I had all but decided to have pumpkin bread, egg and mango this morning but when it came down to making breakfast, my stomach wanted to be full of oatmeal. So oatmeal it was! But I compromised by adding pumpkin today (still have that open can from yesterday!) and finished it off with walnuts 5 dark chocolate chips!

That was the temperature when I got up! We have a programmable thermostat (LOVE IT!) that usually kicks on the heat right before 5 a.m. but we have an emergency shut off switch that often gets knocked to “off” by my gym bag (this happened for the first time last winter and we didn’t know it and went without heat in a winter storm for 3 days before we figured out what was wrong!). Anyways, it was COLD this morning. I had hot tea to warm me up. I am loving the GoodEarth Vanilla Chai!
I am off to the gym as soon as I digest, then my two classes today. Should be home around 4pm with lunch! It’s a good one too! And I am certainly having pumpkin bread for a 4:00 snack today 🙂

OH and I’ve been meaning to ask you…Would spinach chips work too? I know they reduce to NOTHING and give off TONS of liquid, but maybe at a high enough temperature? Mmm, that would be delish!

Pumpkin is a superfood and is REALLY good for you! It’s high in fiber, very low in calories and is full of good nutrients – especially the carotenoid antioxidants.

I did whipped with banana and stirred in the pumpkin at the end.
Sadly, I don’t think spinach chips would work. Kale is much thicker and stalkier and doesn’t really wilt. I think you’d end up with a pile of steamed spinach.

About the “wet” doughy pumpkin bread…I’m not sure how you feel about boxed cake mixes, but if you mix a can of pumpkin with a boxed spice cake mix(thats all, no water or eggs or oil), and cook as the package directs, I think you might get the texture you’re looking for. I made muffins this way, and they were amazing and wet and doughy. Its not very natural (the boxed mix) but it sure is good!

Good Earth chais are the best! I picked up a taste for really strong tea during a few years living on the other side of the pond, and now other kinds (cough, Zhena’s Gypsy, cough) just taste like water. Claire: yeah, cooked pumpkin is really hard to find; my friends used to mail it over (at great expense) for Thanksgiving. I saw it at a Sainsbury’s once, but when I went back again, it was gone.

I have a suggestion for you! My husband bought me a copy of Dan Koeppel’s “Banana: The Fate of the Fruit that Changed the World.” By the title, it sounds a little dramatic, but it is a great book! I am about halfway through … There is (banana) disease, political strife (caused by banana trade) … and delicious-sounding descriptions of bananas the world over. I can’t think of a better group than this recommend this book to!

i was thinking about why your pumpkin bread wasn’t doughy like Emma’s, and I think it was cause you used baking soda and she didn’t, and the baking soda will puff it out, making more bread like than dough like. Sound like a possible explanation???

i found this awesome recipe for artichoke pesto and tweaked it a bit to make it only 30 cals per 30 grams… it is SO delicious on a sandwich.
today i had a toasted english muffin with some of my new pesto and a grilled portabella mushroom.. openfaced of course. it is super low in calories and all good healthy stuff and this way as a volume eater you can have lots of yummy sides with it. i chose a spinach and cuke salad with hummus dressing and pumpkin yogurt yummm!
Artichoke pesto:
1 (8-ounce) pack frozen artichoke hearts, thawed
1 cup fresh parsley leaves, packed down
1/4-1/2 cup chopped toasted walnuts
1-1 1/2 lemon, zested and juiced
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tbs extra-virgin olive oil
that’s about what i used i think? so so good!

I live in RI and my bf lives in Philly and I always bring him my leftovers (as long as they are not liquids since I fly, and no meat in them). Then he can just heat them up and add a favorite meat to it.
Some examples…
-bean salad with lots of different beans, scallions, hearts of palm, red wine vinegar and olive oil
-artichokes, sundried tomatoes and spinach sauteed on the stovetop (then he can add ground turkey and some pasta and have a complete balanced meal as well as fill up!)
-since you are driving you could make things like chilis loaded up with veggies, pureed soups, etc (homemade tomato sauce with lots of veggies is good for the boys to have on hand- i have found that my guy friends will put it on anything and are more inclined to cook at home)
when flying i put them in tupperware containers and then in a plastic bag (which i reuse over and over again). and when driving i just stack them in my backseat in the containers.

