Last night we went over to our friends’ house for dinner. Emily put out a lovely spread of appetizers and we had a healthy yet gourmet meal of gazpacho and salad. It was all so refreshing after all the bacon earlier that day!
Emily made Alton Brown’s gazpacho recipe, and we topped it with some Great Harvest Spinach Feta croutons.
Our salads combined mixed greens in a lemon-dill dressing with avocado, steamed asparagus, feta, watermelon and pumpkin seeds.
Our boys played so well together! Mazen loves hanging out with big boys. We were sad to call it such an early evening to get home for bedtime.
Matt and I relaxed on our deck after dinner. It was such a lovely night, and the fireflies twinkled all around us.
This morning I fueled up with a big breakfast because I have my last two women’s league soccer games today and they start right at lunch time. I’m planning to have a small pre-game snack at noon and am hoping this whole grain Cville Crunch French toast has topped off my glycogen stores!
Do you say lightning bugs for fireflies? I actually say lightning bugs, but fireflies are more romantic : )
Alison @ Daily Moves and Grooves says
Good luck with you soccer games, Kath!! I say fireflies because it rolls off the tongue more easily 🙂
ErikaMC says
I actually call them glow bugs.
Claire says
I say lightning bugs, but my three old freaked last night when my husband and I were talking about them because she thought they were related to storms!
Bonnie says
I think fireflies sounds more romantic too 🙂 In Portuguese, their name actually translates to “wandering fire” — so pretty!
KathEats says
Oh that’s really pretty!
Mom says
I love “wandering fire.” Wonderful!
Carolin says
That sounds poetic indeed. The German words translates into ‘little glowing worms’ – not nearly as romantic. Haha.
Erin @ Her Heartland Soul says
Everything looks so yummy! Happy Sunday!
Tracy says
I’ve always said lightning bugs but agree with you…much more romantic! I think I’ll call them fireflies from now on 🙂

casual dinner with friends and an evening on the porch sounds like the perfect summer night 🙂 🙂

KathEats says
I saw that! Pretty shocking 🙁
Diane says
Love the picture on your back deck – beautiful!!! Where did you get your deck furniture and does it hold up pretty well? My husband and I just re-did our patio and have been looking for furniture! 🙂
KathEats says
it’s the Palmetto furniture from Pottery Barn. It’s holding up just fine but I would not recommend the white on an uncovered porch. Luckily it is machine washable though so I have been able to clean it pretty well.
Diane says
Thanks!!
Ashley R says
You’re so lucky to have fireflies! I’ve never seen one in my life!
KathEats says
Omg! Where do you live?
Andrea says
I’m in Colorado now, grew up in South Dakota and I can’t recall seeing one either. I associate them with more humid climates but I don’t know if that’s actually true.
Andrea says
okay, had to look it up – apparently the ones in the western united states don’t actually produce ‘fire’ http://www.extension.org/pages/41901/are-there-fireflies-in-colorado#.VWxdhlxViko
KathEats says
That’s crazy!
Cassie says
Delish!
Linda @ TheFitty says
I’ve only ever heard of owl city say “listening bugs, haha!
Amanda says
I definitely say lightening bugs!
Katie says
I was just telling my husband that we called these lightning bugs growing up (in Texas). He had never even heard of that (he’s from Michigan). They bring back the best memories of warm summer evenings at my grandmother’s house. We don’t get them here in San Francisco.
Melanie says
Lightning bugs, too! Thought maybe it was just a GA thing :)) Happy Summer!!
Tamara says
I AM SO GLAD TO HEAR THAT LIGHTNING BUGS STILL EXIST. I HAVEN’T SEEN ONE IN YEARS. I HOPE I SEE SOME AGAIN BEFORE I DIE.
Michele says
I grew up in NJ and they were always lightening bugs. Now, I don’t know if anyone still does this and it was a very, very long time ago (I’m closer to your Mom’s age :)) but we used to pull the “light” part off the bugs and wear them on our fingers like glow in the dark rings. Ugh…I can’t even imagine doing something so horrible now!! 🙁
