Like much of the East Coast, we spent our weekend inside trying to stay dry. I was actually supposed to go to Charleston this weekend for a blog trip, but that was postponed due to the bad flooding there. Hope everyone is safe – and glad the hurricane decided to take a turn out to sea. A brief break in the rain and we went straight outside!
Friday I got lots of work done in the afternoon while Matt took Mazen to Jump, and we met for a family lunch at Roots – again!!
This time I got the Roots bowl with sweet potatoes and goat cheese (and more of that delicious BBQ tofu!)
Friday night ACAC had a workout class and happy hour. The workout was a short but mighty strength class and Champion Brewing had beer samples. Afterwards, I went out with a girlfriend to Lampo for kale salad, pizza and juicy red wine!
Saturday morning breakfast was pumpkin pancakes with peanut butter on top –
Followed by a visit to the gym and Roots leftovers with leftover pork and farro for lunch.
Saturday afternoon we had some friends over to play cards and then went out for an early dinner with some of them to Burton’s Grill. On our first visit we were so impressed, but this time I was a little disappointed. The fish dish I got was so basic – it really needed some jazzing up. And the green beans were totally plain. You win some, you lose some!
Saturday night I fell asleep at 9pm watching Nashville on the couch. Party central!
That was good though because we had an early soccer game on Sunday – 9am – and I had to eat and digest beforehand. Toast with banana and peanut butter is my go-to preworkout because it doesn’t slosh around and is quick to make. Plus regular coffee for a nice jolt!
I ended up playing our game (90 minutes, no subs) plus half of the next game as a guest player (45 minutes, still no subs!) 2+ hours of soccer totally wore me out!! My legs ached all afternoon.
Lunch on the couch with more Nashville. Feet up. I had a big salad topped with Burton’s leftovers plus a little quesadilla
Sunday was spent doing housework and organizing a closet. And then we made this simple healthy soup! Sweet potato, broth, leftover quinoa, bacon + bok choy.
Happy Monday to you all!

Do they have Jump for adults? It looks like fun 😀
All of that food looks so tasty! We are just starting to get back into stew & soup season at our house – such a good way to get in extra greens & veggies.

Yes adults can jump too!

First I want to say how much I enjoy your posts. You make me want to get up and do something, be it moving my body or exploring my home area for more fun and interesting things to do. I also want to say you have a lovely family. Now I need to point out that your son is not wearing his bike helmet correctly. The front of the helmet needs to come down the front of his head more. If he were to fall off of his bike the top area of his forehead is unprotected. He is wearinng the helmet like this / when is should be worn like this — . Take him to your favorite bike shop and have the helmet adjusted for his safety. Both my husband and my daughter have been hit by motorists while on their bikes and neither accident was the fault of the bike riders. Their helmets really did save them from more serious injury.

I hate to be one of those commenters who make a comment about child safety but the picture with Mazen’s helmet really worried me. Not sure if you know, but for the helmet to work in the event of a fall, it really needs to be positioned properly. The front of the helmet needs to be just above the brow line to fully protect his forehead. I realize it may have shifted while he was playing or that if may have just been for the photo but wanted to throw that out there in case it’s that loose and moving back all the time! 🙂

I stayed inside just about all weekend too..rain and wind aren’t a very fun combo! Love that soup combo! It looks delicious! Can’t wait to start making soups for the chilly weather ahead!

Yay for pumpkin pancakes! Are they crispy pieces of parsnip on the kale salad?

Mazen looks so cute- and so grown up! Also, love the look of your soup. I see you left the peel on the sweet potato. I almost always leave them on my regular white potatoes but honestly never thought to leave them on sweet potatoes. Do the peels of the sweet potato taste kind of like those on a white potato? Thanks Kath!!

Looks like a super fun weekend, in spite of the nasty weather! Its a cause near and dear to my heart, so I hope I can gently suggest that you take M to a bike shop and get his helmet properly fitted. I see so many little ones with helmets slipping back on their heads into the “brain bucket” position – unfortunately an ill-fitted helmet offers about as much protection as no helmet. 🙁
Is it meant to look like R2D2? Super cute!
KathEats says
I know it needs adjusting – need to figure out how and if we need to buy pads.

My soccer game on Sunday was cancelled due to all of the rain. Luckily where I live in South Carolina didn’t get hit too bad, but most of the fields were still flooded.

Those salads look delicious!!

Never thought to smash banana on toast before! What a great idea. I guess it’s a breakfast take on the classic banana and PB sandwich :).

I love hearing about how you fit a good balance of activity and fun into your days. It seems our weekends are packed with cleaning/chores and (older) kids activities but I know if I just planned better we could do more. Thanks for the inspiration!

Oh girl, be happy you couldn’t make it here. It was and is still a mess!! You can be in a dry side of town one second and completely under water the next! We are very fortunate that we didn’t suffer the flooding that our family and friends did.
Glad y’all had a better weekend, even if it rained. ????

Keep me updated – coming this weekend instead! Hope the sun is out now and things are drying up.

Hi! Where’d you find your lovely kitchen utensil holder? I’ve been searching for one with a wide mouth like yours:-)
