🙂
KathEats says
Awww man I had just decided to drive!! Mostly because I don’t want to take another shower!
Ashley@MyFoodandFitnessDiaries says
Valid point. I wouldn’t want to shower again either. 😉
Baking N Books says
Bike or Drive: Depends on how much time you have or what your doing after? Maybe 😉
The salad looks good to me. Being hungry is “normal”. Yes, it included the 4 food groups and vegetables are filling but still low in calories.
Hillary says
I think that salad looks fantastic (as good as I bet it tasted!)
I’m such a wuss—I would totally drive!
Kristin @ eat healthy. be happy. live well. says
You’re right! VA can’t decide if it is going to rain today!!! The clouds seem to have just passed us up right now, but it’s still in the forecast for tonight. Yay for rain!!!
Cait @ Beyond Bananas says
Your “doesn’t look as good as it tastes” meal looks better then my “looks and tastes great” meals!
CJ @ http://healthy-happy-whole.com/ says
Oh those tarts look really good! I don’t really care of lemon either but I am a huge fan of coconut so I bet those tasted tropically terrific! Have a good day at the bakery!
Lauren @ What Lauren Likes says
Yum! the lemon one sounds amazing!! great pics 🙂
Cait's Plate says
It looks pretty good to me! I can appreciate a good sloppy dish for sure 🙂
Also I totally go through phases like that too – where meals that would normally (and should) fill me up just don’t. Just gotta go with it and know eventually you’ll be back to normal!
KathEats says
I BIKED!!!!!!!!!!
Dani Delicatessen says
I would never think to put cantaloupe in a savory dish! I’ll have to give that a try the next time I have a mish mosh of things for lunch/dinner : )
Rosa - Fitness, Food, Fulfilled says
Some days are just crazy hunger days! Sometimes I’m shocked by what I can eat because I’m genuinely hungry and still be hungry. Those tarts look fantastic. I too love chocolate more than anything and it takes a really good review to get me to try something fruity.
I say bike!
Aine @ Something to Chew Over says
Looks like it tastes pretty good to me!
Definitely bike 🙂
Kate (What Kate is Cooking) says
Bike! Biking in the rain is fun. Although I have such crazy, frizzy hair that if I’m out in the rain for a minute it turns into a mess!
Averie @ Love Veggies and Yoga says
“Lemon is not my favorite flavor (I’m usually a chocoholic)” = agreed, me too!
To the point that I kid you not, until I really looked at it, I thought the first picture in this post was an artsy/artistical display of brownies.
Til I realized it was concrete & sidewalk.
Boy, was I disappointed 🙂
emily says
I did that too!
Margo @ Peanut Butter Trees says
I hate when a meal that should fill you up just doesn’t, and you’re left wondering why. I can never tell if it’s all in my head or if I am actually still hungry after a big meal like that. Looks like the treat worked its magic though 🙂
Sarah@The Flying ONION says
I’m known for my large appetite as well. I think it has something to do with the fact that different foods are digested differently. So while a calorie is a calorie, that’s not 100% true. For example, a smaller portion of proteins from plants are absorbed vs. the larger amount of meat proteins that are absorbed. And differing levels of energy are needed to digest and absorb different foods. Perhaps that’s one of the reasons that healthier eaters seem to need to eat a little more vs. people who eat highly processed, “pre-digested” food?
Anyways. I like to say that. As a very long reason for my large appetite. 😉
Hope the weather clears up for you!!!
Ashley @ Coffee Cake and Cardio says
I really think it depends on a woman’s time of the month. There are just some days when I need more energy and food.
I’d drive. Lots of showers/storms in VA today.
Maria says
It’s a salad. Of course you’d be hungry 30 minutes later. I always think it’s interesting that bloggers are so mystified that “Hugh mass” salads don’t satisfy for more than an hour. It’s a bowl of veggies. Where’s the mystery?
Maria says
Hugh jass, I mean. Such an annoying name.
KathEats says
It wasn’t just a salad – it had tofu, turkey, rice, dried fruit – all heafty things
Maria says
Tofu is hefty? Since when? I have eyeballs. I see veggies and some chunks of meat and tofu with a half cup of rice, tops.