Hey Kath – guess I’m full of questions today 🙂 When you had gained some weight in college, was there a “problem area” that you had? If so, how’d you overcome it? Now you are TINY! So adorable 🙂 I am almost at my goal weight (same height but about 128#) but I can’t seem to lose weight in my butt/hip/thigh area and it’s very aggravating! I hope you had had the same problem so you could give some advice 🙂
Also, I was looking at your pre-weight loss pictures. Your body shape looks like it totally changed! Especially your arms – now they looks really small yet toned. Do you have a set workout for weights you do at the gym that you do or just wing it to get some strength training in?

I have a 32 oz. water bottle and I drink at least 2 a day. If I’m just doing a light workout (strength training or a walk) I’ll drink ~2. On days that I run I try to drink 3 because although it’s not a fun trait I’m someone who seems to sweat a lot when I run 🙂
I do understand the problem with the constant bathroom breaks though.

I agree with the northern girls, if it were 58 degrees out, I might just wear shorts. Although 58 is pretty chilly inside!

hey all! woke up and it was SNOWING today, so I would love a little Spring! ^_^ I don’t think you girls should worry so much about water consumption. I read somewhere (Self maybe?) that bodies don’t actually need the same amount of water and need different amounts different days (i.e. more exercise one day, etc) It depends on the individual. Also, tea, coffee, lemonade, milk, etc. are included as fluids. Many people forget that a lot of fruits and veggies contain water too! I hardly drink my 16oz water bottle in one day, but eat lots of water-dense foods, drink tea, and always hydrate when I get thirsty. It’s another one of those “listen to your body” things. If your thirsty, you need to drink, if not, don’t force that water down!^_^

Please find enclosed hello Kath and readers! I have a question for any of you calorie counters. I picked up some pre-marinated bourbon salmon from my fish monger for dinner, but I am not sure what calorie count to use. The ingredients include soy, brown sugar, bourbon, canola oil and spices. Now, I do not normally buy pre-marinated items, but this is the only salmon my husband will eat and I have been craving salmon. Anyway, on Calorie King Atlantic Salmon is listed at 52 kcals per oz, but when I look up Bourbon Salmon it says it is 30 kcals per oz. Now, I am not scientist….but it seems like salmon with a marinade would have more calories and plain raw salmon….so I am not sure which one to use as my calorie count. I know it is not a huge difference either way, but I am curios. Sorry for the long post. Thanks for any insight! M.

DL- #5 plastic does not contain the chemical BPA that most #7’s do. It is considered a safe plastic (it is also the plastic *most* tuber ware is made of).

I just read (in Self?) that you need an oz of water for every inch you are in height. I thought that was a handy guide. I imagine you would need more during exercise. I generally don’t count the water I drink while I work out, figuring (in my typical, highly precise fashion) it will “even out.” Yeah, I’m pretty sure that’s a technical term.

I’ve always been a “fat all over” type. I gained it equally in all areas – which is sometimes a good thing and sometimes a very bad thing! My biggest problem area has always been my stomach – I lose it last and gain it first there. Actually, I can tell if I’ve put on the slightest bit of weight now just by looking at my stomach in a mirror. So just keep at it and your thighs and butt will catch up to the rest of you 🙂 The same with my arms – it’s more the overall fat loss than a specific toning routine. I try to work my biceps, triceps, shoulders, front shoulders (are those delts?!), back, and chest 3 times a week. I think the more VARIETY of exercises you can do it much better than having one “golden” routine that works. I really noticed the definition in my arms changing when I added pull-ups. Perhaps those are somewhat magical!

My guess is that the marinade is pretty thin so it doesn’t make a huge difference per ounce. I often use Wegman’s info for items I get from the grocery store, as CalorieKing has tons of deli-case items from them. I think the easiest thing to do is to just log the salmon plain and add in a tbsp or less of any marinade to account for the difference.