Lorin says
Pictures are decieving and you can’t tell the portions from a picture.
Meredith says
I find tofu really hefty – I had maybe 1/5 of a block with my supper tonight and it definitely is doing its job of keeping me full! I find as long as a salad has tofu, nuts, beans, and/or dried fruit, it will generally satisfy my hunger – but some days are just HUNGRY days!
gighwigroj says
That’s true! More rice should’ve cut it
Lisa says
Maria, go back to your burger and quit being jealous of a healthy lifestyle. You just sound bitter and twisted and THAT is annoying.
Khushboo says
There must be something in the air because my appetite has been on fire all day!
Katherina @ Zephyr Runs says
I LIVE for lemon desserts… love ’em!
Sylvia @ My Attempt at Balanced Living says
Agreed 🙂 Lemon Pie and lemon bars are my fave. They’re so refreshingly sweet AND tart.
Kori says
I LOVE lemon desserts!! I think I inherited the craving from my wonderful grandfather. My mom would always make him a lemon meringue pie for his birthday, and now I feel that the tradition will likely continue with me. 🙂 Chocolate is devine, but as you said, lemon is the perfect balance between sweet and tart. Yum yum.
J3nn (Jenn's Menu and Lifestyle Blog) says
I think your lunch looks quite tasty. I hate when I am a bottomless pit, the days when no amount of food can sate me. I attribute it to hormones! 🙂
Sarah says
Your lunch looks amazing, so I bet it tasted out of this world!
Btw, love your new blog header. Perfect. x
Julie H. of Spinach and Sprinkles says
I have had the appitite of a cow lately! I HATE and have no idea where it came from…..
Frozen grapes did the trick for me the other day. I can’t eat them too fast or it hurst my mouth so it slowed me down and let me enjoy what I was eating instead of swallowing things whole!
Ellie@fitforthesoul says
OooOo I miss rain 😀 Omgshhh these tarts look sooo delicious~may I try some? 😉 I have a very healthy appetite too Kath! You’re not alone haha
lynn @ the actor's diet says
i love hail merry stuff! i could easily polish off that whole tart too
Donna says
I can’t know how it tasted, but your lunch “looks” fabulous to me.
Angel7 says
Your lunch looked good and filling to me!

kaila @ healthy helper! says
I’ve seen those hail merry tarts and the only reason I haven’t bought them is because of the crazily small serving size! I need some volume! LOL!
Hilary says
I hate it when I eat something filling like that but am still full…such a pain!
Molly @ RDexposed says
It’s doing the same in Northern Illinois. It’s prompted a soup and sandwich dinner.
Caitlyn says
All your strength training is amping up your metabolism!! That’s a good thing, because now you can eat more 🙂
Nancy-The Wife of a Dairyman says
I’m thinking I must try one (or three) of those little tarts myself! They look delicious!
rumfunandsun says
Gonna have to check those Hail Merry’s out I see they are Gluten Free!!!!
Erika @ The Teenage Taste says
Lunch looks delicious. I think it’s leftover mish-mashes like that that make the best meals. 🙂
Have a great night!
Lexi @ A Spoonful of Sunshine says
Mmmm as bloggers, I think there’s something to be said for “pretty food tastes better.” (Probably just because extra effort was consciously put forth to make it visually appealing!)
That said, I don’t think the converse is true. Non-pretty food can be 100% delicious 🙂
Katie @ Peace Love and Oats says
lemon and coconut!?!? that sounds amazing!
Annette @ EnjoyYourHealthyLife says
I love lemon + coconut! heavenly 🙂
Hannah says
I would sell my soul for those raw vegan Hail Merry treats! Why you so fail, Australia?
JessicaEn says
Well, shoulda woulda coulda kept you full, but I truly think appetite differs from day to day. 🙂
Sara says
You know what I admire most in your approach to food? How you can enjoy such a variety of lovely things in MODERATION! No way would I have been able to stop myself at 1/3 of a tart, even if that’s the serving size.
Keep up the great work – this blog inspires me to stay on the straight&narrow food-wise 😉
Allison says
I hardly ever put fruit into my salads, don’t know why- your salad sounds scrumptious!
